This was the third bottle we drank on New Year's Day. We saved the Hakurakusei we had brought for another time and opened a bottle of Okutanba provided by my sister and her husband, as we did last year. It is dry but slightly fruity and easy to drink. It goes well with strong flavored dishes. Thank you very much.

Next is Tamahagane. What a cool name! I'm attracted to names like that. Kamitachika has a robust sake feel. The mouthfeel It has a dense sweetness and umami, and a slow-moving sensation. The aftertaste is a bit of alcohol, and despite the heaviness of the initial attack, it finishes with a nice acidity and bitterness. I am not so good at Honjozo, but this was delicious! Thank you!

We opened a bottle of Daikoku that we bought today at Kado-ya Sake Shop. It is said that this sake is brewed with 100% Yamada Nishiki harvested in a special area of Hyogo Prefecture. It's rich and dry. The rich taste in the mouth and the long lingering spiciness are exquisite. I think it's a very cost effective sake.

This was the first time I drank Daikoku Masamune at home. I bought it at the direct sales counter of the brewery. The aroma is mild, but the taste is fresh and fruity. It was really good even when it was heated. The reinforced concrete brewery was demolished due to old age, and a prefabricated direct sales store was built on the site, with the rest of the land used for a convenience store and Marugame Seimen noodles. The rest of the land is used for convenience stores, Marugame Seimen noodles, etc. Now they are brewing in a rented part of Hakutsuru Brewery. At the time of the Great Hanshin Earthquake, the wooden warehouse collapsed, and the site of the warehouse was turned into an apartment building, which was named Daikoku Royal Heights.

Overall, it's very cohesive and delicious 😋️‼️. The Sengoku I drank with it made me feel like a bit of a yankee 😆. Sweet and juicy is good, but I guess I prefer light and dry 🥰🥰. The last one I drank was also good, but This Daikoku Masamune was excellent👍🤣‼️.

Imanishi Sake Brewery is well known for its Mimuro Cedar. I have not seen this sake very often, but I bought it thinking that the sake bearing their name must be very strong. The aroma is subdued, but it is like a rummy. It has a light sweetness and a nice sharpness. It has a slight alcohol taste. I heard that Asahi rice is a low GI food, I hope this sake is also low GI 🤣.

This one is bitter with concentrated flavor and acidity. It is not at all dull. It is not flashy, but rather calm and delicate. The sweetness is graceful and has the taste of a first-class sake. The rice is local Miyamanishiki from Hitachiota. I found out that the heir who returned to his hometown had designed, brewed, and engineered the sake in a new attempt.
