The other day, I visited Takatsu Sake Shop in Kusatsu City, Shiga Prefecture, for the first time and got this "back-up sake" 🍶.
It is a "Ninja Junmai Daiginjo" from Seko Shuzo in Koka City.
However, this sake is a ninja, but not a ninja 🥷.
The details of this junmai daiginjo-shu are shrouded in mystery.
For some reason, the cap also says "Junmai Ginjo," which is another sign that it is an undercover sake!
The appearance is a pale silver yellow.
The aroma is gentle, gorgeous and cool.
The aroma is sweet and aromatic with apple, freshly cut pear, melon and banana in the background.
Honeysuckle, cool and refreshing chervil, and a faint laurel.
Rice aroma about the level of Kamishinko.
Fluffy and mellow texture.
A beautiful, rich sweetness and a gentle, fine acidity spread softly in the mouth.
The alcohol passes through the nose, and the clear umami flows smoothly.

I think this restaurant has a decent selection of sake, including some I haven't tried, but I think most of the sake was dry to match the fish and not to interfere with it. I think they had a lot of dry sake to go with the fish and not to interfere with it.
