This was my first Koganezawa, a gift from someone. It is a Junmai Daiginjo made from Gohyakumangoku, so I had an image that it was quite refreshing, but it tasted just as it should. But it also has a strong umami of rice and is easy to drink without any peculiarities 😆 It is easy to pair with meals and I was off in no time 🤣. It was easy to match with meals and we finished it in no time 🤣.

I bought it again this year 😋. Grazie a dio (=Thank God for the Mimuro cedar) ❣️ Thank God for sake 🙏 and my own health 🙏. I will eat it with all my heart 🙏. So far, Grazie has been made only with Omachi, but this year they are mixing in Yamadanishiki as a trial 👀. Maybe that's why the taste is more light than usual? It's still very drinkable and delicious, just like Mimuro. ❣️ I'll definitely be buying this next year!

How are you all? It's still cold. ⛄️ Especially this week has been cold 🥶. So this time we had warmed sake 🍶. We had Mr. Noriguchi's Kannon Shita warmed up to lukewarm. I sometimes see this sake at the store, but have never been able to get my hands on it. I had an image of it as a gory classic, but it's really easy to drink and delicious. ❣️ It is gently dry and mellow 😋. It's even more delicious when heated up. It's so delicious even when it's served with alcohol, I'm so impressed! :+

Tokachi-san encountered at a local Hokkaido antenna store: ❣️ Well, I didn't think I could get this in Nara 😆. I chose the special junmai because it seemed to be the most balanced when I looked at the popup. As you can imagine, the mouthfeel is refreshing. But the sweetness and umami spread in the mouth, and what a taste 🤩 ❣️ It is a beautiful and colorful sake. I enjoyed the power of this popular Hokkaido sake 🙏.

A new version of Koei Kiku's popular Snow Crescent: ❣️ This time, rice rice Sagahomare is used. It is said that this rice was produced by a carpenter and farmer who worked on the repairs when the brewery was rebuilt😮. Compared to the previous Sno Crescent, it is more refreshing and less impactful, but the gentle sweetness, bitterness, acidity and juiciness are typical of Koeikiku and delicious 😋. Sagahomare is a delicious rice that can also be used as a sake 👍.

I bought it because it is a prefecture limited sake from Kaze no Mori. It is made from Akitsuho rice, a specialty sake rice grown without using any pesticides or chemical fertilizers, and was presented to the Imperial Household for the Niitamesai Ceremony in 2022 😮❗️ Brewed with 85% polished rice, this sake is more restrained than the regular Kaze no Mori, but it has a juicy, shwashy flavor with the mellowness of ripe fruit, making it a delicious sake to savor and drink 😋. Kaze no Mori is amazing at making sake that can't be found anywhere else by making the most of the local rice and water characteristics, and I especially recommend their low-polished sake: ☝️😽

Niigata's popular sake Abeno's standard Junginshu: ❣️ There are Vol.1 and 2 in different tanks, and I really wanted to compare them, but I had to choose one with 2 for crying out loud 🥲. On the first day of opening the bottle, it was clear, mild and gentle umami (^ω^). From the second day, the sweetness and deliciousness increased. ⤴️ The refreshing acidity also combined with the sweetness and tartness makes it pleasantly intoxicating 😍. The store I usually go to sells out of Abe very quickly, but I'm sure that's understandable 😋.

The first bottle for February is the one I've posted many times, Kokoyama SILVER7❣️ It has become one of the brands I can't miss 😋. It's deliciously made this year too. Fruity and delicious as always👍. I can't get enough of it! I'd love to visit the brewery on Iki Island sometime 😙.

The first Koei chrysanthemums of the year were. Muroka, Junmai, Aiyama Muroka, Junmai (Jungin?) Aaiyamama🎶. I got the clear sake version of 🙏. It doesn't look good in photos, but the label is very cool and shady 🤩. The mouthfeel is smart and mild compared to other Koei Kiku. But the balance of sweetness, umami, bitterness, and acidity that is unique to Kouei Kiku is still there, and the taste is very satisfying. After the second day, it becomes full-bodied, which is also delicious 😋. Finally, Kouei Kiku has 20 check-ins, and we are loving it 🤭. They have been making really good sake since the brewery was restored 👏. I want to enjoy this brand as much as possible before it becomes hard to find 😆.

I heated up some New Year's sake that I got from a neighbor at the end of the year 🍶. I heated it up to 50 degrees Celsius with a heating sake meter I bought at Tokyu Hands last year, and found it to be very mild and full-bodied. It was so mild and full-bodied, it had so much umami that I couldn't help but say "Oh! I said. Maybe it's one of Gekkeikan's higher specs, but it's just delicious ❗️ and easy to drink with no sake smell at all ❗️ I even felt like a melon (a bit of an exaggeration?) I always drink it cold, but heated sake is good too 😚. I'll try heating up various sakes again😋♪

It's been a long time since I've had a Snow Kayasha: ☃️ This is one of those brands that I tend to put off because I see it all the time, but it's consistently good👍. It's easy to drink and has an elegant sweetness and umami that doesn't interfere with food, with a slight sharpness and a fresh taste that only a pure sake can have 😆. As expected of Akita's top class sake ❣️ Thank you for the food 🙏.

Local Sake 🎶 once in a while The name of the sake is "Ouma", brewed by Kikuji Brewery in Ikoma City, Nara Prefecture, in honor of the local shrine, Ikoma Taisha. In Nara, there are many sake brewed in connection with shrines: Kasuga Taisha and Harushika, Ookami Shrine and Sanmorosugi, Danzan Shrine and Danzan 🧐. Aside from that, this is a classic dry sake that has nothing to do with the sweet, bitter, sour, fruity, or shwashy words that we have been drinking lately. This kind of sake is not bad either👍 It's even better when it's closer to room temperature than when it's cold 😙. It is hard to believe that this sake is made with the same dewy leaf style as Kaze no Mori. The rice has been polished well and the flavor of the rice is also present. This kind of sake should be paired with fish 🍶. So we enjoyed it with Kue nabe (Kue hot pot), a tax return gift from our hometown 😋.

I sometimes see this sake at my favorite restaurant. I've always wanted to try it, but never got around to it, but it looked so good that I finally bought it❗️. I like the label design that makes me want to put a star in the middle 👍 The taste is gentle, sweet, juicy, and has a unique flavor that is wonderful❣️It is smooth on the tongue and makes you swoon☺️I love this ❤️. And it's a Junmai Daiginjo, but it's only 1,700 yen for a four-pack 😳. I'm glad I bought this one 😋. I want to try another one ☺️.

Seimasamune is always sold out at my favorite store when I want to buy it. This time I finally got it in winter sake❣️. The rice, water, and yeast are all from Nagano Prefecture, a product that is full of local love, and the taste did not disappoint 😋. It is full and gorgeous 🌸 because it is made with glutinous rice as well. It has a nice sweetness to it that is very good 👍 The four-pack was emptied in two days. I found another delicious Shinshu sake 😙.

The first Nara Sake of the year is Kaze no Mori Hatsushibori❣️, which is suitable for the New Year. The bottle was decorated with beautiful ornaments and it really got me in the mood for New Year's ❣️. The bottle made a nice popping sound when it was opened, but it was less fizzy than the usual Kaze no Mori. However, the unique minerality is still there 😋 and it is fresh and delicious❣️. It was a gentle, relaxing and enjoyable one 🙏. Good fortune comes to those who smile ⭐️. I wish everyone a happy new year.

Happy New Year to everyone 🎍! We will be looking for and drinking lots of good sake this year 😋. So, on New Year's Eve and New Year's Day, we had Nabe's Jungin Yamadanishiki. The label gives a sense of dignity and the taste is of a very high level 🤩. The taste is also of a high level that can only be said to be as good as it should be 🤩∀≦ It is sweet and delicious, but it is smooth and refreshing and you will never get tired of drinking it. The charm of Yamadanishiki is fully expressed (I think). For me, this is a sake that should be drunk on special occasions.

This year, we opened a bottle for Christmas 🎅🎄 with a label of a deer🦌 instead of a reindeer😅. We chose the Uraharu Deer, which had a special "Betsuatsurai Hatsukumi" (special order) label. It has a sweetness like ripe fruit and a rich umami flavor. But it was easy to drink. Uma🤤. I think this is a drink to be enjoyed with a small dish rather than with a meal. This time I enjoyed it with boiled chrysanthemum greens 🙏. Harushika is consistently delicious both inside and out.
