This Sake is very interesting. It has a citrus flavor like grapefruit. The flavor really cleanses the pallet.
Junmai nama-shu YAMADANISHIKI 90 Rice polishing ratio 90%❗️ This is the challenge sake of Michiko Urasato, the female toji of Yui. Yamada Nishiki is brewed at 90% polishing ratio without polishing. The taste of the rice is rich and intense❗️, but there is a light fizzy feeling. There is also a little bit of orage mixed in. This is why it is milder and softer in the mouth than I expected. The aftertaste is refreshing. It's amazing. Michiko Urasato, Toji 💡. I had it with ginger yaki, and it was delicious. The sake and side dishes go well together😆. I've heard that if you let it sit for a few days, you'll get a different taste of the rice, so I stopped at halfway today. I heard it's also good at different temperatures.

The last sake we had at Kyoto Stand Kiyo Kiyo was "Toyoyo Junmai Dry Musou" by Mukai Shuzo, also from the Tango region. The rough and powerful label may represent the fishing scene in this area. When you put it in your mouth, you can feel the umami flavor and the aroma of rice is crisp and full. Even though it is called "Dry Musou", it has a hint of sweetness, which makes it a delicious cup. It has been a long time since I have had a good drink, and the best part of drinking outside by myself is that I can drink slowly while considering what to drink and what snacks to go with it, while keeping an eye on my pocketbook. I returned home refreshed both mentally and physically. From next time, I will introduce some of the sakes I took at the beginning of the year!

Kyo no Haru by Mukai Shuzo, famous for Ine Mangaka. It is a summer sake, but it is said to be for warming up as it is called "summer warmed sake". The rice used is 100% Koshihikari. It was served lukewarm 🍶. The first aroma is sweet with a hint of acidity. In the mouth, you can taste the slight acidity and umami of the rice, but there is not much acidity or bitterness, and it does not feel citrusy. I think it is summer tangerine 🤔. At home. The third Nara sake without permission - ‼️. Kita Sake Brewery is located in Gobo-cho, Kashihara City and was founded in 1718. My son used to play baseball and we used to go to Sato Yakuhin Stadium near here. This is the first time for us to visit there. The aroma is not so strong, but there is a slight sweetness and alcohol. When you put it in your mouth, you can taste the sweetness, sourness, dryness, and the gradual feeling of alcohol. Oh, is this the ultimate in dryness? For now, I will only taste it tonight and wait for tomorrow to see how it changes. There was almost no change in taste after the second day. It is dry, but it has a sweet taste and is not unacceptable.

Miyogiku is a sake brewery located near Kashihara Shrine. I bought a Junmai sake and this Honjozo sake. It has a very high density of flavor and richness even in hiya, and the acidity is enough to go well with the drinks! It is also very well balanced in terms of both comfort and drinkability! It is even better when heated! This is wonderful! I bought a small bottle the day before because I had to buy a lot of things at Ise Jingu Shrine, but I want to buy another 4 bottles! Before going to the Kashihara Shrine, we went around the tombs around the shrine, and especially the Unebiyama Northeast Mausoleum was amazing! It was scary! Furthermore, although I must have been to Kashihara Shrine when I was a child, it looks bigger than the image I had when I was a child. Normally it should look smaller than it did when I was a child, but it was the opposite. I guess I felt the greatness of Kashihara Shrine.

Terroir of Okazaki 🍶 Junmai-shu brewed with "Manzai rice" produced in Okazaki at a milling ratio of 70 I think I could taste some bitterness.... I think I can feel a bit of bitterness...
