It's my first time to drink Hakuin Masamune. It's a sake I've never had the chance to drink before. I've been drinking a lot of sweet and sour sake lately, so I thought I'd try some dry sake. Danrei Dry. It has a moderate aroma and is dry enough to drink with a meal.

The sake is made and labeled in a way that takes advantage of the climate of Oarai, Ibaraki. It is refreshingly dry when served cold. When heated, it becomes more floral and friendly. I'd like to try it with sea bream or flatfish from Oarai.

Rice used is Oarai-grown Chiyonishiki It is more rough than fresh. However, it is not rough at all. It has a refreshing taste, and the umami of the rice spreads slowly. I've had many Tsuki no I's with this kind of atmosphere! I think it will probably become milder and more flavorful with aging, but I like it better as it is because it has its own personality.

Banana like aroma. The mouthfeel is slightly sweet. After that, the dry taste or the feeling of running spreads to the mouth. There is a hint of bitterness, but the aftertaste is sweet. Moved to the corner of Matsuzaki in Kawagoe. This is my first time at the fashionable Yellow Cherry Blossom. It is easy to drink and refreshing. It is the opposite of Kappa's sake. The reason why I couldn't feel the Aizan sensation must be because I was drunk.

A gift from Sawanoizumi The Jun Dai I drank before was a Miyagi sake, beautifully light and dry, and I felt (selfishly) the earnestness of the toji (master brewer). I had an image of a modest, but firm, light, dry Kura. And then there is this special pure Sawanoizumi. It does not have much of a topping aroma, but the mouthfeel is surprisingly sweet and umami! It is sweet to the level of the Hitakami, and the robust umami is also very tasty! It has a light acidity and bitterness, followed by a refreshing sharpness. It's good! This is good! Refreshing and fruity flavor. Low alcohol. Limited to only 400 720ml bottles because it is a test brew. Low-alcohol 11% sweet sake. Low-alcohol sake inevitably retains some sweetness during the manufacturing process, but how to prepare it is a challenge for each sake brewery. This time, the sweetness is left as it is and the acidity is raised to balance it out, creating a sweet and sour taste that is pleasant to drink. The first part of the bottle has a refreshing, melon-like to citrus-like aroma, and then it becomes smooth. The convergence of the two is acidic and refreshing.

National Sake Fair 2025 in Osaka_70 Iwate Prefecture booth ⑤. Fukurai Shuzo is located in Kuji City. There is also a Raifuku Sake Brewery in Ibaraki Prefecture, so it looks like a mix-up. ◉Fukurai Special Junmai Fukurai is made from Ginotome sake rice. It has a soft mouthfeel, but the taste is rich and dark with a sweet umami flavor that is quite to my liking. The brewery is located in Kuji City, famous for being the location for NHK's morning TV series "Amachan".

Polishing ratio 60%, Gingotome, 15%, Sake degree +2, Acidity 1.5 Giovanni's research yeast, 1411 yen Orthodox and light. Slightly sweet and full-bodied. Slightly classic 🤔.
