I'm definitely a garlic person when it comes to bonito and I'm going with Matsumori from Ibaraki. It's very refreshing and brings out the flavor of the bonito without interfering with the bonito. I have been enjoying all the sake from Ibaraki lately. Well, I'm a person who likes anything as long as it has alcohol in it... 😇 The fourth picture is shirasu (baby sardine) kakiage. You don't know what shirasu is until you eat it.

Purchased at Nakamura Sake Shop in Toride. The aroma is of a pulpy red type of melon, a bit like a smooth chervil, and the sake lees flavor is not too strong. The taste is heavy, with other elements more noticeable than the smoothness of the raw sake. The alcohol content is 19%, but it is not too strong and punchy. I looked at the production date and found that it was dated 24.11...but it looks like it was released last year. I bought this sake because I wanted to drink a nama-shu, but I guess it was not the right sake for this time of the year when hiyaoroshi sake is distributed. It's normally tasty, but maybe for a cooler time of year. It has a sweetness, but it is not spread out in a mischievous way, and the center of gravity is heavy and cohesive.

Today, my wife and son bought some Hakuryu Nigori👍 at a nearby Aeon. Thanks for telling me that you saw Hakuryu nigori sake with a warning sign on it so you bought it for me ❣️ I've been drinking beer and shochu on the days we don't have sake at home, but it doesn't suit my constitution or something 😅I wake up at least 3 times during the night and rush to the bathroom 🤔❓I'm still not sure if it's the amount of sake I drink or the fact that it's alcoholic or not 🤔❓ Well then, open the bottle: ‼️ The aroma is lactic acid with a hint of alcohol. The taste is also lactic acidic with a strong carbonation 👍It has 18% alcohol by volume so if I finish it, I will get very drunk 🤣. I'd recommend it more as a standalone drink than as a food drink 😆.

A refreshing, light and dry nigori sake. It's been a while since I've had a Shiryu from Niigata, but I get the impression that they make a good value for money Ginjo-shu. Chilled tofu with "leek and ginger", which I got because I was curious about it from Supoyo's post.

A trip to visit a brewery. We went to Kurikoma, the hometown of the person who helped us. We visited our favorite brewery, Senda Sake Brewery in Okutsuru Kurikoma Mt. According to the young master, even weak drinkers can be satisfied, so we bought this one. We will drink it from now on.

Chiyonohana Shiboritate Special Junmai Sake. Aged in ice temperature for 6 months. Aroma: The aroma is high and pleasant, including iso with a milky graininess. The taste is thick and mellow on the tongue, with a strong sweetness and acidity that is characteristic of the Sugihara Sake Brewery at first, followed by a soft sweetness. In the latter half, there is a momentary seme and bitterness, and the bitterness of this bitterness is a taste that accompanies the sweetness of the meal. Overall, the body is a bit heavy and would definitely go well with regional food. It is a quintessential Urazumi taste.

I got a bottle of Senkyu's "Kirifuri" on a business trip to Utsunomiya the other day...fruity aroma, strong acidity and bitterness? It has a fruity aroma, acidity, and a strong bitterness. This is a piece of bread I bought on my way back from a trip to Kirifuri Kogen. I thought it was the perfect name for a souvenir, but I was surprised to find it was made by Senkou 😳. I've been storing it at room temperature for a while now because it's been heat-treated. But I thought it would be better to drink it cold, so I put it in the fridge and drank it. The best thing about this product is that it has the gas and acidity that I like, even if it has been heated.

A bottle given to me by my predecessor, who recently reached retirement age. He said it was a thank-you for the 3 kg of new rice he delivered every year during his tenure, which he called a "taste test. Rice has become sake! The nose has a fruity ginjo aroma, but the fragrance is subdued. The mouthfeel has a gentle, round sweetness and a satisfying umami. The fruity feeling that passes through the nose and the mild acid bitterness that comes at the end disappear slowly and gently. I had an image that Houyo was not my favorite, but this is good!
