To compete with them with seafood, We consulted with them in advance about "Uchiwa Shrimp" caught in Hirado, Nagasaki. We consulted with them in advance and asked them to secure it for us at the market. We had them as sashimi. It was like a smaller horseshoe crab. They were very pleased 😁. Now for the 🍶... Like yesterday, Shiratake-san. I think it was the one with the most intense flavor during the tasting (we received a lot of it, probably... You can still feel the umami and sweetness of the rice. The aftertaste is pleasantly bitter and lingers for a long time. (PS: After about 30 minutes of pouring the cold sake into a Kimura glass piccolo, the aroma of ripe melon spread through the glass. After drinking it, it is still melon. It went from rice to melon🍈) My mistake, or rather my assumption, was that the addition of brewer's alcohol would refresh me. But after tasting it at Hakutake-san, it was the opposite... The same goes for this sake. The sardine was grilled with salt, well oiled and grilled to a high strength. The skin is crispy and you can even eat the bones. The flavor spreads and goes very well with white rice. The yeast we were allowed to taste, 1801 and No. 7, was said to be used at the brewery. The only sake brewery in Tsushima. Shiratake Sake Brewery (Former Kawachi Sake Brewery) During the waiting time at Tsushima Airport, I enjoyed Tsushima venison? and enjoyed it, but I was not feeling very well, so I will refrain from commenting at this time. I drank it again at home. I first drank it cold, but it had a strong umami and sweetness from the rice. The sweetness lingers in the aftertaste. I could go on and on with just this one... (Come to think of it, I would drink it on the rocks...) (By the way, we were told that it can be served on the rocks or with fruit.) Added -> I remembered that and tried it on the rocks. No way, it became more, rice, this is delicious. It's not the type that stands out for its flamboyance, but rather the rice, so I imagine it would go well with anything that goes with rice when it's hot 💭. I've known about this ice breaker for a while, but had somehow passed on it in Tamagawa. After seeing the many rave reviews on Sakenowa, I finally bought one 🙂. Last week, I met up with a local friend for the first time in two years and we went to Ueno Castle together! On the way home, I remembered that Moriki Sake Brewery, which brews Rumiko's sake, is located in Iga City, so I asked them to stop by 🙏. Junmai Daiginjo that is not like Yamada Nishiki. The sweetness is moderate. It takes some time for the flavors to develop. Personally, I've always had the impression that Yamadanishiki has a sweet aftertaste, but the dryness of the flavor reminded me of the diversity of Japanese sake. And even though it's supposed to be a little out of character for my taste, it was a dish that made me drink more! As the temperature rises, the taste is distinctly sweet at first and then dry (and crisp) at the end. It broke the stereotype that Yamada Nishiki is sweet! The brewery started brewing in 1922. The name of the brand was changed from the famous water "Horime-no-Ido" to "Horinoi".

Today we had a little late lunch after visiting Yame, Setaka, and Yanagawa. While waiting for the eels to be steamed in the "seiro" in Yanagawa, we checked in at Kitaya in Yame, which we had visited in the morning. The third photo is the main building of Kitaya. The sake is of 90% polishing ratio. A very bubbly sake with fragrance of white flower, white peach and apple. The texture is light, with flavours of grapes and pear, also tasted sour. Not much umami but it gets more alcoholic flavor when it gets warmer. Best if drink chilled.
In the fall of 2023, I ordered Ken Aizan, and for one reason or another, when I first tasted it a year later, I was surprised by its flavor and taste. When I learned last month that Ken-Aizan was being shipped again, I immediately pre-ordered. Once again, the flavors are wonderfully complex, the body is very well balanced, the bubbles are subdued, and it is an excellent match for meat dishes and curries. Considering the price and difficulty of obtaining this sake, I believe it is not at all inferior to Sansho's Kako and will certainly be a repeat purchase.

The aroma is fruity, with a slightly bitter chocolate flavor and a rich, mellow flavor. This was my favorite type of sake. Kohama Tokubetsu Junmai Sake A standard sake. It is often served at restaurants that serve funazushi. A good food sake. Junmai Ginjo Namazu Jiyu Read as "ume naru jiyu" (literally, "while being born, it is free"). Nama-zake.
