This is the first time I've bought bamboo island since the new system was put in place. According to the official website of the Japan Famous Sake Association, the rice is Nihonbare and Yamadanishiki. The lees are submerged and when mixed, it is slightly effervescent and petite. Slightly sweet and bitter. I wonder if it is better to drink it while it has gas? Once the gas is gone, the bitterness will make it hard to drink 🤔. I wonder if it would be sweeter to drink the alcohol by itself?

OSAKA-JO SAKE SQUARE 2023 It is a very crisp, dry, deep-flavored Ajiginjo. The aroma is subtle. The mellowness is more apparent in junmai sake. This is also a good sake. I drank 8 glasses this time and they were all good! There are so many good sake that I can't keep up with them all! It's a happy scream!

At home. I️ watched the hot battle for the high school baseball autumn season Kinki tournament at the Wakayama Kimiidera stadium. On the way home, I️ bought my first "Imanishiki" at Sakeya Kagimoto in Wakayama City. I️ bought Nagano Prefecture's sake in Wakayama Prefecture⁉️. And today, I opened the bottle. It has a gorgeous aroma, a smooth mouthfeel, sweetness, umami, and a bit of acidity. It has a fruity feeling in the nose. It is not too sweet and has a moderate dry taste. My favorite team lost, and I was feeling hopeless about the Koshien tournament, so I thought I would be a little burned out, but it was very tasty and comforting. I knew it was Nagano sake, and there is no mistake.

Hakkeikubiki is a series of the eight blessings of Kakizaki: sun, water, earth, sky, wind, trees, snow, and people. This is wind. Come to think of it, it was windy in Kakizaki. This is the second bottle from the Sake Rice Study Group. The sake rice is locally grown Koshitanrei. The aroma is light, but has the gorgeous flavor of a daiginjo. The taste is very broad. It is delicious.

Oh, the label of Yuki (YUKI) has changed. Like "Kaze" and "Sora" in the Yaeguhiki series, the design is based on white, with a thicker material that gives a softer impression. The name "Yuki" is a summer sake of Yaeguhiki. Snow in summer. Until last year, Snow was a junmai ginjo made from Koshitanrei, but it is now a junmai daiginjo made from Yamada-nishiki. Here's the last GW drink we had It was a sake brewery I knew nothing about. This sake was sold as a summer draft sake by the Japan Meimon Shukai. It seems it was the first sake from this year to be released as a Meimon Sake Kai sake. Miyamanishiki from Akita Prefecture, Sake meter value +3, No. 9 yeast Citrusy aroma. The impression is that it is quite sweet and has a rich umami flavor, making it very drinkable. It is not a modern type of sake, but it is quite drinkable. A little acidic? It's hard to drink by itself... It's hard to drink if you don't drink it while eating. The 11th bottle of 2025 home brew 🍶. I received a bottle of Shintaro from Kochi Prefecture! The label is austere 😏I got it from the hanpukai and it was a good encounter because this is a brand I don't often buy myself 🍶I would give it to someone if I had a "Shintaro" around me 🙆♂️ It tasted and crisp and delicious! Last weekend I was out of sake to go with oden, so I went to the local supermarket and bought a 300㎖ bottle for the sake. It has a sweet and refreshing taste. It's good at hiya, but it tastes even better when it's warmed up to human skin temperature to increase the sweetness. However, I thought it would be too clean to pair with oden. I chose this sake because I wanted to keep it light, but.... If I wanted to warm it up, I could have used a more robust Junmaishu or even Honjozo. I'm still learning💦.

On a trip to Shiga, I visited Hirai Shoten. The quaint appearance of the store and the display of products were a sight to behold. Today's bottle was the "Sake Brewer's 3003000 Year Old" (pictured left). The aroma is melon, apple, and pineapple, and the first sip is a punch. It has a mellow sweetness, but the acidity and bitterness make it crisp and refreshing. Delicious. Well, Shiga Prefecture was fun! I'm also looking forward to Kosetsu (I heard it's read as Fouche) on the right side of the photo 😄.

I was impressed with the Miyamanishiki Hi-Kiri that I had previously tasted, so I tried the nama-shu as well. It is fruity, sweet and delicious, but a little refreshing. It also seems to have more acidity. The hi-ire version seems more cohesive, but I personally prefer the nama-zake. It tasted good when it was first opened, but on the third day, it's not so good. The bitterness is getting much stronger. I think I would prefer the more stable fire-roasted version.

I drank WAKAZE for the first time. It is a white wine with strong acidity and a little sweetness.... It is a little bit different from so-called sake in the category of "other brewed sake" (because it contains herbs? (Is it because it contains herbs as ingredients?)
