A trip to visit a brewery. We went to Kurikoma, the hometown of the person who helped us. We visited our favorite brewery, Senda Sake Brewery in Okutsuru Kurikoma Mt. According to the young master, even weak drinkers can be satisfied, so we bought this one. We will drink it from now on.

I got a bottle of Senkyu's "Kirifuri" on a business trip to Utsunomiya the other day...fruity aroma, strong acidity and bitterness? It has a fruity aroma, acidity, and a strong bitterness. I think it's a good sake for a meal...I had sardine nigiri and on the second day, I had yakitori as a side dish...I feel this sake is better when the bottle is opened. It has some peculiarities...but...it's delicious!

This is a piece of bread I bought on my way back from a trip to Kirifuri Kogen. I thought it was the perfect name for a souvenir, but I was surprised to find it was made by Senkou 😳. I've been storing it at room temperature for a while now because it's been heat-treated. But I thought it would be better to drink it cold, so I put it in the fridge and drank it. The best thing about this product is that it has the gas and acidity that I like, even if it has been heated.

They use a yeast called "Kyo no Koto" which was jointly developed by Sasaki Shuzo and the Kyoto City Institute of Industrial Technology. If that's the case, why don't they write it on the label? It's quite floral, but banana-like. At the end, the sourness kills it. So far, I don't think I've had a bad bottle of Fuoh.

Japanese Sake Festival @ Osaka Bay Tower (¡Ω) Very yellow. Delicious and mellow as expected! Although from the Fushimi brewery, this sake would definitely be better suited to those who prefer San-in sake! I've been afraid to go to Kyoto since the new cologne, but this makes me want to go to Fushimi to buy some! But I still don't have the guts to take the train only in the direction of Kyoto where there are many tourists! The unique mellow aroma of rice? Aroma of mellow rice...Sweet and spicy with a strong sweetness. There is also a slight sourness? The bitterness in the aftertaste is not bothersome... It disappears quickly. Brewed with 50% Miyamanishiki and 50% Hitogochiki from Nagano Prefecture, it is truly a hybrid of the best of both worlds. Nemuchi said she didn't have a good image of Nishinomoto, but I pushed her 😁. Well, I don't usually drink Nishinomon myself 🙄🙄. It had the same label and yeast as the one I drank at home in the past, but it was upgraded from junmai ginjo to junmai daiginjo. Sweet and sour, juicy and delicious. Like Koshi, I don't like the aroma of sake made with malic acid-producing yeast, but I don't dislike the taste.

Tonight, we paired this first sake with Japanese food for dinner. Saijotsuru Jun Dai Black Label Hibi Seishin Nakadori Nama Sake✨. I have not had much luck with Hiroshima sake so far, but I hope this will be a new encounter for you: ☺️ I've never had much luck with Hiroshima sake, but I'm hoping to meet some new people. Is Tachika a characteristic of the rice? Is it the yeast? The aroma is not so strong, but it is a bit of a "chemi" aroma. The taste has the fresh acidity and clear quality of Nakadori Nama-shu, with soft fruit flavors of muscat and lychee, and finishes crisply with a dry taste with a strong sense of alcohol in the latter half. It is perfect as a food sake and does not interfere with meals, but it is also delicious when drunk on its own 😋.

At home. I bought this as a souvenir when I enjoyed lunchtime drinking at Changlong Brewpark and had it at home. I guess it is a slightly different version of the one I had at lunch. The aroma may be influenced by the name of bamboo ⁉️.... Unlike the lunchtime drink, it was fresh, sweet, sour, and refreshing. At Changlong Brewpark. The second drink was Shikisaki. We were told that it is recommended as a food sake, so we had it with our bento. It is a dry sake with a strong umami flavor that can be savored slowly. Dry with a hint of flavor. Almost room temperature at the beginning of the drink. No sweetness whatsoever! But it's not hard to drink. I don't know if this is a good analogy, but I drink it as a very light shochu. It's meant to be a sipping drink, but it goes into your body quickly! The second day starts with a cold sake. On the back of the label, it says it's a little dry. Perhaps because it is an unpasteurized sake, it doesn't have a strong alcoholic flavor, but it does have a bitter aftertaste and a tongue-tickling sensation. It may not be suitable for those who don't like the dry taste.

After the decisive battle in Sekigahara, we were allowed to taste the nigorigo (a sweet sake). It was sweeter and tastier than Shirakawa-go, which I had drunk in the past.
