At home. Sake tasting party with friends after a long time. We brought our own sake. First up was a local sake from Echigo-Yuzawa, a gem bearing the name of the first head of the Shirataki Sake Brewery. The aroma is gorgeous, and in the mouth you can taste the acidity and umami, with a slight lingering alcohol taste. It leaves a slightly bitter or rough feeling in the back of the throat. The Shirotaki Shuzo is known for its Kouzen Nyosui, which has a fuller aroma and taste compared to the Kouzen Nyosui. The bottle was also unusual, with an innovative volume of 630 ml. This is the first brand I've seen and the taste is great. ‼️

Tonight's sake is a Shiraito Brewer's Nigori sake from the famous Shiraito Shuzo, which I had the pleasure of meeting at the brewery during my trip to Fukuoka in late May. When we visited the brewery, the proprietress and her little son were very attentive to us, and we were very grateful for the free tasting, which they usually don't do 😊 We bought a bottle of one of our favorites, so we're going to open it now 🙌! The rice polishing ratio is not stated, but I think it is more than 70% polished. The aroma has a soft lactic acid nuance that is not typical of sake. The taste is easy to drink with a slight sweetness of rice in the supernatant and umami flavor 😋 It becomes completely cloudy when mixed with a significant amount of lees, but it has a smooth mouthfeel and is more delicious 😋😋😋😋😋.

Tonight, I feel like I've been shvitzing at the gym for two days, but drinking this is a negative rebound, but when it comes to horse mackerel and monkfish sashimi, it's a MUST 🍶. I bought this 💁 at a brewery when I was in Fukuoka. It's Shiraito Sillite 70 ✨. Unlike Tanaka Rokujugo, this sake seems to be distributed within the prefecture, but it is a 100% Yamadanishiki Junmai sake from Itoshima, and when I tasted it, I enjoyed this lowest-purity sake 😋. The sake has a very clear and clean structure, with a hint of sourness from the ginjo aroma of the cucumber, and the rice is sweet and full. The finish is very crisp and very excellent. ☺️ It is best when it returns to room temperature from chilled. ⭕️

The sake is brewed by "Toroki Shouten", a sake brewer who was involved in growing the rice and brewing it together with Wakatakeya Sake Brewery. I got it as a sign of support 😊 Is it what's called a light, dry taste? It had a faintly sweet aroma, but the sip was refreshingly watery! The flavor and bitterness come out on the palate. I was drinking it with cream cheese as an entrée, but it doesn't get in the way, so it's probably just right for a mid-meal drink 😊.

Among all the nigoris I've ever had, this is definitely the best, It is definitely the best nigori I have ever had 😋😋😋😋😋😋. It's a heaven of sludge and shuwa shuwa 😂😂. It is that time of year again! This year's Mr. Summer Time was a grand presentation event, inviting circus members to the Kanmei Sake Brewery for a mini-concert of sorts. I couldn't go, though. The aroma of this year's product is a little subdued. I like that mewashi aroma, though. The mouthfeel is strong and dark, and the harmony of umami and sweetness is wonderful! It is a departure from the low-alcohol, light summer sake style, and is more like a munchy, dirty summer night. Despite the strong flavor, the sharpness of the sake is very refreshing, so it is easy to drink. Of all the summer liquors, this one is my favorite. Thank you very much for your kindness!

Summer sake from my favorite brewery, Kanbai! I'll have to drink it! The Kamidachi aroma is a fruity ginjo aroma, but it's moist and calm, very nice! The aroma of Kanbai's sake is so nice! There is clearly more lees than the previous Yamadanishiki. When you take the supernatant first, the taste opens up from the beginning, with a thick umami and sweetness spreading. The Yamadanishiki Junmai Ginjo reached this state at room temperature, but this one's flavor comes through even at low temperatures. When the lees are stirred, a crisp acidity is added and the aftertaste becomes clear. The full-bodied aroma comes out of the nose, and the taste becomes highly complete at once. This one is also insanely delicious! I've been drinking a lot of Omachi sake lately, and I wonder if this complex and thick sweet flavor is a characteristic of Omachi.

Yamadanishiki ver. Compared to Omachi's lees sake, it is slightly more lees and has a 1% lower alcohol content (17%). The bottle size is also changed from 500ml for Omachi to No. 4. The aroma is like rice itself and rice malt. The pure sweetness that is typical of Yamadanishiki passes through the nostrils with a slightly thick texture, and there is a slight bitterness that seeps into the tongue. A slight bitterness seeps into the tongue and a tangy sourness on the tip of the tongue. The taste that spreads in multiple directions in the mouth is like a rocket firework. Corner shop at the mysterious cheese shop (2) Since the corner drinking at this restaurant is self-serve, we discovered an unopened bottle of Moridori when searching the refrigerator! I entrusted it to Mr. Nemuchi, a professional corker 😁. I drank a lot of dry sake at an off-line meeting the other day and I'm in the mode that I can drink some dry sake, right? Purchased at a liquor store specializing in Hyogo sake with mofu. There were many people drinking sake in the store and the atmosphere was bizarre. When I asked the store staff if it was an event, he told me that they were people who had come from Ozeki's brewery open at a nearby store. The smell of squid filled the air, and the waiter said he was sorry for the smell 🤣. This sake is brewed with salvia yeast collected by students at an agricultural high school. It is slightly effervescent and has a unique flavor. Sweet but cosmetic like no other aroma. A little nutty in the second half. I thought it was a little peculiar. After 3 days, a little bit of rum raisin taste. Definitely tastier than freshly opened 😋.

The rice used is Comet from Hokkaido. You can't ignore the sake made with Hokkaido rice, can you? It has a clear and refreshing taste typical of Comet. It has a gentle acidity and a good sharpness, so you can drink it easily. It is well-balanced with a good taste of rice. I️ think it's a versatile sake that can be used in any situation. I have drunk Tenyurin many times, but I'm not sure if this is a good idea or not.
