I'm opening another bottle today😍. My first Miyazaki sake. Everyone says Miyazaki is hard to get, so I popped in 🤣 I ordered it with Jidori Koko 👍. It's a bit sweet, but not too sweet. It has a modern umami taste, similar to a brand I've had before like Tsushima-ya 😋 It's quite refreshing and the sharpness disappears quickly 😋 It seems to be the only brewery in Miyazaki that specializes in sake 😋 It's delicious - thanks for making sake 😂.

Refreshing drink with little lingering aftertaste. 😋 A lightly flavored umami type, or perhaps an 🏠. Not much umami or bitterness lingering on the tongue. Easy to drink but needs one more punch😅. Since it's spring🌸, I think I'll have another bottle of sake with spring in it. I bought a bottle of Shunshin by Nishide Sake Brewery in Komatsu City, Ishikawa Prefecture. I've been curious about this sake for a while but never got around to it. I will have it with boiled flounder 🙏. I thought it might be a bit strong, but it wasn't. It has a nice richness, sweetness, acidity, and a mellow feeling 😆. It's a bit like a lighter version of Tamagawa. As the label says, I preferred it at room temperature rather than chilled 👍
