Tonight, I'm going to open this bottle for the first time in a long time & the long layover series. Kenshin Special Honjozo 2021BY I'm going to have a glass of this sake, which has been in hibernation for more than 2 years, with a plum crystal I bought in the neighborhood as a side dish. The taste is dry and crisp when cold, but as it gets closer to room temperature, the sweetness and umami of the rice is concentrated in the attack, and it changes to a deliciously dry taste. It gently wraps the sourness of the ume crystal and washes it away, and it goes surprisingly well with it, making it a good drink. ☺️

Continued from yesterday. The second bottle is a sake called Kenshin from Niigata. This bottle was given to me by a friend of my son. The timing was not good, so I was finally able to open it. I took a sip, thinking it would be a little yellowish and dry. I took a sip. Surprisingly, it had a mild barrel sake flavor. It can be used not only with sashimi, but also with a slightly stronger flavor. Delicious! (^O^)

The eighth sake rice research bottle is Yumesansui, a trad variety from Aichi. It has a solid image, but the aroma is citrusy. Freshness of new sake, slightly effervescent and drier than sweet. Very tasty.

It's still water even if the temperature goes up😅It might be good if it's heated up, but it's too much trouble so I'm not going to do it 🤣. Next time👍

The rice is Yumesansui, the same as in the previous nama sake we drank. Slightly fizzy and refreshingly fruity. A little sweet and a little pineapple. It tastes fresh and spring-like. Delicious.

Sake purchased at Tomekawa Sake Shop, aka Salad Pavilion. The rice is Matsuyama Mitsui from Ehime. It is fresh and gassy. The overall impression is dry, but as the brewer and the liquor store say, it has a strawberry-like flavor. Once again, the sweetness is moderate.

Imanishi Sake Brewery is well known for its Mimuro Cedar. I have not seen this sake very often, but I bought it thinking that the sake bearing their name must be very strong. The aroma is subdued, but it is like a rummy. It has a light sweetness and a nice sharpness. It has a slight alcohol taste. I heard that Asahi rice is a low GI food, I hope this sake is also low GI 🤣.

( ´´▽`)🍶🍶🍶🍶 Today we had our first Yui Yui Hitachinomegumi, which we purchased on our GW trip 😀. After purchasing it, I was disappointed to learn that the brewery was destroyed by fire. I hope to drink some of the Yuki Sake Brewery's sake and hope it is rebuilt 🥺. The aroma is mild and also has a mild rice flavor, combined with a pleasant acidity 🤔 with a clean aftertaste 😚 It is a beautiful sake and I would like to have the basic Yui label next time 😊.

The third drink at Kaku-uchi When we were told that it was time to go home, we chose for our last drink the miraculous Yui Yui sake that was rescued from the scene of a fire^ ^ ^. It has a refreshing taste... and you feel refreshed after drinking it! It's just so easy to drink! And delicious! I would like to try this sake with a meal next time. I sincerely hope the brewery recovers as soon as possible 🙏. A little something extra... I could not eat the snack of Kishu Nanko Ume because they were out of stock due to the heat of the day (T . T)

At home. This is the last in the Shiga Sake series. It has a gorgeous aroma, sweetness and acidity in the mouth, and a very refreshing taste that finishes with a light bitterness. The third drink at my favorite yakitori restaurant was Gizaemon Natsu-damon, which I had during a break in the drinking Shinsei. This is another summer sake from my favorite Mie sake that I was very curious about. The aroma is not so strong. It has an energetic taste with a tingling sensation when you put it in your mouth. It was a very tasty sake with a good balance of refreshing sweetness and bitterness ✨.
