Another one this time. It is Takatsugawa by Fusozuru. It is from Shimane Prefecture. I saw Hiraccio-san drinking it and longed for it 🙌. First at room temperature. The color is a solid yellow. The aroma is mildly savory with a hint of maturity. It smells like caramel, soy sauce, and cream cheese. The mouthfeel is gentle. The palate is drowned in the complex flavor of aged rice with a moderate acidity. When heated up, it becomes smoother and more balanced, and you can just keep on drinking it. It has a relaxing and soothing taste. When tasted with a thick Shigaraki-ware sake cup, the warmth of the clay makes it taste even better. The warmth of the clay makes it even softer and happier 💕. Aizu girl and the Takatsu River I will relax my body and soul in the late winter. What a good evening drink 😊.

I wanted to drink warmed sake, so I ordered a bottle of Akizuka. Natural sake made with Yamadanishiki grown organically without pesticides in our own rice paddies. Milky and warm! The bottle was left for a few weeks after opening, so it has a nice flavor. The rich and flavorful taste is perfect with Sumagatsuo sashimi! This is the sixth brewery in the Saku Sake Brewery series. Located in a historic town along the old Nakasendo road, this is a place I would like to visit again. The taste is very strong as it is called "mellow" sake. It is 18% alcohol by volume. It has a bitter taste on the tip of the tongue, followed by a sweet sake-like flavor. I heard that there is a way to enjoy it by aging it after buying it. Next time I'll let it mature a bit and try it with mizutaki in winter 😋.

National Sake Fair 2025 part74 Nagano (1) I lost everyone when I came back from the restroom, so I acted alone until the end. From here on, I'm going to drink only the brands I'm interested in with pinpoint accuracy. Takeju Honke Sake Brewery in Saku City I've been curious about this sake brewery for a while. They also produce a sake called "doburoku" which is written as "126" and I've never seen it before💦. I've seen Gyoenchiku at Yodobashi before, but it was an expensive one. Polishing ratio 70%, Miyamanishiki 18%, Sake degree -9, Acidity 2.0 1,700 yen (price at the venue) Aged at room temperature for more than half a year. It is matured, but it is delicious with a strong umami flavor. The label says it will be better if it is left at room temperature for a few more months, but I think this is about right for me. It seems to have won a gold medal at the Wineglass Delicious Sake Awards 2022!

Norikazu Shigeta Toji 18 Makimizu Junmai Daiginjo Competition standard 35% Yamadanishiki, pear-like aroma. Slight sweetness. After the first sip, it becomes numb, then gradually acidic. Very beautiful taste. 19: 35% Yamadanishiki, the standard for Daiginjo-shu entered in the Misonotake Daiginjyo Competition. Slightly lemony aroma. Refreshing and delicious. The third and last of the SAKE country tourism achievement prizes. Sake brewery stamp rally in Nagano Prefecture. A wonderful plan whereby those who complete all the breweries receive 6 bottles from 3 random breweries. Thank you. Also, as a brewery tour enthusiast, it is a very useful tool as an excuse to break into breweries that do not sell their sake at retail. Also, there are many breweries that do not have a store, so I think I have gained some courage. There are prizes even for 10 stamps, so if you are planning to visit Nagano, please give it a try.

Usual brand name is Kaisen I have bought 3㌥ of Kasen at Yodobashi in the past I also remember drinking Daiginjo when we went out for a drink. Polishing ratio 55%, Gin-Gin-Ga 16 degrees, Sake degree ±0 to +2 Acidity 1.6-1.8, 1650 yen It is rich, full-bodied, and very drinkable. I also felt a little graininess. 100% Chiba rice Polishing ratio 60 Alcohol 17%. Date of production: June 25 First Chiba sake: ☺️ This is a super new sake that was just made yesterday✨. The first taste is koji, followed by sweetness and a lingering alcohol taste, which I personally experienced for the first time. I visited the brewery and the proprietress was very nice and let me try some tasting and I had a good time shopping 😉. It goes great with the local sesame pickles 😘. I didn't put it on the picture, but the fresh pickled pepper they were selling is also very tasty...!

Yesterday, I went to my favorite izakaya "我" ♡♡♡. I drank a variety of drinks in the all-you-can-drink 1 hour 1500 yen (*^^*) It was crowded, so I couldn't order at a high pitch, so I could only drink 9 kinds out of the 20 or so available...(-_-...) The 6th drink was "Miho". Oroku" and "Gassan" are the most famous sake from Shimane, so I haven't had many of the others. It has a strong sense of rice, but it's not mellow or fruity. I'm sure you'll love it. *I love it!

GW 4 days 3 nights with wife, 1,500km round trip🤣 We went on a Sanriku car trip 🙂. We stayed one night near Sendai and went to Sanriku. We had an ume (sea urchin) lunch box at Kuji station, and spent the second night in Miyako. Miyako's sake brewery, Hishiya Sake Brewery, Senryo Otokoyama. Seafood Cuisine at Murekou, a long-established bar that has been in business for over 45 years. Today we had fresh and delicious seafood dinner at Today, the restaurant was run by a pleasant elderly couple, who were basically just a customer with a reservation, but they were happy to help us at the counter.

Located by the sea, this brewery was damaged by the Tohoku earthquake and resumed sake brewing relatively early with support from all over Japan, and has made a solid comeback. ◉Senryo Otokoyama Junmai Sake A clear sake with a nice acidity and umami that finishes off the taste. The sake is clear, but the acidity and umami give it a nice, robust flavor. Fukurai is proud to have inherited the skills of Katsutoshi Tsujimura, a master brewer who was selected as a "Modern Master Craftsman". Mr. Tsujimura was originally the second toji at Nishida Sake Brewery, which produces "Tasake" (rice wine). He became involved in sake brewing at Hishiya Sake Brewery in the fall of 2005, and the brewery is now run by the brewery's successor.
