A gorgeous bottle of 40% polished Yamada-Nishiki from Hyogo Prefecture's special A district😊.
Round and dense mouthfeel but with a spreading sweetness that is elegant. ‼️
The luxurious rice flavor that comes out of it and the minerality that flows through it doubles the deliciousness 🤤.
You can feel the luxurious and noble taste of "THE Junmai Daiginjo" and it is a superb bottle 😋😋.
I'm going to give you a big thump.
According to the POP in the store, this is a hiyaoroshi that has been aged for two summers✌.
This is the second consecutive multi-year aged bottle since Kozan, but the quality of the sake is the exact opposite 😲.
This one is quite robust, with a spiciness that could be described as ultra-harsh, and a finish that stands out for its acidity.
It has a mild heady aroma and is not flashy at all, but is a solid, robust, orthodox sake.
I didn't feel any sense of maturity.
I drank it all before trying it, but it would probably go great with grilled salt fish 🍁.
Koka's local sake, Ninja🥷.
A classic one, full of sweet and tasty rice flavor with a grain aroma and a touch of alcohol.
From the name, this sake seems to be popular among inbound tourists. lol
Aladdin-san was drinking,
I found "Ninja but not a ninja" which Aladdin drank at the same store!
And also "Urazake" (a back liquor)!
I was ready to try the sake that is too hidden in the darkness!
100% Yamadanishiki from Hyogo Prefecture
Rice polishing ratio 40
Alcohol 15%.
Sandesi.
The aroma is typical of sake, and when you drink it, it has a slightly fruity, soft sweetness, and umami and spiciness.
The next day, the sweetness increases and it is even easier to drink.
I drank it with mirin (dried sweet sake), but it was not so good.
It is better with sashimi than with sweet and spicy food.
The cap of Jungin is also mysterious even though it is Jun Dai.
I was reminded of the phrase "a ninja, but not a ninja" when I drank it.
Hi Pon-chan 😀
This is indeed a sake from Shiga Prefecture, the home of the ninja 😀.
In many ways, it's an intriguing sake that seems to be like a ninja, lurking in the dark and jumping into your bosom😇.
Good evening, Hanapin 🦉.
Ninja, which is not a backstage sake, is a normal delicious sake, but this one has a backstage face 😎The taste was very drinkable and yet beautiful 😊.
Hi Pon, good evening 😊.
I drank a non-back-up one (maybe) before, but it was sharp and I guess "ninja", I didn't know such a thing existed 🥳 something like this, I can see your playful side 😘.
Good evening, Takashi!
I went to see the store once 🥷 and you are a genuine ninja 🥷 not a backstage 😊👍Don't tell anyone about the backstage 🤫 if you come across it, please ask the store staff 😉.
Good morning, Pon-chan 🥷.
It is a rule to be a ninja and to taste sake behind the scenes in secret. 😶🌫️
I'm glad we share the same thoughts: ☺️
Today and tomorrow is the day of the Shiga Sake Toast Project and we want to spread the word about Shiga's sake 🍶😊.
Hi Aladdin 🥷.
I'm so glad to have someone to share with quietly 🙏 I'm dying to talk 🤣.
I'd like to toast but I haven't bought any 💦I'm going to be accused of being a non-prefect 😂.
Fukuhara Sake Shop hanpukai
Sweet grape aroma, clean aftertaste with no cloying taste. The best part of the hanpukai. I was able to learn about delicious sake from a brand I knew nothing about.
I enjoyed it with mackerel stewed in grated radish and chicken stewed in a sour tomato nut sauce.
Ninja Daiginjo Akagage
Rating 4.4
Rice: Special A district Yamadanishiki from Yoshikawa, Hyogo Prefecture, 40% polished rice
Gorgeous and fruity aroma despite being alsobeared. Rounded umami depth. Sake quality with lustrous sweetness and moderate sharpness!
The entire brewery bottled 540 bottles (only one square bottle).
Let's drink Shiga's sake series.
The other day, I visited Takatsu Sake Shop in Kusatsu City, Shiga Prefecture, for the first time and got this "back-up sake" 🍶.
It is a "Ninja Junmai Daiginjo" from Seko Shuzo in Koka City.
However, this sake is a ninja, but not a ninja 🥷.
The details of this junmai daiginjo-shu are shrouded in mystery.
For some reason, the cap also says "Junmai Ginjo," which is another sign that it is an undercover sake!
The appearance is a pale silver yellow.
The aroma is gentle, gorgeous and cool.
The aroma is sweet and aromatic with apple, freshly cut pear, melon and banana in the background.
Honeysuckle, cool and refreshing chervil, and a faint laurel.
Rice aroma about the level of Kamishinko.
Fluffy and mellow texture.
A beautiful, rich sweetness and a gentle, fine acidity spread softly in the mouth.
The alcohol passes through the nose, and the clear umami flows smoothly.
The fruity sweetness of the overtone is intoxicating, and the sharpness seems to disappear.
The lingering aftertaste is long with a slight, beautiful bitterness.
Fruity ginjo aroma and extremely fine taste. ☺️
No, it's really messed up and wonderful 😊.
Even the best sake breweries can be lost due to the circumstances of the time.
The world of sake is harsh and ephemeral... I had this while thinking about many things 🍶.
