A 50% polished Junmai Daiginjo, Meguro Gorosuke, from Tama Flavor in Uonuma City (formerly Morimon Village), Niigata Prefecture. As is typical of Uonuma sake, it is a ginjo-shu that is not overly aromatic. I remember drinking it once at Tatsuya, a yakiton (grilled pork dumpling) restaurant in Numabukuro on the Seibu Shinjuku Line.

Lighter than expected, sour, sweet and ricey. I was worried before drinking it because it had quite a bit of color, but I was relieved to see the explanation on the back label. The Tama Flavor brewery is known for its regular brand, Tama Flavor, which is a light, dry sake that is the king of Uonuma, but they also brew Itkey and 46°C Echigo-Bushi (Samurai), which I recognized once again as a brewery with a very sharp personality.

I drink at a restaurant where young people seem to congregate. The owner, who says he is a big fan of Koyama Shoten, introduces us to some Koyama Shoten originals. Next to Tamitsu is Naotora. One of the sake I wanted to try because of the stylish label❗️ A hint of pear? White peach? Newly registered brand. Since the sake brewer could not be registered, the new brand is "Aizu Otokoyama" from Otokoyama Shuzo Brewery in Aizu Misato Town, Fukushima Prefecture. Its new brand name is "Wa". It has a mild aroma. It has a melon aroma and a hint of sweetness like caramel. The sweetness that is not too strong is impressive. There is some acidity. I was curious about this sake because Mr. Manachie was drinking it. Purchased at an antenna store in Fukushima Prefecture. Enjoy cheap sushi at Totoro, a popular standing sushi bar under the elevated railway tracks of Himeji Station. Although it is a stand-up style sushi bar, there is always a long line of customers because of the high quality of the food. Since I was there, I asked for a local sake, Yaegaki. It was not sweet, but it was not dry either. It was about medium spicy. I am not talking about curry. I had it cold, but I feel it is all-around good at room temperature or hot. It's great for a kotteri type of stuff.
