Another one this time. It is Takatsugawa by Fusozuru. It is from Shimane Prefecture. I saw Hiraccio-san drinking it and longed for it 🙌. First at room temperature. The color is a solid yellow. The aroma is mildly savory with a hint of maturity. It smells like caramel, soy sauce, and cream cheese. The mouthfeel is gentle. The palate is drowned in the complex flavor of aged rice with a moderate acidity. When heated up, it becomes smoother and more balanced, and you can just keep on drinking it. It has a relaxing and soothing taste. When tasted with a thick Shigaraki-ware sake cup, the warmth of the clay makes it taste even better. The warmth of the clay makes it even softer and happier 💕. Naohiko Noguchi Institute I wanted to try. Smells like caramel and grain. It has a dry, drinkable, honey-like sweetness, a strong flavor, powerful acidity, and a clean aftertaste with enough stimulation to numb the tongue. Delicious. Impact like a whiskey. The official recommendation is to drink it lukewarm (around 40 degrees Celsius). The warmer it is, the less stimulating it is. The last sake we had at Kyoto Stand Kiyo Kiyo was "Toyoyo Junmai Dry Musou" by Mukai Shuzo, also from the Tango region. The rough and powerful label may represent the fishing scene in this area. When you put it in your mouth, you can feel the umami flavor and the aroma of rice is crisp and full. Even though it is called "Dry Musou", it has a hint of sweetness, which makes it a delicious cup. It has been a long time since I have had a good drink, and the best part of drinking outside by myself is that I can drink slowly while considering what to drink and what snacks to go with it, while keeping an eye on my pocketbook. I returned home refreshed both mentally and physically. From next time, I will introduce some of the sakes I took at the beginning of the year!

I tasted it during the New Year holidays. I thought it was arabashiri, but the staff mistakenly put shiboritate in it 🤣. It was fresh and easy to drink even though it had been fired once.

Today, following yesterday's Aizan drinking event, I went to the Osaka Bay Tower's Japanese sake festival event 😀. I was informed in advance by bouken-san that there was a sake that Saku-san usually does not have, so I made a toast with his wife with that sake 😇. The sake was even clearer and fruity than Saku's usual sake, and we were very satisfied from the start 😀. During the live taiko performance by three women, my wife and I, who are both learning taiko, were overwhelmed by their amazing performance 😇. We were able to compare over 130 different types of sake, but my favorite was from Yamazaru, a brewery located in Asa, Yamaguchi Prefecture 😇. From the aroma to the mouthfeel, it was right up my alley👍! I had a chance to talk to the brewer and asked him about the stores in the Kansai area that carry it.

It is not fruity, but it is slightly sweet and well-balanced. It is a good sake!

The brewery's toji may have passed away, but the truth is still unknown. We will be very grateful for the sake. I'll have it cold. The color is clear, but the yellow color is quite discernible. The top aroma has a strong pure alcohol aroma. It flows smoothly on the palate. The taste has a slight, weak acidity, and the umami of the rice seeps out slowly.
