At Sakelabo Tokyo for the first time in a long time

Watanabe Sake Brewery, which I had high hopes for, and honestly disappointed 😞.
It is supposed to be basically dry, but the moment it enters the mouth, a strange sweetness is felt with a sense of messiness, followed by a strong acidity that suddenly spreads, leaving the whole uncoordinated, sticky sake aftertaste!
The aroma is that of a traditional sake brewery, and when you drink it, it bursts with various flavors, basically dry and umami, but it comes together nicely when you swallow it.
It goes well with cream cheese marinated in tamari soy sauce!

It has a softer aroma than Cho Oroku, but it is not flashy. When you drink it, it has a soft mouthfeel with tangerine-like sweetness, a slightly stronger umami (sake-like flavor), and a low-pitched acidity that lingers with a touch of astringency.

It is a completely different impression from CEL, but it gives the impression of an adult's sake, which increases the impression of likability! I was impressed by its robust flavor, which was not lost on the grilled mackerel.
The nose is muscat-like, and when you taste it, it has a light, refreshing sweetness reminiscent of Riesling, with a base line of dryness, a refreshing acidity, and a slight bitterness that tightens up.
Classic clear and dry type, it was surprisingly good with the char-grilled jidori chicken!
The bonito tataki was fresh and crisp and the easiest to pair.
The middle of the picture, though it is not labeled only for Bikyuu. I love the fruity aroma and taste, with a soft and softly rising alcoholic flavor!
