Nanayo No Color Finishing No. 2 Rating 4.4 Rice: Yamadanishiki from Fukuoka Prefecture, 60% polished rice, Sake meter -9.4, Acidity 1.8, Amino acidity 1.4 Yeast used: Newly developed yeast (name undecided), 11% alcohol by volume All Fukuoka, using a yeast newly developed by the Fukuoka Industrial Technology Center's Biological Food Research Institute. Refreshing and fruity flavor. Low alcohol. Limited to only 400 720ml bottles because it is a test brew. Low-alcohol 11% sweet sake. Low-alcohol sake inevitably retains some sweetness during the manufacturing process, but how to prepare it is a challenge for each sake brewery. This time, the sweetness is left as it is and the acidity is raised to balance it out, creating a sweet and sour taste that is pleasant to drink. The first part of the bottle has a refreshing, melon-like to citrus-like aroma, and then it becomes smooth. The convergence of the two is acidic and refreshing.

A gift from my brother at home the other day. It was chilly, so I paired it with pork shabu-shabu. It was a little high at 17%, so I tasted it slowly at first and then served it on the rocks in the latter half of the bottle. I enjoyed the mildness of the wine.

Rice used is Miyamanishiki I didn't find it too harsh, but my partner, who prefers a gorgeous sweet taste, found it too much for his palate. It is true that the alcohol taste comes first, and the mouthfeel is not smooth. As the day goes by, the corners are removed and it becomes more moderate, so it might be better to go out with it slowly, but I don't dislike it in this way.

At a restaurant in Sapporo. Junmai Daiginjyo, Nama-shu, so it was easy to drink as expected 😊. The restaurant was very nice because you can drink as much sake as you want. The food is made from Hokkaido ingredients. I had a great conversation with the manager and would love to go back 💕.

#Otaru#. I was a lecturer at a conference for companies. In the evening in Otaru, we had a get-together with the participating companies. The sake served there was Otaru's local sake. Sakemonogatari in Kansai(*) It is a hiyaoroshi of honjozo with a slightly sweet taste and a sense of grain! It is well balanced, probably because it is a honjozo. I would definitely like to drink it with an appetizer! The 5th Sagajo Shoten Presents at the 5th Bishushu Raku Kushan Shokai 😃. We were honored to have the opportunity to visit the Umaue Sake Brewery in Hiroshima ❗It's a rare sake to drink, and we had to have another one 😉. So this one is made with Ginpu! The other "Hodashi" is made with Kitashizuku and they are offering a sake that will make the people of Hokkaido happy 🎵Sounds great ✨.
