It is a spring sake, but the label is not pink or something spring-like, but for some reason, it has a full moon. My own guess is that it comes from the haiku term "Haru-Manzuki," which means "full moon in spring. But it still looks like a hiyaoroshi. Lactic acidity from the top-tasting aroma. The mouthfeel is silky and light sweetness from the tangy gasiness, and the umami is jiggly. The aftertaste is full of lactic acidity, and the closing acidity and bitterness are robust. I thought it was a bit of a rush at the back of my throat, but it was only 17%. It is light, so you don't feel it too much, but it is quite heavy. Why do I keep buying this kind of sake when I should just buy Senkou or Houou Mita? (Maybe I'm a sake pervert...) Some heated sake tastes fishy or sticky when it cools down, but this is not the case with heated sake; it maintains the same flavor and sharpness all the way through.

I have always been curious about this sake. First, let's take a sip. Smells more like candy than fruit. Banana cake, lychee, yogurt, freshly baked pound cake, very ripe peaches. No sign of activity. However, I like it this much better now. Other doburoku seems to take a little more getting used to. The rice mash is not that strong and has a mouthfeel similar to muddy sake. We received Gozenshu from Okayama Prefecture. It is said to be the oldest traditional sake brewing method in Japan, called "Bodhi Hashiroshi. But it is a modern sake, not traditional.
