Second souvenir from KazKaz. It is a brand name planned and sold by 7 sake stores in Aomori. Rice used is 100% Hanasoui. The top-tasting aroma is a calm ginjo aroma. The mouthfeel is slightly sweet with a strong umami flavor. The aftertaste is reminiscent of classical sake, and is quickly cut by a refreshing acidity and bitterness. Another bottle bought at a supermarket in Kawagoe. I also bought a bottle that was not hiyaoroshi. After storing it in the fridge, I took a sip. The aroma is mild. First up was a local sake from Echigo-Yuzawa, a gem bearing the name of the first head of the Shirataki Sake Brewery. The aroma is gorgeous, and in the mouth you can taste the acidity and umami, with a slight lingering alcohol taste. It leaves a slightly bitter or rough feeling in the back of the throat. The Shirotaki Shuzo is known for its Kouzen Nyosui, which has a fuller aroma and taste compared to the Kouzen Nyosui. The bottle was also unusual, with an innovative volume of 630 ml. This is the first brand I've seen and the taste is great. ‼️

GW in Kanazawa! At the Kanazawa Sake Brewery in Kanazawa Station, we came across a dream machine that allowed us to sample sake for 100 or 300 yen (P.S.) Naturally, we took the challenge. The description said it was dry, but I prefer raw sake, so I chose this one. I tasted it thinking it might be a fruity type, but it was a clear dry sake that would go well with sashimi and other dishes. I appreciate free tastings, but I feel somewhat guilty about it, so this kind of reasonably priced tasting is very helpful and encourages me to try different kinds. I tasted three other types of sake here, and all of them seemed dry to me. I have an image that Ishikawa's sake is basically dry.

I drank Choseomai at KITTE the other day, but this is my first time at Notoji. I didn't know there was a variety of rice called Chosei Mai😅 I thought it was a brand name like Niida rice. I heard that the rice grown in the Chousei area of Chiba is also called Chousei rice, which is a bit confusing 🙄. It has a golden color. Or maybe a little light brown😅. Smells like Shaoxing wine. It smells like aged sake, but it tastes beautiful and a little sweet. Better than the Chousei Mai I had the other day 😋. It's a bit of a mystery how it's aged so well even though it doesn't say it's an aged sake on the official website or on the liquor store's website 🤔.

Drinking with my wife on our wedding anniversary last week, when we visited Tsushima Tsuru at the Metropolitan Morioka New Wing (laughs). Next up was a Hiyoroshi (Hiyori) Junmai Harazake by Drunken Sen. It's a refreshingly dry sake. The description says to enjoy the mellow flavor, but that's just my personal opinion... (^_^;) Good with sashimi! It was delicious! (^○^)

I tried three types of draft sake at a tasting and sale of Drunken Sen in Hankyu. I couldn't find a picture of the first one I drank, the Honjozo Nama, even though I searched for it. I couldn't find a picture of the first one I drank, but I guess it was because it wasn't winter time and there was no snow. I was told that this was a matured nama sake. It was delicious, with a beautiful, round taste. I had a hard time deciding which one to buy, but the last one I tasted was a fruity special junmai, so I went for that one.

Tasted and purchased at Umeda Hankyu. Sake from the Drunken Sake Brewery. It seems to be a terroir-like sake. It is delicious with a little bit of gasiness and both fruity and rice flavor. Once the gas disappears, the fruity taste disappears and the umami flavor takes center stage. I don't feel much spiciness. I wasn't sure whether to register it as Tagata, but the cap was Drunken Sen, so I registered it as Drunken Sen.

Tonight's sake is a Shiraito Brewer's Nigori sake from the famous Shiraito Shuzo, which I had the pleasure of meeting at the brewery during my trip to Fukuoka in late May. When we visited the brewery, the proprietress and her little son were very attentive to us, and we were very grateful for the free tasting, which they usually don't do 😊 We bought a bottle of one of our favorites, so we're going to open it now 🙌! The rice polishing ratio is not stated, but I think it is more than 70% polished. The aroma has a soft lactic acid nuance that is not typical of sake. The taste is easy to drink with a slight sweetness of rice in the supernatant and umami flavor 😋 It becomes completely cloudy when mixed with a significant amount of lees, but it has a smooth mouthfeel and is more delicious 😋😋😋😋😋.

Tonight, I feel like I've been shvitzing at the gym for two days, but drinking this is a negative rebound, but when it comes to horse mackerel and monkfish sashimi, it's a MUST 🍶. Unlike Tanaka Rokujugo, this sake seems to be distributed within the prefecture, but it is a 100% Yamadanishiki Junmai sake from Itoshima, and when I tasted it, I enjoyed this lowest-purity sake 😋. The sake has a very clear and clean structure, with a hint of sourness from the ginjo aroma of the cucumber, and the rice is sweet and full. The finish is very crisp and very excellent. ☺️ It is best when it returns to room temperature from chilled. ⭕️

The sake is brewed by "Toroki Shouten", a sake brewer who was involved in growing the rice and brewing it together with Wakatakeya Sake Brewery. I got it as a sign of support 😊 Is it what's called a light, dry taste? It had a faintly sweet aroma, but the sip was refreshingly watery! The flavor and bitterness come out on the palate. I was drinking it with cream cheese as an entrée, but it doesn't get in the way, so it's probably just right for a mid-meal drink 😊.
