It's been a while since I've posted.
This time it's a super dry Junmai from Hitakami.
I found it at a nearby liquor store.
I first learned about this sake on a trip to Sendai last year.
The initial aroma is not strong and the spiciness is not strong, but the spiciness and umami come together to make a delicious drink with a clean finish.
I served it with tuna sashimi, deep-fried tofu, and sauteed chicken.
