A year ago, we heard the shocking news that the Furuya Sake Brewery in Saku, Nagano Prefecture was destroyed by fire. 🐰💦.
I bought Furuya's sake as part of a project called "Saku Wakate 13 Sake Breweries Drinking Comparison" at a time when sake consumption was in the doldrums due to the Corona disaster, and the label was beautiful 🌸✨It was my favorite sake, so the news of the fire broke my heart.
I went to a liquor store for the first time in about a year and found a sake labeled "Fukayamazakura" at ❗️
I was surprised and picked it up to find that it was brewed with rice that survived the fire at Kurosawa Sake Brewery, also in Saku.
The specs were Acl15, a fire-aged junmai ginjo brewed with 59% polished rice from Hitogokochi grown in Nagano Prefecture.
The impression is that it is not too sweet, not too spicy, not too much aroma, and clean, well-balanced, and easy-to-drink food sake✨.
However, the lingering taste left a depth, if not a sense of maturity. It was as if that depth was the depth of thought that went into brewing this sake.
