Kangiku Jushinmu 50 Junmai Daiginjo Orikagarami Unfiltered Nama-shu Hazy Moon. The upper nose is gentle but gorgeous. When you drink it, a pleasant gaseous sensation spreads in your mouth, and you feel a sense of transparency, melon-like aroma, tangy acidity, rising umami, and sweetness that seems to accompany the taste. From the mid-palate, the acidity becomes more apparent, and the aftertaste is washed away with a pleasant bitterness. When the corkage is twisted, a milky aroma is added and the aroma is strong. When you drink it, you can feel the taste of lees and the complexity of the flavor comes out while the gaseous feeling remains the same. The touch is a little softer and the transparency disappears a little, but the freshness and depth are deepened, and the way the umami and sweetness are perceived changes, which is very pleasing. The tingling sensation caused by the acidity from the mid-palate can be easily felt as the flavor becomes more intense, and the dryness caused by the drop is also easily felt. The astringency is almost imperceptible, but the refreshing bitterness and beautiful sweetness in the second half is delicious and makes you want to drink the next cup. Thank you very much.

I think it's rare to find unfiltered raw ginjo 🤔. Slightly sweet and nutty. It has a strong sweetness and umami. It's a good combination of modern and classic without feeling like it's been alkaloosoaked. If the label is a little more modern, it will sell well. After 10 days, it became bitter and hard to drink.

I'm opening another bottle today😍. My first Miyazaki sake. Everyone says Miyazaki is hard to get, so I popped in 🤣 I ordered it with Jidori Koko 👍. It's a bit sweet, but not too sweet. It has a modern umami taste, similar to a brand I've had before like Tsushima-ya 😋 It's quite refreshing and the sharpness disappears quickly 😋 It seems to be the only brewery in Miyazaki that specializes in sake 😋 It's delicious - thanks for making sake 😂.

Scoring: ☆☆☆☆ Miyazaki's only sake brewery specializing in sake, Chitoku Shuzo. It has a mild aroma with a good sweetness 😄. Refreshing drink with little lingering aftertaste. 😋 A lightly flavored umami type, or perhaps an 🏠. Not much umami or bitterness lingering on the tongue. Easy to drink but needs one more punch😅. It has an old fashioned taste but with a modern drinking style😋. Quite a tasty sake😋. Tonight I'm having seafood nabe with oysters, cod and scallops 🎵👍

This is a junmai sake from the north of the Kinjitake Brewery. The sweetness comes from the mild umami. It is a delicious sake with a good acidity followed by a bitter taste. I had it at room temperature. It is a good one👍🍶🎶.

However, it is easy to drink, with no harshness or bitterness, perhaps because the overall assertiveness is modest! It is crisp but dense. It is a deep taste that is hard to describe!

GW 4 days 3 nights with wife, 1,500km round trip🤣 We went on a Sanriku car trip 🙂. We stayed one night near Sendai and went to Sanriku. We had an ume (sea urchin) lunch box at Kuji station, and spent the second night in Miyako. Miyako's sake brewery, Hishiya Sake Brewery, Senryo Otokoyama. Seafood Cuisine at Murekou, a long-established bar that has been in business for over 45 years. Today we had fresh and delicious seafood dinner at Today, the restaurant was run by a pleasant elderly couple, who were basically just a customer with a reservation, but they were happy to help us at the counter.
