Kumamoto's local sake, Sanzanmura Slightly sweet ginjo aroma A light, sweet mouthfeel with a soft acidity. Sake brewed with sake rice grown by a pesticide-free method called "Koi Farming" in Sanzan Village! Using the carp farming method, carp are released into the rice paddies 🌾🌾 to get rid of pests. A few years ago, I drank Manbo from Kumamoto Kameman Shuzo, which was a sake made using the duck farming method🦆! There are many people in Kumamoto who practice natural farming methods 🫶.

Purchased because of the 60% milled rice ratio and 20 alcohol by volume. I wanted to drink it on the rocks on the day the rainy season ended, so I opened the bottle. ☀️ I paired it with frozen Genghis Khan that I brought back from Tono. It's well separated, so I shook it lightly before putting it in ice 🧊. It's less lactic than I thought it would be, and it's very spicy and thick, but it's cold and refreshing and delicious 🤤. Since it's spring🌸, I think I'll have another bottle of sake with spring in it. I bought a bottle of Shunshin by Nishide Sake Brewery in Komatsu City, Ishikawa Prefecture. I've been curious about this sake for a while but never got around to it. I will have it with boiled flounder 🙏. I thought it might be a bit strong, but it wasn't. It has a nice richness, sweetness, acidity, and a mellow feeling 😆. It's a bit like a lighter version of Tamagawa. As the label says, I preferred it at room temperature rather than chilled 👍

I saw it for the first time at a department store tasting sale, so I bought it. It's not listed on the label, but according to the brewer's description, it's unfiltered undiluted sake. It says "light nigori" but it's not cloudy at all (laughs). It's refreshing and easy to drink. The acidity in the second half is impressive.
