Imanishi Sake Brewery is well known for its Mimuro Cedar.
I have not seen this sake very often, but I bought it thinking that the sake bearing their name must be very strong.
The aroma is subdued, but it is like a rummy.
It has a light sweetness and a nice sharpness.
It has a slight alcohol taste.
I heard that Asahi rice is a low GI food, I hope this sake is also low GI 🤣.

I'm glad it's low GI... but the GI of sake seems to be determined more by the brewing process than the ingredients, unfortunately it's not going to beat spirits with zero sugar 🥲.
