This sake was a gift from a junior colleague (son of a liquor store owner). It has been a long time since I've had a classic, THE old man's dry sake. There is a sweetness of rice in the back, and it is refreshing. Not bad. After the sweet and juicy sake, we had a glass of So-no-Sato. Not bad. I've only been at work for a little while after the new year, but the three-day weekend is wearing on me. Sake heals me 😄.

It was a gift from a junior colleague at work. I received it last year and remember that it had quite a punchy 🤜 flavor. It has a faint smell of cemedine, and a somewhat chemical 🧪 atmosphere in the mouth, but it has a nice, clean taste that doesn't interfere with the meal 😊. It's only 3 days old and it's getting sweeter and tastier 🙌 I got it in a bottle, so I'm thinking of trying some heated sake with ✖️ on the back label 🧐.

The rice used is Yamadanishiki. The rice polishing ratio is 35%, is it the flagship sake of the brewery? It has a solid ginjo aroma, and while it is basically light and dry, it also has a mild sweetness. There is little miscellaneous taste and the mouthfeel is good. The aftertaste has a good accent of alcohol and a solid flavor. Overall, it is a good sake with a cohesive taste that makes you realize again that the alcoholic version is better for the Daiginjo class.

Jyuemon" by Toshimaya Shuzo, well-known for Yamori... it's a stone's throw away! Nakadori unfiltered raw sake, fresh and crisp... Hachitan-nishiki has a nice aroma... my favorite fruity flavor... and the mouthfeel... a good bitterness of sweetness and bitterness, followed by the sharpness of Hachitan-nishiki! It does not disappoint! I'm sure many people prefer this to Yamoru... I'm sipping it while grilling oysters... yummy!

Another brand of YAMAMORI Purchased at a supermarket near my house. It is a Hachitan-Nishiki, a specialty of Teshimaya, and the taste is almost the same as Yamori's. The aroma is fruity and melon-like. The base is sweet and delicious, but after drinking it, it may seem drier than Yamori's Hachitan-nishiki. Umai 👍👍 The best match this time was sauteed sea bream with butter. It goes better with something with a strong flavor 😋😋. Yamori is my favorite brand, but I think I even like this one more than Yamori❗❗❗ Next time I buy it, I'd like to open the bottle at the same time as YAMORI and compare them properly 😆😆.

The first Kinokuniya Bunzaemon! It has the fresh aroma of unpasteurized sake and a smooth, non-viscous mouthfeel. When you drink it, the spiciness comes quickly, but in the end, it disappears, leaving the flavor of rice and a lingering aftertaste. Enjoy cheap sushi at Totoro, a popular standing sushi bar under the elevated railway tracks of Himeji Station. Although it is a stand-up style sushi bar, there is always a long line of customers because of the high quality of the food. Since I was there, I asked for a local sake, Yaegaki. It was not sweet, but it was not dry either. It was about medium spicy. I am not talking about curry. I had it cold, but I feel it is all-around good at room temperature or hot. It's great for a kotteri type of stuff.

Our first fall sake is Nara Sake❣️ We will not be having hiyaoroshi sake, but rather a draft sake from over the summer 🙏. It has a matured flavor and fruity taste with a good acidity. This Shinomine is also delicious 😆 and reasonably priced too👍! I hope you all enjoy it too.

The third pink label sake following Takachiyo and Yamamoto Uki Uki is Shinomine Rokumaru (≧∇≦❣️) Since the light nigori version was followed by a clear one, I chose the clear one this time (it has almost the same specs and price as the light nigori version...) This is the first time for me to drink Shinomine made with Akaban Omachi, but it has a slight schwarziness that moderately stimulates the tongue, and the clean sweetness and umami that is typical of Shinomine spreads 🤤. The acidity is pleasant and easy to drink❗️I can't get enough of it🤪. I enjoyed it as a food sake👍

We were at a tasting and sales event at the sake department of "Yoshike" in Okachimachi, and asked "Do you have any nama-shu? I asked them if they had any fresh sake, and they recommended this freshly squeezed raw sake. The label depicts Tokamachi's national treasure, the Kaen-gata Jomon pottery. We paired it with a motsu nabe (hot pot). Speaking of freshly squeezed raw sake in this season, I prefer to drink SNAKEIHARIZURU, but Tenjinbayashi's sake is also very smooth and rich with 20 degrees alcohol by volume, which made me drink a four-pack. It was a dangerous sake 😅. The origin of the sake name "Tenjinbayashi" is a celebratory song in the Uonuma area of Niigata Prefecture, sung at weddings and banquets. A 50% polished Junmai Daiginjo, Meguro Gorosuke, from Tama Flavor in Uonuma City (formerly Morimon Village), Niigata Prefecture. As is typical of Uonuma sake, it is a ginjo-shu that is not overly aromatic. I remember drinking it once at Tatsuya, a yakiton (grilled pork dumpling) restaurant in Numabukuro on the Seibu Shinjuku Line.

Lighter than expected, sour, sweet and ricey. I was worried before drinking it because it had quite a bit of color, but I was relieved to see the explanation on the back label. The Tama Flavor brewery is known for its regular brand, Tama Flavor, which is a light, dry sake that is the king of Uonuma, but they also brew Itkey and 46°C Echigo-Bushi (Samurai), which I recognized once again as a brewery with a very sharp personality.
