I wonder if this is my first time to drink Iyari-ri.
I thought it was an unfamiliar place name, so I looked it up and found that there is a natural monument called Iyari Marsh in Nagano Prefecture. Wow, I'd like to visit there.
This one is made with a sake yeast yeast yeast.
It has a strong umami flavor and a sourness that is typical of a sake made from a yeast yeast yeast.
It looks like it would be good as a heated sake, or just as a dry sake.
I would like to try other specs of this sake.
Last Friday, a little early for cherry blossoms, but Matsumoto Castle was lit up and delicious food and Shinshu soba noodles accompanied by this sake. happiness ☺️

Sake degree 5, acidity 2.0, rich and dry, amino acid 1.6
Yeast: Association No. 701
It has a slightly carbonated, lactic acid aroma, a light young banana aroma, and a crisp, dry taste with the umami of rice.
It goes well with cheese and miso when served cold.
When it is heated, the umami of rice increases and it becomes more crisp and spicy,
It would go well with sweet and spicy braised chicken wings or sukiyaki.
