No aroma.
It is said to be quite dry...but I don't feel it much because it tastes like rice.
It's refreshing and doesn't linger.
Very good as a food sake.
I would like to put it in my mouth in the order of side dishes, then rice, and finally pour it down with this....
The calories are too much...
Toraya was founded in the early 1700s by Onuma Sozaemon I. He took over the Ishiyama warehouse founded at the end of the Genroku era (1688-1704) and operated it as the Sagae factory. This Sagae warehouse was spun off into an independent branch in 1922 and became the current "Chiyozu Toraya Co.
The staff at the Yamagata booth was so good at making recommendations that I drank several different kinds💦.
This sake is an original brand of junmai daiginjo-shu brewed by Yamagata Prefecture and the prefecture's sake brewers' association, which aims to produce the best sake in Japan by selecting excellent snow goddesses and breweries through an annual contest.
We compared this year's three bottles.
It is very clean and watery, but the umami flavor is also very strong!

The low acidity is said to be described as "light" with a smooth and refreshing taste.
The land is blessed with good quality rice and water, and we are thankful and proud of it. The sake is a classic (I think), but it is a delicious sake with class, elegance, and dignity (*^^*). Sagae City (also famous for sagae and cherries) is home to the famous Jionji Temple, which has been designated a national historic site. Yamagata and Kotobukoraya are the best - thank you m(__)m
