It is a deliciously spicy, slightly fruity sake with a hint of sweetness that finishes off with a deep flavor. The taste is classic, but there is something more.
I bought this sake at Takata Takata Sake Brewery when I visited Wajima last year. The store was inundated by the torrential rains that followed the earthquake, and although they finally managed to fully reopen for business in late March, the online store has been suspended.
The brewery was also severely damaged by the earthquake, and they are working with another sake brewing company in Ishikawa Prefecture. We will continue to pay attention to the reconstruction of Noto without forgetting about it. It is not easy to drink only Noto's sake, but....
Hi Nf bapak 😃
We don't drink much Noto sake either 🥲 but we love Hokuriku sake in general 🤗I thought Suehiro was a Fukushima sake, but Noto Suehiro! I've got it in my head now👍
Good evening, Jay & Nobby. Yes, Noto Suehiro. It is like Shinshu Kamerei to Kamerei. There is a lot of good sake and sake breweries. There are so many delicious sake and sake breweries that it is difficult to repeat purchase.
It is mildly sweet, but the acidity that comes after makes it easy to drink. It has just a slight yogurtiness. Wouldn't it go well with appetizers and meats with strong flavored sauces?
We had a sake tasting set and oden at Kanaeki Chikuwa.
I think 2 out of 3 were dry.
I'm too stupid to understand the difference other than "this is dry".... But it was good because it was delicious!
The dry one went well with the Kanazawa oden! And these two types of snacks also went well together... I have so many fateful encounters with both sake and snacks that I can't stop crushing on them.

This sake has a rich, umami taste with the flavor of a pure sake, and a strength that is commensurate with its strength.
When heated, it becomes softer on the palate and the strength is more pronounced, making it a delicious sake that is drinkable either way.
It seems that this sake was brewed at the Kamiizumi brewery (Higashi Shuzo) after the brewery was destroyed in last year's earthquake, and the collaboration not only in the production but also in the label is quite nice.
Sake for the first time in a long time
Classical, a little dry, and deliciously refreshing without being overpowered by oily food!
After the Noto earthquake, rice rescued from the rubble was sorted by hand and made with the cooperation of Azuma Sake Brewery.
It is a courageous thing to be able to taste the result of so many thoughts that have been put into shape!

Forgetting to post, a meeting to taste a certain Hyakumangoku No Shiro.
The Nakashima Brewery in Wajima was damaged by the Noto Peninsula earthquake. The brewery borrowed facilities from Azuma Shuzo in Komatsu. Nakashima brews for softness and Azuma brews for crispness. The best of both worlds.
Mellow. Fruity but mild aroma. It has a slightly refreshingly acidic taste with a well-cornered flavor and throat.
Noto Suehiro by Nakashima Sake Brewery in Wajima, brewed by Higashi Sake Brewery in Komatsu City, which is known for Kamiizumi.

Don't stop #Noto's sake on Makuake! In the second phase of the project, Shirafuji Brewery collaborated with Kaze no Mori's Aburicho Brewery and Hiyoshi Brewery collaborated with Kamikawa Taisetsu Brewery, while Nakajima Brewery has been brewing sake with Higashi Brewery in the same prefecture since February.

The Nakajima Brewery has been brewing sake since February with Azuma Brewery, which is located in the same prefecture. We wanted to welcome them in a way that they could brew their own sake," said Mr. Futami, the toji at Azuma Sake Brewery. That explains why they are in the same prefecture.
This was also ordered from the sake boutique Okuda-san in Wajima. Although I can't shop there often, I hope I can be of some help to Noto sake and Noto sake shops, even if only in a small way.
Purchased at the Hokuriku Antenna Shop in KITE.
Apparently several sake breweries are releasing hiyaoroshi at the same time, and each brewery has a common label.
The brewery was destroyed by the earthquake and is now brewed at Azuma Sake Brewery in Komatsu City.
The label is very beautiful. The first half is sweet and tastes like peach or apricot. In the second half, a unique woody flavor spreads throughout the entire bottle.
I would like to try Noto Suehiro and other sake as well as the sake currently brewed by Azuma Shuzo 🤔.
This sake is made by the owner of the brewery himself using sake rice that was manually sorted and salvaged from the sake brewery that was completely destroyed by the Noto earthquake this year. Some say he may never be able to make this junmai ginjo again.
While the story is amazing, the taste is also wonderful.
I had another glass of this precious sake.
I hope we can do it again next year.
