The one I bought at the Kisegawa venue of the Shiga brewery opening event. It has a strong alcohol taste with a lot of gusto. It has a strong sweetness and umami of rice. It is better at room temperature, but it is also good on the rocks or with soda. After a week, it still has a strong alcoholic taste, but I think the sweetness has increased.

There is no mention of it, but it is probably nama sake. It is not labeled as Nama-shu, but according to the information on the Internet, the label on the back of the bottle says it needs to be kept chilled, which means it is Nama-shu. Am I right? The rice is Ginbukiyo and Nihonbare. It also looks like a raw sake. It does not feel as spicy as the sake level, and although it is spicy, there is a good balance of sweet and spicy. Yamatsuru is the closest sake brewery to my house, but I haven't had much of it lately. The last time I drank it I got the impression that it was peculiar and not really my cup of tea, but not this Junmai Daiginjo! Clear and fruity, good balance of flavors. It's also gorgeous😋. The price is reasonable for a Junmai Daiginjo, but I think it's worth it🧐 I can't underestimate local sake 😚

Low-polished Junmai-shu from Yamatsuru, a local sake brewery in Ikoma, Nara. The name is Choyao. It was a gift, but it looks like it will cost a fortune💧. I heard it was brewed using a method described in a wooden letter from the Nara period. I wonder if it is true. Anyway, let's try it. Wow! It is indeed as rich and sweet as I had heard! The sake level is a whopping -40❗️ But the aftertaste is refreshing. Surprisingly easy to drink and delicious 😋. It's pretty good 👍I'll have to try this one too 😙. But I wonder if people in the Nara period really enjoyed this kind of sake 🤔.

A 50% polished Junmai Daiginjo, Meguro Gorosuke, from Tama Flavor in Uonuma City (formerly Morimon Village), Niigata Prefecture. The brewery is more impressive for its shochu Ginza no Suzume than for its sake. Tasted and purchased. It has a gorgeous aroma and is fruity even when drunk. 1801 yeast is used, making it a sweet and fruity sake that is easy to understand. I wish they would release a fresh sake of this one. I felt it was sweeter and fruity at room temperature than when it was chilled to the perfect temperature.
