Pairing
Pairs well with white fish sashimi (sea bream, flatfish), lightly seasoned simmered dishes using Kaga vegetables, carpaccio, and sushi.

Sake from Noto, they are borrowing a sake brewery in Komatsu to make it due to the earthquake.
When I was told about it, I heard it was very sweet, but it really was too sweet. It was so sweet, you would think there was sugar in it.
But it had a deep taste and was so good that I wanted to buy it again.
I was told that there is another spicy one, so I want to try that one next time.
The taste is mild at the beginning, but then the spicy and tasty flavor rushes in and finishes. It gives a strong impression.
I have only tried it with sashimi, but I felt it went especially well with red tuna.
Classic type. Soft on the palate, dry in the middle, with a clean finish. Easy to drink. Very good as a food wine.

Label says, “If you can dream it you can do it.” Outstanding! Purchased at a Noto support fest in the Kencho-ji (Kamakura) parking lot. Ishikawa still needs our support!!
It is a deliciously spicy, slightly fruity sake with a hint of sweetness that finishes off with a deep flavor. The taste is classic, but there is something more.
I bought this sake at Takata Takata Sake Brewery when I visited Wajima last year. The store was inundated by the torrential rains that followed the earthquake, and although they finally managed to fully reopen for business in late March, the online store has been suspended.
The brewery was also severely damaged by the earthquake, and they are working with another sake brewing company in Ishikawa Prefecture. We will continue to pay attention to the reconstruction of Noto without forgetting about it. It is not easy to drink only Noto's sake, but....

Good evening, Jay & Nobby. Yes, Noto Suehiro. It is like Shinshu Kamerei to Kamerei. There is a lot of good sake and sake breweries. There are so many delicious sake and sake breweries that it is difficult to repeat purchase.
It is mildly sweet, but the acidity that comes after makes it easy to drink. It has just a slight yogurtiness. Wouldn't it go well with appetizers and meats with strong flavored sauces?
We had a sake tasting set and oden at Kanaeki Chikuwa.
I think 2 out of 3 were dry.
I'm too stupid to understand the difference other than "this is dry".... But it was good because it was delicious!
The dry one went well with the Kanazawa oden! And these two types of snacks also went well together... I have so many fateful encounters with both sake and snacks that I can't stop crushing on them.

This sake has a rich, umami taste with the flavor of a pure sake, and a strength that is commensurate with its strength.
When heated, it becomes softer on the palate and the strength is more pronounced, making it a delicious sake that is drinkable either way.
It seems that this sake was brewed at the Kamiizumi brewery (Higashi Shuzo) after the brewery was destroyed in last year's earthquake, and the collaboration not only in the production but also in the label is quite nice.

Classical, a little dry, and deliciously refreshing without being overpowered by oily food!
After the Noto earthquake, rice rescued from the rubble was sorted by hand and made with the cooperation of Azuma Sake Brewery.
It is a courageous thing to be able to taste the result of so many thoughts that have been put into shape!
