(*) 🍶🍶🍶🍶 It was hot today, so I had a bottle of Dobrock. It's my first time to drink in Tokyo😙It was separated so I mixed it up and opened the bottle. It was very carbonated and I spilled a lot of water 😛 It was so fizzy it was like pouring cider into a glass. It's not too sweet and the grains of rice are delicious. It's also good on a hot day as it's chilled 😀.

Looks so cool!!! 🤣LOL Not the usual goddess of ministry️. I wonder who she is: ???? LOL! Compared to the standard Hanagumori Clean and refreshing👍. It's a doburoku but it's like eating a fruit. Rice dessert feeling😋. It also refreshes greasy food. The chocolate was delicious too 😚😚

I carefully opened the bottle and it took about 15 minutes. It's a sake that you can eat with your eyes, with the grains of rice usually recognizable. Overall, the strong gaseous feeling gives a swooshing impression, so it's refreshing to drink. I liked it.

Next was the Ryusen Yaezakura Junmai Sake Takumi no Omachi. Compared to the Yamada-Nishiki we drank earlier, the taste is a little more robust. The aroma is almost imperceptible, but the sweetness and umami of the flavor is stronger than that of Yamadanishiki. I was full of anticipation, wondering what this sake, which won first place in the Governor's Award, would taste like! I went to the brewery and asked them about it, and they told me that they will start selling it next week. I am looking forward to it! It was delicious! (^o^) P.S. This year, my hibiscus has many flower buds. Last year, they hardly bloomed at all... (^_^; )

There is clearly more lees than the previous Yamadanishiki. When you take the supernatant first, the taste opens up from the beginning, with a thick umami and sweetness spreading. The Yamadanishiki Junmai Ginjo reached this state at room temperature, but this one's flavor comes through even at low temperatures. When the lees are stirred, a crisp acidity is added and the aftertaste becomes clear. The full-bodied aroma comes out of the nose, and the taste becomes highly complete at once. This one is also insanely delicious! I've been drinking a lot of Omachi sake lately, and I wonder if this complex and thick sweet flavor is a characteristic of Omachi.

Yamadanishiki ver. Compared to Omachi's lees sake, it is slightly more lees and has a 1% lower alcohol content (17%). The bottle size is also changed from 500ml for Omachi to No. 4. The aroma is like rice itself and rice malt. The pure sweetness that is typical of Yamadanishiki passes through the nostrils with a slightly thick texture, and there is a slight bitterness that seeps into the tongue. A slight bitterness seeps into the tongue and a tangy sourness on the tip of the tongue. The taste that spreads in multiple directions in the mouth is like a rocket firework. As the day goes by, the acidity will become more rounded and a sense of unity will emerge.

I've been making my way to restaurants with good service lately. Today they served me a fresh aged sake. Today is February 6. This is my first Kinkame. My first impression was that it was very good! Next, it has a strong umakuchi taste. The acidity at the end is good, just like Yamadataro. It is like a light kijoshu, and it is delicious. Shiga is nice.

This Sake is very interesting. It has a citrus flavor like grapefruit. The flavor really cleanses the pallet.
Junmai nama-shu YAMADANISHIKI 90 Rice polishing ratio 90%❗️ This is the challenge sake of Michiko Urasato, the female toji of Yui. Yamada Nishiki is brewed at 90% polishing ratio without polishing. The taste of the rice is rich and intense❗️, but there is a light fizzy feeling. There is also a little bit of orage mixed in. This is why it is milder and softer in the mouth than I expected. The aftertaste is refreshing. It's amazing. Michiko Urasato, Toji 💡. I had it with ginger yaki, and it was delicious. The sake and side dishes go well together😆. I've heard that if you let it sit for a few days, you'll get a different taste of the rice, so I stopped at halfway today. I heard it's also good at different temperatures.

Second bottle of Rakurakutsuru. It is a brewed sake with a very high degree of alcohol (19-20 💦). I bought a small bottle because I wasn't sure, but I might as well have bought a big one. The regular size was a square bottle, which is an unusual shape for sake. I think it is best to drink it on the rocks, but you can also drink it straight, but I'm afraid of the aftertaste 😁. There are similar types of sake such as ice breaker, but I think it has a clear taste in comparison. I recommend it for summer👍

Went out to eat Izushi soba with my family👍. After dinner, we stopped by a nearby sake brewery. I often visit Izushi, but this was my first time to visit this brewery. I think this is probably the only junmai I've ever had. I recommend this sake at room temperature👍. Cold sake has an overly pronounced acidity, but it can be drunk neatly. At room temperature, the sweetness is more easily felt and the overall balance is better. In addition, I drank it hot and felt the spiciness strongly, but it was very smooth. You can enjoy the change in taste with the change in temperature 😁.
