Today we had a little late lunch after visiting Yame, Setaka, and Yanagawa. While waiting for the eels to be steamed in the "seiro" in Yanagawa, we checked in at Kitaya in Yame, which we had visited in the morning. The third photo is the main building of Kitaya. Junmai Daiginjo that is not like Yamada Nishiki. The sweetness is moderate. It takes some time for the flavors to develop. Personally, I've always had the impression that Yamadanishiki has a sweet aftertaste, but the dryness of the flavor reminded me of the diversity of Japanese sake. And even though it's supposed to be a little out of character for my taste, it was a dish that made me drink more! As the temperature rises, the taste is distinctly sweet at first and then dry (and crisp) at the end. It broke the stereotype that Yamada Nishiki is sweet! The brewery started brewing in 1922. The name of the brand was changed from the famous water "Horime-no-Ido" to "Horinoi".

I bought this brand together with Ken-Aizan because I had not yet had any of Kangiku's other brands. The flavor is not as impressive as Ken-Aizan, but it is an honest and tasty type of sake. I like Kangiku's sake as a whole, and I always find a good flavor in a modest way.

The sake is of 90% polishing ratio. A very bubbly sake with fragrance of white flower, white peach and apple. The texture is light, with flavours of grapes and pear, also tasted sour. Not much umami but it gets more alcoholic flavor when it gets warmer. Best if drink chilled.

The aroma is fruity, with a slightly bitter chocolate flavor and a rich, mellow flavor. This was my favorite type of sake. Kohama Tokubetsu Junmai Sake A standard sake. It is often served at restaurants that serve funazushi. A good food sake. Junmai Ginjo Namazu Jiyu Read as "ume naru jiyu" (literally, "while being born, it is free"). Nama-zake. I think they said they use a yeast that produces high malic acid. Pleasant acidity with a fruity taste. They also make ume (plum) sake and a blue colored sake that is a ginjo-shu.

I think it's rare to find unfiltered raw ginjo 🤔. Slightly sweet and nutty. It has a strong sweetness and umami. It's a good combination of modern and classic without feeling like it's been alkaloosoaked. If the label is a little more modern, it will sell well. After 10 days, it became bitter and hard to drink.

First impressions are a sharp taste with a dry finish. There is sweet apple flavor with a hint of wood / taru. Good combination with foods that are on the salty side. This is a limited Sake.

I felt a sense of maturity or deep flavor. Takashima is in the northern part of Shiga Prefecture, a land known for funazushi (fermented crucian carp sushi).
