My first time at Hanaizumi. And nigori sake! This season, there are a variety of nigori sake, which is very enjoyable. First, the top clear sake. It is moderately sour. After stirring it, it becomes more rounded. The texture is silky (is that the right word?). The glutinous rice is not perceived, though I like rice cakes. I like rice cakes, but I think it's dry. I want to eat Karami rice cake.

Hanaizumi Jungin Akkatsu Nigorizake 2023BY ✨✨✨✨ It was active, but since it had been absent for a while, it was easy to open the bottle. As usual, we will drink only the top clearings first. It's a bit of lactic acidity, a bit gassy on the tongue, and a nice dry finish 😋😋😋😋😋 After mixing the lees, it's a round adult calpis soda🥤 and it doesn't stop there. This sake was a gift from a junior colleague (son of a liquor store owner). It has been a long time since I've had a classic, THE old man's dry sake. There is a sweetness of rice in the back, and it is refreshing. Not bad. After the sweet and juicy sake, we had a glass of So-no-Sato. Not bad. I've only been at work for a little while after the new year, but the three-day weekend is wearing on me. Sake heals me 😄.

It was a gift from a junior colleague at work. I received it last year and remember that it had quite a punchy 🤜 flavor. It has a faint smell of cemedine, and a somewhat chemical 🧪 atmosphere in the mouth, but it has a nice, clean taste that doesn't interfere with the meal 😊. It's only 3 days old and it's getting sweeter and tastier 🙌 I got it in a bottle, so I'm thinking of trying some heated sake with ✖️ on the back label 🧐.

The rice used is Yamadanishiki. The rice polishing ratio is 35%, is it the flagship sake of the brewery? It has a solid ginjo aroma, and while it is basically light and dry, it also has a mild sweetness. There is little miscellaneous taste and the mouthfeel is good. The aftertaste has a good accent of alcohol and a solid flavor. Overall, it is a good sake with a cohesive taste that makes you realize again that the alcoholic version is better for the Daiginjo class.

The second glass was Hiwada, a pure rice with a fresh herbal base, Autumn up. Hiwada is a brand new to me. It is a bit more umami than Onumaya, with a rich flavor. But it has a dry, swishy feel. (Laughs) Goes well with sashimi. Oh, man, I can drink it so easily. Hey, Miyagi sake is delicious! Our business partner was also excited. (Laughs) It was very delicious! (^O^)

This Sake is very interesting. It has a citrus flavor like grapefruit. The flavor really cleanses the pallet.

Junmai nama-shu YAMADANISHIKI 90 Rice polishing ratio 90%❗️ This is the challenge sake of Michiko Urasato, the female toji of Yui. Yamada Nishiki is brewed at 90% polishing ratio without polishing. The taste of the rice is rich and intense❗️, but there is a light fizzy feeling. There is also a little bit of orage mixed in. This is why it is milder and softer in the mouth than I expected. The aftertaste is refreshing. It's amazing. Michiko Urasato, Toji 💡. I had it with ginger yaki, and it was delicious. The sake and side dishes go well together😆. I've heard that if you let it sit for a few days, you'll get a different taste of the rice, so I stopped at halfway today. I heard it's also good at different temperatures.

One of the sake I wanted to try because of the stylish label❗️ A hint of pear? White peach? It smells like pear or white peach 😅 Elegant sweetness and almost no sourness ❗️ No bitterness or habits, and the aftertaste seems to disappear easily 😄. Overall, it's a gentle sake that goes well with meals. It's a delicious sake that can be drunk easily on its own 👍 Even sake beginners can enjoy it 😄.

Newly registered brand. Since the sake brewer could not be registered, the new brand is "Aizu Otokoyama" from Otokoyama Shuzo Brewery in Aizu Misato Town, Fukushima Prefecture. Its new brand name is "Wa". It has a mild aroma. It has a melon aroma and a hint of sweetness like caramel. The sweetness that is not too strong is impressive. There is some acidity. The aftertaste is strong alcohol. A strong bitterness also lingers. I have a feeling that it will be excellent with Japanese food.
