Drinking at home. Today, I chose Yamagata Masamune, which I had been curious about, and drank it for lunch on my day off. It had a pleasant sourness with a melon-like aroma, followed by spiciness and umami. It was a delicious cup with sweetness.

Drinking at home. I am worried if I can feel the difference, but today I tried the difference between No.6 yeast (Shinsei yeast) and No.7 yeast (Masumi yeast). I served yakitori, bonito tataki, horse mackerel tataki, sushi rolls, and spinach namul. The first one was a cup of No. 6, which was enhanced by the sourness and the sweetness of No. 7, both of which were umami. When served after the bonito tataki (green onion, ginger, and garlic), the acidity of No. 6 washes it down nicely and enhances the deliciousness of the dish. Next, we paired it with sushi rolls, both of which were delicious and complemented each other. With horse mackerel tataki, the No. 6 yeast was the better choice. With the yakitori, the No. 7 yeast enhanced the sweetness and flavor. Lastly, with the spinach namul, we could see the characteristics of both yeasts, and the winner was.... Both are full of deliciousness.

Drinking at home. Compared with Aizan, which I bought last time. Compared to the Aizan, the sweetness is moderate, but when you first taste it, you can feel the sweetness, but then the spiciness comes and goes, The spiciness comes and disappears. It is less fruity, but well balanced as a food sake. Compared to Aizan, this (Platinum) is more balanced. It is a delicious drink.

Hearing the news of cherry blossoms, I chose Yamamoto, which I had been curious about because of its spring-like pink label. The sweetness comes with a fruity aroma and disappears with sourness. Drinking at home. A bottle purchased when I returned to my parents' house in Fukushima. Today we are drinking it to celebrate our grandchild's graduation from elementary school. It is not very fruity, but after the ginjo aroma, there is a sourness, followed by spiciness. The sweetness is weak, but when drunk after sweet sashimi, the umami is enhanced and then quickly disappears. It is a perfect sake for a meal.

Drinking at home. A part-time friend from Nagano gave me this bottle when I went back to my parents' house. I had been curious about it for a long time, so I opened it as soon as possible. The sweetness from the malted rice comes first, and then it quickly disappears and wears off with the spiciness. As expected, it was a delicious sake.

Drinking at home. On a consecutive holiday for the first time in a while, I went out a bit to procure alcohol. I found and bought a bottle of raw Kido, which I hadn't had for a long time. Melon aroma, sweetness comes, sourness comes, and finally the spiciness disappears. The best guess is sashimi and homemade oden, they go well together.
