The aroma is mild and pear ✨😊😊The mouthfeel is light with a beautiful sweetness and umami 😚It also has a nice acidity and sharpness 😘It is sweet and umami but has a clean aftertaste 🥰This is a delicious sake😍This is a perfect strike👍👍👍 It's a sweet and tasty sake that is dangerous to drink ✨🥳🥳.

［Fukui Spring New Sake Festival (9) The event was coming to an end with a series of sake from Ishikawa. We decided to try something a little different and had a drink here 🍶. Hayaseura Special Junmai Sake "Umi-no-Otoko This is an old sake that has been stored in the brewery for 3 years and was served warmed 😁. The aroma of rice flavor, the gentle texture on the tongue, the impact of the flavor at the back of the throat, the warm aftertaste of heated sake, and the bitter taste at the back of the throat at the end........ It is a "man of the sea" respecting fishermen who work at sea, and I feel that it is strongly made to go well with local fatty seafood and salty preserved food 😋. The entrée sold out unexpectedly quickly, so I emptied it before I could check its true value💦.

Speaking of Hayaseura, I really liked it the first time I saw it, but after that, every time I saw it, I thought it was a little too much and said, "It's not what I expected...! I had been avoiding Hayaseura for a while, but then I found a basic junmai that I had never had before, so I asked for it. I like this one! It is my favorite type of food sake. It is elegant, mellow and reserved as if it were an akiagari, but it has a core strength that tells you "that's not right" when you get it wrong. If Kaygetsu is like Kenshiro, this is like Toki. If Kaygetsu is like Kenshiro, this is like Toki. It is a wonderful food sake that is the twin of Kaygetsu in the mildly umami category.

This is a limited edition sake made possible only because it is truly made in the cold, with the oli from the junmai system collected from the bottom of the tank and bottled together with the junmai honmai jyosumi sake. The beautiful blue and translucent white color of the sake invites you to imagine the winter "ocean" of the Sea of Japan as seen from Mihama, Wakasa.
