Shoninzawa spring water, one of the best 100 waters in Japan, is used as the brewing water.
It is a junmai daiginjo brewed through long-term low-temperature fermentation and has a mild flavor and sweetness.
About 10 years ago, I once walked to the source of the Shoninzawa Spring and was healed by the beautiful water, moss, and chirping of wild birds.
The description says apple flower yeast "deep apple taste and aroma". If you ask me ... I found it to be a baked apple in the distance 🤔, a hint of grain aroma, and a full-bodied, savory sweet flavor that reminds me of cotton candy 😌.

The day after the Tochigi citizens' meeting, we visited Morito Shuzo 😁.
I walked into the store and saw a lineup of Juichi-Masamune. There were several types of sake limited to the brewery, but since it was a good opportunity, I chose the sake called "Tochigi Yumesasara all-purpose sake". If you are going to buy sake in Tochigi, you should buy sake made with Tochigi rice 😉.

It tastes like cheap regular sake, but after a while it becomes sweet and refreshing. Surprisingly, there is no sourness.
It's really delicious, my type of sake, gorgeous, yet refreshing and crisp, and you can feel the freshness and taste of the water.

The taste is medium. The taste is medium, just as the motto says: "(1) Not too sweet, (2) Not too spicy, (3) Not too dry, (4) A good sake that you never get tired of drinking. Sakura yeast collected by the laboratory of the University of Agriculture is used.
The rice used is "Tochigi Sake 14" and "Nihonbare".
This may be the first time to use rice called "Tochigi Sake 14.
It is sweet and mellow. It is sweet but has a sharpness. The sake tastes like old times. Somewhat nostalgic. I don't know if it tastes like Sakura yeast.
It seems to be treated as a regular sake, but considering the price, I think it is a bargain.
