Speaking of Yamahai, Yukino Kayasha I'm very satisfied every time! Perhaps it is because I drank it cold this time, but my impression is that it has the freshness of soft fresh water, the dryness of moderate acidity with sweetness that reminds me of freshly ripe lemons grown in California, the ripe apricot-like umami, and a good balance that allows you to enjoy getting drunk comfortably. It is recommended as a food sake that goes well with anything!

The label says it has a lemon-like acidity, but in the mouth it has a sweetness from the rice and a umami like sake yeast, all wrapped up with a citrus acidity like mandarin oranges, and finished well without the mess that used to linger in the mouth with sake. It has a rich umami sweetness with a sourness that reminds me of Italian lemon cello, if I may be so bold. Good for a leisurely drink!
