Today I am working, and it is only lunchtime as usual. To relieve the fatigue of the holiday weekend, today's drink is a Hakkaizan Junmai Daiginjo, which I have not had in a long time. When the bottle is opened, there is no sense of gas and the aroma is not strong. As soon as it reaches the palate, it has a spiciness and umami that is typical of Hakkaisan. When paired with horse mackerel, it eliminates the greenish smell, and the taste is clear and crisp. It is a delicious sake for a meal.

Home Drinking. Today is our regular lunchtime only. The bottle we chose is from the sake brewery we visited last week. The first impression is a stronger fruity aroma when the bottle is opened compared to the Junmai sake reported last time. The accompaniments are sashimi, horse mackerel, dashimaki, and yakitori (grilled chicken). The first impression is the umami from the sweetness. The first sip from the aji no nameko (horse mackerel) removes the smell of the horse mackerel, and the spiciness cuts through it cleanly. It is a delicious drink.

Home Drinking. Today's lunch only is Shizenigo, a sake from a brewery we visited last week. I visited there to purchase a bottle of the same brewery's instrument Masamune, but it was not sold at the brewery. Too bad. When you open the bottle, the carbonation is released and a sweet aroma spreads. When you put it in your mouth, the sweetness spreads, but it is not strong. When paired with bonito, it enhances the umami without giving off a bad smell. A delicious cup.

Today is my day off from work. It's only lunchtime as usual. Today's drink is my favorite Eiko-Fuji's limited edition sake, Weibuki, which is my first sake. We had sashimi, yakitori (grilled chicken), and simmered dishes to go with it. The sweet aroma is followed by spiciness and acidity. I feel it is more suitable for yakitori than for sashimi. It is delicious with grilled food. It is a delicious drink.

Drinking at home. Normally Tuesday is my day off, but tomorrow is a national holiday, so I'm off work today. It's only lunchtime as usual. Today's drink is my first Niida natural sake. It is a bottle brewed with natural yeast without using the 2023 brewing and 2025/7 manufacturing yeast. The sake is golden in color and has a smoky aroma. It has a matured flavor that spreads in the mouth. It does not have strong sweetness or acidity, but when drunk after sashimi, you can taste sweetness. It is a flavor that has never existed before. It is a delicious drink.

Home drinking. It's only lunchtime, a regular occurrence on my day off from work. While watching Rokkaku-san's Kyushu-Nagasaki trip, we enjoy some Tobirazu that we purchased on our trip to Nagasaki last week. The accompaniments are tempura (satsuma-age), yakitori, and tuna that I bought in Nagasaki. When you open the bottle, you can feel the carbonation and smell the sweet aroma. The taste is refreshing. Sweetness, spiciness, sourness, and umami all come together and spread out. It is a delicious drink.

Drinking at home. I wanted to buy a bottle of "Jiaran" (a Japanese rice wine) during my trip to Nagasaki with my wife, but I could not find out where to buy it at dinner. Just when I was about to give up, I received a phone call from the front desk. The innkeeper we had just visited reported that he had found the distributor. When I asked for more information, I was told that the inn's supplier handled them, so I immediately went and purchased one. There were five kinds of sake available, but I gave up on draft sake and bought two bottles, one of which was Infinity 2025. I chose Infinity 2025. It has a fruity aroma, sweetness, sourness, and umami. It goes well with sushi. It is a delicious drink.

Home drinking. Summer vacation from today. I am looking forward to my trip to Nagasaki, Kyushu from tomorrow. We left early the next morning, finished preparations, and had only lunch. Today's cup is Kamo Nishiki Aki-agari. I checked in a Junmai Daiginjo before, but this is a comparison. The accompaniments are tuna, dashimaki (Japanese soup stock), aji-nanban (barbecued horse mackerel), and pork belly. Compared to the Junmai Daiginjo, it is less fruity, but the umami is strongly felt. It is a taste that only Aki-agari can offer. It is a delicious cup that goes well with the accompaniments.

Drinking at home. Finally the Natsu season is over and we are back to normal days. Today is my day off from work, so it is only lunchtime as usual. Today's drink is Nisato, a hand-me-down from my son in Okazaki when he went home for Obon. The snacks are sashimi, chicken tempura, horse mackerel, and assorted Japanese dishes. The aroma is not strong due to the heat. As is typical of Nitousato, it is a food sake that starts out spicy and then spreads to umami. It is a delicious sake that complements today's snacks.

The bottle I chose this time is a Junmai Daiginjo Junmai Namaizu Genjozo from Kamo Nishiki. When the cork is opened, a faint fruity aroma spreads. It is a refreshing drink with less sweetness than the packaged sake, making it a perfect food sake. Today's drinking party is at a restaurant that serves grilled food (yakitori, etc.), so we will enjoy only lunch while expecting good sake.

Drinking at home. Late summer vacation, busy with few part-time student jobs, and finally time off from work. It's a regular lunchtime drinking session. Today we had our first sake, Jikin, which we won by lottery. You can't get Jyushiyo, Shinsei, Jikin, etc. in general, but only through a lottery held at a specific store. I won it for the first time after several attempts. Yay 😆🎶. When you open the cork, you can feel the carbonation and the fruity aroma spreads. The taste changes depending on the accompaniment. If you bring it to your mouth without any food, it starts with sweetness, but after bonito or yakitori, the smell is cleared away and the umami flavor is enhanced. It would be great if it were always available. It is a delicious drink. I will enjoy it today.

Drinking at home. Today's second drink is a sweet sake, True White from Kangiku, which is the exact opposite of the dry sake I had earlier. Today we will enjoy it. When paired with yakitori, the sweetness comes along with the fruity aroma, giving it not only a sweetness but also a spiciness. It is a delicious aperitif as well as an in-between-dinner drink.

Drinking at home. Today is my day off from work. I went out for a medical checkup in the morning and finished without incident. I bought some snacks and am now going to have lunch only. I was looking forward to drinking a bottle of Takachiyo because I saw your post and got a bottle of sake that I was interested in. When I opened the bottle, the sweet pineapple aroma spread out as it is well known. The sweetness spreads to the palate, followed by umami. The spiciness comes at the end. It is as delicious as expected.

Drinking at home. Today things are a little better and we go for a second cup. The second glass is a special junmai from Fukushima Hirotogawa. The aroma is not strong, with a slight ginjo aroma and sweetness. It is followed by spiciness and umami, and then it quickly breaks off. It is a delicious cup.
