Purchased at a sake shop in Tsu City Station, where the brewer himself took us on the way back from the Mie Sake Event. It is a rare sake with a very small production. We will drink it cold. When I looked closely, I noticed something floating around in the bottle, probably the lees of amino acid clumps. The color is clear and dark golden, like amber. The top aroma is mushrooms, humus, and a slight roasted, aged aroma derived from malted rice. On the palate, the aroma on the nose is complex, with an axial strength that is typical of the original sake and a sense of nostalgic old, withered sake, with a mild acidity that would have been sharp without the sweetness, and a slight astringency and a slight umami taste. After swallowing, there is a skittish spiciness, and the sense of maturity is gone, which is a strange sensation. When I heated it up, it went from amino acid sweetness and mellow umami to a sharp dry aftertaste. This is a sake for connoisseurs. I learned a lot from it. 1948 2025/10 Yumemado Tokubetsu Junmai Nama-nazake 60% 17° 25/8 A+ Matsuzaka City, Mie 720 1776 This sake is a pure sake that has been aged for a long time. The aroma is mild on the palate, and the flavor is somewhat nostalgic, but with a robust taste and a bit of character behind it. It was my first time drinking this sake, but I got the impression that it was a simple but very tasty sake I used to drink in the past. When heated up, the flavor became more mellow and different from that of cold sake. While everyone is trying to be modern and end up with the same old thing, this is a sake that is safe to drink and tastes like the old-fashioned way, I am thankful for the old-fashioned sake that I can drink with peace of mind. Although the type of sake is a little different, I felt happy to have found a new sake in the same Mie region as Miyamasugi, which I can no longer drink.

I'm opening another bottle today😍. My first Miyazaki sake. Everyone says Miyazaki is hard to get, so I popped in 🤣 I ordered it with Jidori Koko 👍. It's a bit sweet, but not too sweet. It has a modern umami taste, similar to a brand I've had before like Tsushima-ya 😋 It's quite refreshing and the sharpness disappears quickly 😋 It seems to be the only brewery in Miyazaki that specializes in sake 😋 It's delicious - thanks for making sake 😂.

I bought it by weight the day after the Hankai Train Off-line Meeting. I took this opportunity to buy it because Miyakotsuru's draft sake is rarely distributed. This is an annex of a store in Fushimi that sells all of Fushimi's sake in Nihonbashi, Osaka. I wonder if the sake brewers' association is involved? The bottles come in various sizes and labels, and you buy the bottle you want and pour it. You pour the sake yourself, but since I was right on the 300 ml mark, I received a sake cup as a "Pitari" prize. The taste is melon-like with a clean mouthfeel. The long, thin and extended acidity is impressive. It is a little light and has a sweet and spicy flavor. After about a week, the flavor seems to have opened up, or rather, the flavor profile has become more defined.
