The taste is rich but light on the palate. It is even softer when heated. It has a moderate aromatic richness and a little bit of spiciness. I was there just two and a half months ago, so I missed it a lot! Once again, Kamakura is a wonderful place! I bought this Wakaba unfiltered sake in the summer and felt it was still young, so I let it sleep in the closet. It has a good balance of flavor, with the punch of unfiltered sake, but without losing the simple country feel of Wakaba. I put it in the closet again, but it was good enough. It's not Wakaba, but Higuchi Shinyo, a triple axel that is anything but rustic! The ROC is still very difficult, but I hope the Japanese will do their best to get on the podium!

The rice used is Yamadanishiki and Shunyo. This is Izumo no Kuni's newest brewery, created (reborn) last year. Naturally, it was the first time for us to visit. The image of sake in this area is that of powerful sake-like sake, all of which are unique. This sake is unique in the sense that it is, but the image has been overturned. It is very fruity and lightly sweet and sour, with a pleasant citrus bitterness spreading from the sweetness and acidity. The mouthfeel is clear and crisp. Overall 9 (out of 10) I had my first Shimane sake 🍶😃. I got it from Pekho-san. According to the description of the sake shop It's a "fruity and full of flavor" sake! Delicious 😋. I went to Tabe Takeshita Sake Brewery and Sake Brewery Museum 😆. But all the sake was sold out there 😭 So I went to a liquor store that sells this sake and bought Rihachi👍. I wanted to drink it and I couldn't bear to end up not being able to buy it 😣. But I'm glad I was able to buy it safely 😌. I've had this drink before and I know it's good, so I feel safe drinking it 😌. I wasn't sure whether to buy Rihachi's white label or black label, but this time I went with this one ✨. It's consistently delicious 😋.

Happy New Year! After making Zoni, I finally had my first drink. I started the year with Kaneizumi, which I received from a friend the day before yesterday. It has a slightly long bitter taste that is heavy at first and lingers on the palate. It is a small sip, but if you drink it heavily, it is bitter and you may not like it... As soon as it hits your tongue, you feel a little bit of sweetness and a thin lingering bitterness... If you like sake that is crisp and has a short aftertaste... You may not like it... If you want to match it with food, I feel that you have to fight it with tempura and other dishes with strong flavors such as salt or boiled vegetables... If the food is light in flavor... I think this sake might make it hard to taste the food... Personally, I feel it's like shochu (it's a freshly stored sake)... Drinking continues at Don Chaya 🕺. We emptied the weird "Haneya", followed by another round 🍶. We chose our first brand that we could see in the cellar✨ First "Kame no Ou Junmai Ginjo Shiboritate" 🎉. Not much in the way of aroma, but a clean sweetness on the palate, with a pleasantly sharp and sweet [Kame-no-o] lingering finish! I found out later that they revived Kame-no-o and used this episode as a model for Natsuko's Sake, so in a sense, they are the pioneer of Kame-no-o 😁.
