Another bottle was opened at the Kizuna Festival. Golden crystal that saw the light of day at Izakaya Shinkansen. Gold Crystal label expressed with a characteristic figure. It is one of my personal favorite labels. The top-tasting aroma has a very classical sake flavor. The mouthfeel has a light umami from a hint of sweetness. First contact is lighter than expected. The finish is again full of sake-like aftertaste, with a mild acidity and a strong bitterness. I had imagined it to be a more mellow and stand-alone sake, but it is considered to be a high performance food sake. During the festival, I served it with tempura and dried scallops that I bought and brought with me, and it was quite good! Thanks for the food!

Tonight I'm having this one 🍶. I got this on my trip to Fukushima last month! I've been wanting to drink this since I saw it on Izakaya Shinkansen 🍶✨. They are the only sake brewery in Fukushima city😃. Mellow, refreshing, oicy❕. The aroma is slightly fluffy 💠. Slightly crisp but still mild 🌸🍶✨. This is a great one ❕. I'm glad I found you 😆. I also love the fukushima saké💗. It's very tasty.

I decided to go with Chiyoda Kura because I thought I could buy Yukihikoyama at a liquor store in my neighborhood. The taste is moderately sweet and tasty with a summery, crisp, spicy flavor. The impression is that it is quite sharp and clean.

The aroma is modest for a daiginjo❗️. It has a clean taste, but It has a unique sweetness and aroma 😅 I wonder if it tastes like fukunohana❓ I guess it's good to drink as a food sake. It's a raw sake so I'd like to let it sit for a while and see how it tastes. I'm hoping for a change in taste❗️😊.

Tonight, it's Hochotsuuru from Yamaguchi Prefecture in the 8th installment of our first series & muddy pick ✨. 100% Yamadanishiki, 50% polished rice, 17% alcohol by volume 🍶 Almost no gas when the bottle is opened. The aroma has a gentle sugary sweetness, and the mouthfeel is characterized by a sweet flavor and a soft sake quality. When mixed with the lees, it is milky without lactic acidity🥛 and full-bodied with a spicy taste😋😋😋😋.

Smells like muscat with a sour smell. Sour and sweet, gentle juicy to strong sweet taste. Good wood and yeast flavors that appear along the way. It is like a sweet Shinsei. It goes well with cheese. It is not so sweet that you can't finish your drink, but it is not sweeter than chocolate or potato kenpi. Delicious. Matsumidori: More than expected! I've been wanting to try a bottle of my favorite Kanagawa sake 🍶 Matsu Midori... Koji rice is Okayama Yamadanishiki, Kake rice is Nagano Miyamanishiki, and the sake is brewed with No. 7 yeast at low temperature fermentation 🍶...the taste...mellow sweet and delicious 😋♪ Excellent balance of sweetness and acidity It's a great balance of sweetness and sourness! Corner shop at the mysterious cheese shop (2) Since the corner drinking at this restaurant is self-serve, we discovered an unopened bottle of Moridori when searching the refrigerator! I entrusted it to Mr. Nemuchi, a professional corker 😁. I drank a lot of dry sake at an off-line meeting the other day and I'm in the mode that I can drink some dry sake, right? Purchased at a liquor store specializing in Hyogo sake with mofu. There were many people drinking sake in the store and the atmosphere was bizarre. When I asked the store staff if it was an event, he told me that they were people who had come from Ozeki's brewery open at a nearby store. The smell of squid filled the air, and the waiter said he was sorry for the smell 🤣. This sake is brewed with salvia yeast collected by students at an agricultural high school. It is slightly effervescent and has a unique flavor. Sweet but cosmetic like no other aroma. A little nutty in the second half. I thought it was a little peculiar. After 3 days, a little bit of rum raisin taste. Definitely tastier than freshly opened 😋.

Have you all entered GW? I am starting tomorrow. Well, the father of the liquor store recommended this Yuto. It is a spring sake, but the label is not pink or something spring-like, but for some reason, it has a full moon. My own guess is that it comes from the haiku term "Haru-Manzuki," which means "full moon in spring. But it still looks like a hiyaoroshi. Lactic acidity from the top-tasting aroma. The mouthfeel is silky and light sweetness from the tangy gasiness, and the umami is jiggly. The aftertaste is full of lactic acidity, and the closing acidity and bitterness are robust. I thought it was a bit of a rush at the back of my throat, but it was only 17%. It is light, so you don't feel it too much, but it is quite heavy. If you don't think about the order in which you drink it, it might wipe out the taste of the next sake. Thank you very much for the drink!

Tasted at the traveling SAKE in Hankyu Department Store. The one on the right side of the photo. The rice is Gohyakumangoku. The description says it is dry, but it does not feel as dry as it says, and it has a nice sharpness. It seems to be good with food.
