The first aroma is more of a sake aroma than a fruity aroma, a bit like smoked fish. When paired with ate no sashimi, yakitori, and okara (bean curd), it enhances the spiciness and umami of the dish. It is a delicious food sake that I felt during my trip.

Drinking at home. Only lunch today. I bought a bottle of Tetorigawa Junmai Daiginjo on my trip to Kanazawa last week. It is served with sashimi, grilled hokke and chikuzen-ni. When the bottle is opened, the gas escapes. The aroma is not fruity, but rather matured and fermented. It has a deliciously spicy flavor with little sweetness. It has a heavy feeling that one would not expect from a 14% alcohol content. ps: The comparison was the Daishinshu Junmai Daiginjo Hiyoroshi that I posted last time. When opened, the drink started out spicy, but as time passed, the spiciness turned to sweetness and the deliciousness increased. Sake is a strange drink.

Drinking at home. Sake purchased in Matsumoto on a trip last week. A bottle I have wanted to try for a long time. It is a Junmai Daiginjo from Daishinshu. When drunk cold, the spiciness was strong at first, but as it warmed up, the spiciness turned to sweetness. I adjusted the temperature to match today's appetizers (Aji Nanban, Yakitori, Amaebi Karaage). The umami was strongly felt, and the sake was easy to drink.

Today's drink is Hourai (Watanabe Shuzo) hiyaoroshi, which was purchased during a trip to Kanazawa, Hida Takayama, and Matsumoto in Shinshu (present-day Nagano Prefecture) with my wife. I chose this bottle after drinking a variety of sake. I bought autumn sake at various places. We served it with fried amaebi (sweet shrimp), aji (horse mackerel), and roast duck. The aroma is not strong, but the sourness and umami come through, and it cuts cleanly. Although some acidity remains, it is a delicious drink.

Drinking at home. Closed for work. The menu is bonito, horse mackerel, sushi rolls, and simmered dishes. Tengu Mai (Yamahai Junmai Daiginjo) is to be paired with sake to prepare for a trip to Kanazawa, Shirakawa-go, and Hida Takayama next week. It is a golden colored sake with a strong umami flavor. It is not fruity, but it is cut by spiciness, umami, and acidity. Some of the umami flavor lingers in the mouth. It is a good match for sweet dishes.

Drinking at home. Today, I took a day off from work. I went to a nearby liquor store and chose a good sake. The bottle I bought is Hourai from Hida Watanabe Shuzo, which brews my favorite W. It is the sake for the destination of the trip my wife and I are going on next month. I wanted to check the taste in advance. My first impression was that it was delicious. The sweet aroma, spiciness, and acidity come together to transform the unique aroma of the habitual shellfish sashimi into a delicious flavor. It is a clear cut and tasty.

Drinking at home. Health checkup today. No work today. We compared our favorite sake that we have prepared for a while. First, Naguwashi. Gorgeous aroma, fruity sweetness, refreshing spiciness, sourness and fades away. I love it. Compared to Yozan Ichidokusui, Yozan Ichidokusui has more spiciness due to the addition of alcohol. Next, when compared to Masano-no-tachi Nakadori Junmai Daiginjo, Masano-no-tachi has a more intense taste including miscellaneous flavors. Naguwashi is a clear and refreshing cup. After all, Saku is delicious in every way.

After the Masumi I just had, I opened a bottle of Saku (Youzan Ichidrop Daiginjo, a bit grand), which I had reserved for the Bon Festival, and though it was a waste, I couldn't resist. Although it was alky, it had a melon aroma and was full of fruity sensations. After all, ZAKU is delicious. The flavor and sharpness are perfect.

Closed today. I drank my favorite sake at home for lunch only. First, Masumi, junmai (Okuden kanzukuri) purchased at a supermarket near my house. The color is golden. The aroma and taste of traditional sake is dry, light and dry, starting with sourness. It goes well with the atete yakitori (grilled chicken) and fried amaebi (sweet shrimp). A delicious food sake.
