Home drinking. Closed today. It is my favorite daytime drink. Today's drink is a dry junmai from Yamagata Masamune, which I always pick up at the liquor store. When you open the cork, it has a subtle fruity aroma, and when you put it in your mouth, the spiciness comes through. The spiciness of the sake is very appropriate for a dry junmai, and it removes the smell of the dried bonito sashimi to enhance its flavor. After that comes the umami of the sake. It is a delicious cup.

Home drinking. Lunch only. It has been a long time since I drank a bottle of ICHIHAKUSUISEI today. The spring pink label is very attractive. When the bottle is opened, a sweet aroma spreads. When you take it to your mouth, sweetness comes first, followed by spiciness and umami. Finally, the spiciness wears off. The best dishes are tuna, bonito tataki, and horse mackerel with nanbanzuke. It is a delicious food sake.

Today is my first vacation in a while, and I'm having a drink at home from noon. My son gave me this sake as a birthday gift. It is my first Sharaku Junmai sake. The aroma is not strong, but the fruity aroma is balanced with sweetness, spiciness, astringency, and umami, and the spiciness remains at the end, but it finishes cleanly. Delicious.

Today is my day off. I bought this sake after my hanami last week. This is my first saké, a Yuki no Mayu from Mt. Naeba, the same ski resort I used to visit when I was young. On the palate, a faint fruity aroma is followed by sourness and sweetness. Finally, it finishes with a touch of spiciness and astringency. It does not have a strong claim, but it has a cohesive taste.

Drinking at home. Today, after cherry blossom viewing, we had a drink at home. I felt the spring. I chose a junmai daiginjo of my favorite Eikofuji's Hajigen-no-Taido (Omachi). When you open the cork, the fruity aroma spreads, and when you take it to your mouth, the sweetness and acidity come through and spread nicely. The sweetness is enhanced when paired with bonito. It is a delicious cup.

Drinking at home. Today we will have our first sake from the brewery, Mitsutake. I found this spring sake at a regular liquor store the other day. It has a fruity aroma that is typical of spring, and the sourness and sweetness come in and are cut off by the spiciness. It tastes like white wine. When paired with yakitori, sashimi, and side dishes, it brings out the flavor nicely. Delicious.

Home drinking. Today is a day off. We had Yamamoto's Uki Uki, our first spring sake in a year. We drank a glass without mixing the ori. We served it with yakitori (grilled chicken), side dishes, and sashimi. The slight fruity aroma is followed by sweetness and spiciness. Finally, the bitter taste is cut off with the bitter taste. It is a refreshing drink even with garlic-flavored yakitori. It is a springtime sake. Next, when mixed with ori, the sweetness takes precedence over the spiciness and the bitterness softens, making it a good match for sashimi. It is a delicious sake that changes depending on how you drink it.

Drinking at home. Today is my day off from work. We enjoy watching Rokkaku-san's Drinking Iron Journey (Niigata), which I had taken from noon, while sharing it with good sake. I chose Yamamoto's Pure Black. We chose sashimi, yakitori, and 9 kinds of side dishes. The aroma is not strong at first, and after a light ginjo aroma, a refreshing spiciness and umami come and go with the acidity. It is a perfect food sake. It is a delicious sake.

Drinking at home. It's been a while since I've posted. This time it's a super dry Junmai from Hitakami. I found it at a nearby liquor store. I first learned about this sake on a trip to Sendai last year. The initial aroma is not strong and the spiciness is not strong, but the spiciness and umami come together to make a delicious drink with a clean finish. I served it with tuna sashimi, deep-fried tofu, and sauteed chicken.

Following the Kaze no Mori I mentioned earlier, a new sake from my favorite sake brewery, Saku. I opened the 2024 bottle, the same as last year. It does not have the carbonation of the previous Kaze no Mori, but it has a fruity aroma and a spiciness from the sweetness. However, the fruity aroma and the spiciness from the sweetness are perfect. I think the best way to end the year is with sake while watching Kohaku (red and white rice). It is the best way to end the year. We look forward to serving you again next year.

At the end of the year, after work, we had a drink at home while watching Kohaku. I opened a bottle of Kaze no Mori for the first time in a while. Melon aroma, sweetness from the slight carbonation, and a bit of spiciness. The carbonation is very refreshing. It goes well with Western-style dishes. It is a delicious drink.

Home drinking. Closed today. Tomorrow, New Year's Eve, and New Year's Day are workdays. So, for today's drink, I selected a sake that I prepared for the New Year's Eve and New Year's Day. It is a local sake, Junmai Orikarami from Yamori. First, we tried it without mixing ori. The dishes are sashimi, yakitori (grilled chicken), wasabi, and simmered dishes. The fruity aroma is faintly fragrant, and the sweetness and spiciness spread to the palate, which is then cut off by the spiciness. Next, when I mixed in the ori, the overall flavor and aroma became mixed. It was a mellow change.
