The rice is Hitogokochi. The top aroma is gentle but sweet. It is sweet and delicious, but reserved and calm. It is apple-like. Compared to Miyamanishiki and Yamane Nishiki, which we have drunk so far, it has a calm atmosphere. When drinking it again, the aroma is gentle, but the taste is sweet and delicious.

Hana of Tsukiyoshino Unfiltered Nama Sake 720ml 100% Hitogochiki produced in Nagano Prefecture Rice polishing ratio: 55 Alcohol content: 15%. Purchased at Hara's in Ueda on Saturday. With amazake, of course. It is a gorgeous spring-like sake with a more mellow sweet taste. On Saturday, we went from Tateshina to the Ueda Castle beyond the ski resort. It was already starting to change colors. The parking lot was full. We had lunch at a buckwheat noodle restaurant in Sakaki Town on the way to Chikuma. We never had a bad experience at any soba restaurant.

We used Go To to Echigo Yuzawa. So_1F3D4 brand and Naebayama brand that I don't remember seeing in Tokyo to match the local cuisine of the hotel. Junmai-Ginjo sake with Junmai-Ginjo specifications. The gentle aroma, the sweetness, and the refreshing finish give me the impression that this is a "Niigata's local sake" as I have always imagined it to be. In terms of Niigata brands that you can buy in Tokyo, I'd say it's similar to the Junmai Ginjo specs of Tsurueri or Kubota. If I tasted it, I'd never be able to understand it myself... After all, coming on a trip and pairing it with local food is the best part of local sake 👍.

The rice used is Gohyakumangoku and Koshibuki. My first impression was "It's sweet. ❣️ I felt that "Kosu-Mori" was also quite sweet for me, but it seemed more profound than "Kosu-Mori". It is like licking a muscat candy. The finish, however, is crisp with just the right amount of bitterness, so the sweetness doesn't linger and it feels refreshing. Yahiko Sake Brewery in Yahiko Village, Niigata Prefecture. The main brand was "Echino Hakusetsu," but it appears that "Yahiko" will be the main brand from now on. This Junmai Ginjo is also made from Yamadanishiki produced in Yahiko Village, and is a good sake, not fruity, but calm and soft. Yahiko Village is where my mother is from, and I spent a lot of time there as a child when I was sent to my mother's home, so it is like a second home to me. Yahiko Shrine, the first shrine in Echigo, is located there.

Yahiko's regular sake, Aozae, by Yahiko Shuzo Sake rice is Koshibuki produced in Yahiko village. Aozae has a refreshing, watery quality. Aozae is a perfect evening sake without any peculiarities. Yahiko Shrine is the largest shrine in Echigo Province. My mother is from Yahiko Village and I used to stay at her parents' house in Yahiko Village when I was a child, so Yahiko is like my second home.

Although it's next door, I haven't had Osaka's sake yet. I was thinking of Akishika or Katanozakura for Osaka, but I found this one at AEON today while shopping. There is no outstanding sweetness or spiciness, but a well-balanced taste. It's a good sake for eating. When I paired it with yuba and fried eggplant with sesame oil, I felt like I could drink as much as I wanted 😋. Good sake in the neighborhood too👍.

Various summer liquors are now available. This time it was Fengkoku's summer sake. It was sunny this afternoon and the weather recovered, so I opened a bottle that had been well chilled in the refrigerator. It is a light nigori (light cloudy) sake. The label is white and empty on the surface, but when you shine a light on it from behind, a starry sky appears on the label. When the lees are mixed in, it looks foggy, and when the lees settle, it looks like a star-filled sky (Milky Way). At first it is too cold to smell much. The mouthfeel is light, and although it feels spicy on the throat, it has a light sweetness, followed by a grefle-like bitterness and a leesiness that is also combined with the flavor.
