We have pineapple juice. I was so excited that I bought a bottle. It has a delicious balance of sourness and sweetness with a subtle gasiness that you can feel when you roll it around in your mouth. If it were called pineapple juice, it would be, but it has a sweetness and flavor that is not as simple as that. Since it is a Kochi sake, we enjoyed it with bonito tataki.

It is a fresh summer sake. Looking at the history, I was attracted to it and drank it last year. As the fresh and summery label suggests, it is a juicy sake with fine gas, clear sweetness like white grapes, bitterness like grapefruit, and full of fruitiness. It can be drunk by itself in large quantities. I'm soaking up the nice pitching and fielding of Iori Yamazaki with a side of vinegared food.

Kombu-maki Kamaboko (kelp wrapped kamaboko) and Gassu Shrimp Sashimi were served for dinner, so this sake from the refrigerator. It is the stable Miyazumi. It is always sold alongside 寫楽, so I am always torn between the two, but this time I went with this one. While you can feel a subtle gas on the tip of the tongue, the taste is full of umami, moderate acidity, and bitterness. It was a perfect match for the Gusu Shrimp Sashimi and was delicious.

Banshu Issen, which makes me want to buy it whenever I see it. The fine gaseous sensation created by the gravity system of the new brewery is irresistible, as well as the fine Yamadanishiki rice polished to perfection. This Natsu-shin also has a fine gaseous sensation in the mouth, and a subtle sweetness and umami of rice in a clean taste. It is free of any cloying taste. The alcohol content is 14%, so it has a very light taste. It was quite a good combination when paired with sea bream sashimi. It is also good with carpaccio. This is a classic summer sake, "Ito, seiyashi".

Middle of GW. Work is going on as per the calendar. Hayashi's Gohyakumangoku is now available, and I am enjoying it while having a hard time handling a bottle. It has a slight color. The first touch on the tongue is gentle and fluffy. Gradually, the sweetness rises. It is full of umami, followed by sourness and a bit of bitterness, which gradually fades away. Perhaps because it is at room temperature, it is sweeter than usual, but it is a delicious sake with a firm body of sweet and umami. We enjoyed it with roast beef.

This is the first GW sake. When the bottle is opened, the gas escapes with a pop, but it is not so noticeable on the palate. The mild sake quality is typical of Hirotogawa, and the bitterness of Omachi is nowhere to be found. You can enjoy the long, sweet and delicious aftertaste. As one would expect from Hirotogawa. It is easy to drink it while watching TV. I enjoyed it with Iburi gakko cream cheese.

I bought it because I was curious about the unusual sake rice used. It was from the Sake Rice Exploration Series "for the study of brewing techniques. When I opened the bottle, the stopper popped vigorously. It has a lot of gas, but it also has a strong sweetness. Was the rice a little too much dissolved? The alcohol content is 16 degrees, which is a bit strong. If you are used to drinking Kinka or Tsubasa, you may feel that it is too strong. We enjoyed it with bamboo shoots.

I bought a bottle of "Chogin" at the Spring New Sake Festival and bought it as a souvenir. It is a jun-dai sake priced under 2,000 yen, but it has a very elegant mouthfeel and is a sweet-tasting sake. There is almost no acidity or astringency, with a hint of bitterness and a lingering aftertaste that slowly fades away. The bottle has a chunky shape and a charming label. It has a nice feeling.

The cherry blossoms have begun to bloom, and it is an exciting time of year. The streets were crowded with people viewing the cherry blossoms at night, but I quickly went home and opened a bottle of Kurazakura from the vegetable room. When I sipped it, there was no gaseous sensation. The first thing that comes out of my mouth is, "Ah, it's a gentle sake. It has a ginjo aroma like white peaches and mild acidity. The underlying rice flavor is also present, but the taste is light. It has a slight sweetness and flavor, and the alcohol content of 14% is also a nice touch. It is a sake that can be enjoyed on its own. We enjoyed it with sashimi.

Tokyo has already declared the blooming of cherry blossoms. News of the cherry blossoms made me want some hanami sake. This is Senkori's "Sakura," a light nigori unfiltered unpasteurized sake. It has a strong gaseous taste, acidity, sweetness, and bitterness. We enjoyed it with sea urchin tofu.

I was attracted by the beautiful spring-like label. The sake bottle is also thick and has a sense of elegance despite its reasonable price. According to the brewery's information, the sake has been carefully crafted using "Shin-Gin polished rice," "four-stage brewing," and bottling using the "gravity system. When poured into a glass, it is a beautifully clear sake with fine bubbles on the inside of the glass. In the mouth, it has a silky gasiness and a refreshing acidity. The alcohol content is 14%, but it is not just light; it has a strong umami flavor. The power of the four-stage brewing process and Yamadanishiki can be felt. It is a perfect Hanami sake that goes well with crackers and other simple snacks.

Hokuriku Shinkansen series, today we will have a Kuroryu. It has no color and no heady aroma, and when you taste it on the palate, there is no sweetness, only bitterness. It is a perfect example of a "food sake" that has no peculiarities, as it helps to wash away the sardines that I prepared for my entrée. I may have set the bar a little too high with Kuroryu.

Today we have Bon from the Hokuriku Shinkansen Bottle Series. It is a beautiful, slightly sweet, fruity sake that lives up to its Jun Dai label. This is one that I will drink up quickly. Not necessarily because it is from the Sabae brewery, but we enjoyed it with grilled mackerel.

This is the first "Kachikoma" with a hiragana label. It is a new sake label only for this season. The alcohol content is high, so it feels strong in the mouth. It is a fresh sake with a refreshing taste. We sipped it while eating pumpkin seeds.

Another Hokuriku Shinkansen commemorative bottle today. It is Ichinotani Junmai-shu from Ono, Fukui. It has a slight color. When you put your nose close to the glass, you can smell the aroma. When you put it in your mouth, it has a banana-like moist sweetness and a slightly o-ka. The sea urchin tofu covered the aroma well. I had the impression that the sake brewed with Fukui's sake rice "Sakahomare" was very good, so I may have set the bar a little too high.

This 300ml mini bottle commemorates the Kanazawa-Tsuruga Hokuriku Shinkansen line, which opens next month. The sake has a rice polishing ratio of 70%, but it is a beautiful junmai sake with no bitterness at all. We enjoyed it with yellowtail sashimi.

I was attracted by the noisy label and bought a packet. The label says that it is made with "pure" ingredients, but it is also particular about "Mu": unfiltered, unpasteurized, and unpressurized. When you put it in your mouth, there is no gaseous feeling at all. It is juicy and fresh, just as the label says. It is gentle and easy to drink, which is typical of Fukushima sake. I enjoyed it with sea urchin tofu as a side dish, and the sake went down a treat. Even though it is the season of new sake, 4 gos of sake every day is not enough.

Valentine's Day is "I Love You" in Valor. This is the one for today. I had an image of Takeyuki as a very thick sake, but they have a line like this as well. It has a lot of gasiness, so much so that the bubbles stick to the glass. In the mouth, it is softly sweet, acidic, and bitter. We enjoyed it with snap peas and thick fried bean curd.

We received this Arabashiri last year as well. It has a soft apple flavor with a lot of gas. It has a fruity ginjo aroma due to the alkaloids. It is a good cost-performance sake, so we will have it again and again this year.
