Drinking at home. Happy New Year! Today is my first day off from work in the new year, so I will spend it relaxing. Today's drink of choice is snow shibori from the Daishichi Shuzo brewery. This is the first time for me to drink a pure, unadulterated honjozo sake. The aroma is typical of a honjozo sake. The accompaniments are ozoni, dashimaki, and yakitori (grilled chicken). As is typical of Daishichi, it starts with spiciness and quickly ends with umami. It is a refreshing sake that goes well with food. It goes well with Osechi dishes. It is a delicious sake.

Drinking at home. The last work break of the year, tomorrow is the New Year's vacation. It is the customary lunch-only, one-person year-end party. I chose my favorite sake, Saku's 2025 Shinshu Junmai Daiginjo. I had dashimaki, sashimi, and aji no tataki as snacks. When you open the cork, you can feel the carbonation. The aroma is lighter than the previous new sake (before 2024), but the fruity aroma is the same. When you put it in your mouth, you can taste sweetness and umami, and it finishes with spiciness. This year it is a little stronger than usual. It is my favorite drink. Now I can start working hard tomorrow. ‼️

Home drinking. Today is Tuesday, only lunch from work break. Today's drink is my favorite Eikofuji's first orikara. When I open the cork, the sweet aroma of Ori sweet sake spreads. The accompaniments are tuna, grilled chicken, and simmered vegetables. When you take it directly to your mouth, you first feel the sweetness, which is cut off by spiciness and acidity. The sweetness changes with the tuna, the spiciness with the yakitori, and the sweetness with the simmered dish, depending on the ingredients. It is a delicious drink.

Home Drinking. Tuesday, today is my day off from work and it's only lunch as usual. It's almost winter vacation and I'm getting busy with work. Christmas, New Year's, and New Year's holidays are not for me. But that doesn't stop me from drinking, which I love! Today, I rode my bike to the nearby Kakunoue (it's getting very cold) to get some snacks. Today's sake was Junmai Ginjo Ginrei from Drunken Whale. It is a dry sake, as is typical of Drunken Whale, and it washes away the smell of the sashimi and brings out its umami flavor. It is not fruity, but the light spiciness and acidity make it delicious. It is delicious. ‼️

Drinking at home. It's already December. The year goes by fast, doesn't it? Today is my day off from work, so I went to a new supermarket nearby to buy some snacks. I chose roast beef, gari saba (mackerel), and chutoro (medium fatty tuna). Today's sake is Hourai for the third time in a row. Unlike the previous and previous junmai, this is a ginjo with added alcohol. It does not have a fruity aroma and tastes like a Japanese sake. When paired with chutoro (medium fatty tuna) or roast beef, it drains off the oil and is a refreshing drink. It is a delicious food sake.

Drinking at home. Today is a precious day off after consecutive holidays. This time, we drank Hourai and had sashimi, roasted duck, and hayato melon. This sake is aged at a low temperature by Watanabe Shuzoten and has a high alcohol content of 17 degrees. The spiciness spreads on the palate and washes away the oil from the buri and duck. It does not have the fruity feel of the previous junmai daiginjo, but instead has a strong spiciness, umami, and sharpness. A delicious cup for old sake drinkers.

Home drinking. Today is my day off from work, and it's time for the customary lunchtime drink. It's getting colder. It's the season to enjoy heated sake. ☺️ Today, however, I noticed a very limited Junmai Daiginjo of Hourai from Watanabe Shuzo Brewery, which is famous for its "W" (pronounced "W") at a nearby supermarket. It is one of the limited number of 2394 bottles. The accompaniments were the original oden, sashimi, horse mackerel, and appetizers prepared in the morning. When you first open the bottle, you will notice a fruity aroma similar to "W". When you put it in your mouth, the sweetness is followed by spiciness, The spiciness comes after the sweetness and is cut off by the acidity. When served with oden, the spiciness and acidity from the alcohol, which is stronger than the sweetness, enhances the umami. It reduces the smell of horse mackerel and enhances its umami. It is a delicious drink.

It has a sweet aroma. The accompaniments are roasted duck, horse mackerel and tuna. The roasted duck enhances the flavor of the duck, while the horse mackerel takes away the smell and brings out the umami. The light sweetness and umami that comes at first is followed by a spiciness that cuts through the flavor. It is a delicious cup of sake.

I served sashimi and yakitori (grilled chicken) with a 6-piece set. When I open the bottle, the fruity aroma spreads. When you put it in your mouth, the sweetness comes and it finishes with sourness. I chose Okunomatsu special junmai, which was given to me by an acquaintance in Fukushima the other day. The accompaniments are Kakunoue sashimi, salmon roe, and homemade oden. It has a subtle fruity aroma with a spicy, sweet, and umami flavor. As you drink it while feeling the deliciousness of the oden broth, the alcohol and umami spread out and run out. When paired with sashimi, it enhances the umami. Sashimi is a better match. It is a delicious cup.

Today I am working, and it is only lunchtime as usual. To relieve the fatigue of the holiday weekend, today's drink is a Hakkaizan Junmai Daiginjo, which I have not had in a long time. When the bottle is opened, there is no sense of gas and the aroma is not strong. As soon as it reaches the palate, it has a spiciness and umami that is typical of Hakkaisan. Home Drinking. Today is our regular lunchtime only. The bottle we chose is from the sake brewery we visited last week. The first impression is a stronger fruity aroma when the bottle is opened compared to the Junmai sake reported last time. The accompaniments are sashimi, horse mackerel, dashimaki, and yakitori (grilled chicken). The first impression is the umami from the sweetness. The first sip from the aji no nameko (horse mackerel) removes the smell of the horse mackerel, and the spiciness cuts through it cleanly. It is a delicious drink.

I visited there to purchase a bottle of the same brewery's instrument Masamune, but it was not sold at the brewery. Too bad. When you open the bottle, the carbonation is released and a sweet aroma spreads. When you put it in your mouth, the sweetness spreads, but it is not strong. When paired with bonito, it enhances the umami without giving off a bad smell. A delicious cup.

It is a bottle brewed with natural yeast without using the 2023 brewing and 2025/7 manufacturing yeast. The sake is golden in color and has a smoky aroma. It has a matured flavor that spreads in the mouth. It does not have strong sweetness or acidity, but when drunk after sashimi, you can taste sweetness. It is a flavor that has never existed before. While watching Rokkaku-san's Kyushu-Nagasaki trip, we enjoy some Tobirazu that we purchased on our trip to Nagasaki last week. The accompaniments are tempura (satsuma-age), yakitori, and tuna that I bought in Nagasaki. When you open the bottle, you can feel the carbonation and smell the sweet aroma. The taste is refreshing. Sweetness, spiciness, sourness, and umami all come together and spread out. It is a delicious drink.

Drinking at home. I wanted to buy a bottle of "Jiaran" (a Japanese rice wine) during my trip to Nagasaki with my wife, but I could not find out where to buy it at dinner. Just when I was about to give up, I received a phone call from the front desk. The innkeeper we had just visited reported that he had found the distributor. When I asked for more information, I was told that the inn's supplier handled them, so I immediately went and purchased one. There were five kinds of sake available, but I gave up on draft sake and bought two bottles, one of which was Infinity 2025. I chose Infinity 2025. It has a fruity aroma, sweetness, sourness, and umami. It goes well with sushi. It is a delicious drink.

Home drinking. Summer vacation from today. I am looking forward to my trip to Nagasaki, Kyushu from tomorrow. We left early the next morning, finished preparations, and had only lunch. Today's cup is Kamo Nishiki Aki-agari. I checked in a Junmai Daiginjo before, but this is a comparison. The accompaniments are tuna, dashimaki (Japanese soup stock), aji-nanban (barbecued horse mackerel), and pork belly. Compared to the Junmai Daiginjo, it is less fruity, but the umami is strongly felt. It is a taste that only Aki-agari can offer. It is a delicious cup that goes well with the accompaniments.

Drinking at home. Finally the Natsu season is over and we are back to normal days. Today is my day off from work, so it is only lunchtime as usual. Today's drink is Nisato, a hand-me-down from my son in Okazaki when he went home for Obon. The snacks are sashimi, chicken tempura, horse mackerel, and assorted Japanese dishes. The aroma is not strong due to the heat. As is typical of Nitousato, it is a food sake that starts out spicy and then spreads to umami. It is a delicious sake that complements today's snacks.
