I bought it in Kumamoto during my Shikoku - Kyushu - Kinki trip last year. It was a brand I wanted to try at least once, and I was so happy that I let it sit for more than a year. When I opened the bottle and poured it, it smelled like honey and custard. The mouthfeel is moist and sweet. It has a savory, caramel-like flavor and a balance of sweet and sour astringency. It is so delicious that you can't help but smile! The full-bodied sweetness and bitter astringency in the aftertaste. The taste is not too strong, but has a high level of quality, and is very similar to a pudding! I will never forget the delicious sake, ramen and Kumamoto Castle, even if it was only for a short time. I hope to visit again someday👍.

The most expensive sake in the local bar I went into. This is certainly a good drink. It has an accent, but it's not too strong and seems to go well with everything. It is a strong drink, even if you can read "Yusura" in the name. The sashimi and octopus were as light and tasty as potato chips.

Another bottle I bought at Hasegawa-san in Tokyo station. The first time for Otokoyama-san in Yamagata This is also the original label of Hasegawa-san. The rice used is Miyamanishiki, so it's the same as "Junmai-shu Gold Label". Anyway, it was a delicious sake with a lot of fullness. The sharpness isn't bad either, and it's perfect as a sake for a meal. I thought it was good for everyday drinking. That's about all I can say for a 1-gallon bottle...

GW in Kanazawa! At the Kanazawa Sake Brewery in Kanazawa Station, we came across a dream machine that allowed us to sample sake for 100 or 300 yen (P.S.) Naturally, we took the challenge. The description said it was dry, but I prefer raw sake, so I chose this one. I tasted it thinking it might be a fruity type, but it was a clear dry sake that would go well with sashimi and other dishes. I appreciate free tastings, but I feel somewhat guilty about it, so this kind of reasonably priced tasting is very helpful and encourages me to try different kinds. I tasted three other types of sake here, and all of them seemed dry to me. I have an image that Ishikawa's sake is basically dry.

Tasted here also at Hankyu Department Store. Junmai Ginjo-shu made with Kuzuryu. It is a refreshingly dry sake, but has a sweet and fruity taste. This time I bought a bottle of unfiltered raw sake made with Jinryoku.

Tasted at Umeda Hankyu Department Store. The rice was said to be Gohyakumangoku. The quality of the sake is clean and refreshing for hiyaoroshi. It is easy to drink without a sense of maturity. As the person in charge said, it is a quiet type of sake, so I think it is suitable for a mealtime drink.

It looks like all of them use locally grown rice, as did the two types of Kitanosho I posted the other day. It seems that only Ryu-ryoku and Koko use Jinryoku all the time. I'm sure there are other places like Okura that use it for single use. When I tasted it, my impression was that it was quite sweet and the second half was heavy, but it was smoky and the flavor of the rice came through with a bang. It has a strong bitterness at the end. It is not the type of sake I would drink on its own, so I will have to wait and see. I don't think it should be chilled too much. If you like Shimane or Tottori area sake, this would be good for you. I think it has a quality of sake that would not be affected by letting it sit for a while. There are glimpses of sweetness and a fruity atmosphere, but I wonder if it's basically more of a classic. The sweetness is just a hint and goes well with eel. I was curious about the sake brewery that has the same name as Okinawa "Reimei", but I see they are related. It is interesting to see how many things are connected in this industry.

I got this on a trip to Nagasaki last year. I will have it while thinking back to the delicious Turkish rice and Sara Udon noodles 🤤. When you open the bottle and pour it, the aroma is sweet and fluffy, like pudding or custard. The aroma is gentle and soothing. The mouthfeel is smooth and silky, but as the aroma suggests, it has a pudding-like flavor and a moist sweetness that fills the mouth 🍮. On the other hand, it also has a slightly tangy and pungent acidity that gives it a lightness, so it has a good balance of depth of flavor and a sharpness that goes down your throat👍. In the latter half of the bottle, the astringent taste also comes out, so the flavor can be felt as caramelized. There are also the standard "Yokoyama Goju" and "Rokujyosu", and I remember that I had a lot of trouble finding a variety at the Nagasaki airport. I also drank Nagasaki sake several times, and it seems to me that the level of sake is as high as that of shochu 😌.
