Many local people do not know what kind of local sake is available, so as the Sake-no-Wa-Uwa-Uwa-tai, we brought some to the company's drinking party to convey the charm of this sake. This one was brewed by Nakajima Sake Brewery, a 100 stone sake brewery in Okunoto, using Azuma Sake Brewery's facilities in Komatsu, which is in the midst of the excitement of the Shinkansen bullet train opening. This is the first time we have received sake from this brewery. The first bottle of the New Year was purchased at an antenna store in Ishikawa Prefecture. They were serving sake at the entrance and it was so delicious that I couldn't help but grab a bottle. LOL! It has a fresh aroma and I love the balance between a moderate sweetness and a firm dryness! It has a slightly smooth mouthfeel, but the aftertaste is refreshing. The snacks were kombujime sea bream, gosai zuke (pickled fish), and kurozukuri firefly squid. These were also purchased at the antenna store. We were happy to find good sake and snacks! Sake from Noto, they are borrowing a sake brewery in Komatsu to make it due to the earthquake. When I was told about it, I heard it was very sweet, but it really was too sweet. It was so sweet, you would think there was sugar in it. But it had a deep taste and was so good that I wanted to buy it again. I was told that there is another spicy one, so I want to try that one next time.

It is a deliciously spicy, slightly fruity sake with a hint of sweetness that finishes off with a deep flavor. The taste is classic, but there is something more. I bought this sake at Takata Takata Sake Brewery when I visited Wajima last year. The store was inundated by the torrential rains that followed the earthquake, and although they finally managed to fully reopen for business in late March, the online store has been suspended. The brewery was also severely damaged by the earthquake, and they are working with another sake brewing company in Ishikawa Prefecture. We will continue to pay attention to the reconstruction of Noto without forgetting about it. It is not easy to drink only Noto's sake, but....

We had a sake tasting set and oden at Kanaeki Chikuwa. I think 2 out of 3 were dry. I'm too stupid to understand the difference other than "this is dry".... But it was good because it was delicious! The dry one went well with the Kanazawa oden! And these two types of snacks also went well together... I have so many fateful encounters with both sake and snacks that I can't stop crushing on them.
