Looks like a new brewery: 🙇‍♂️ It's called sake, but it seems to be junmai (no mention of rice polishing ratio) 🌾. It rises with herbs, cream, and lychee ❔ pear ❔. The acidity is distinctive ❕, but it's not just light and fresh. But it's not just light, it's a solid, elegant, high quality sake ✨. I felt a very modern essence in a classic 🤔. And with this flavor, it is recommended to be warmed up to lukewarm ❔. I tried it 🍶. Lukewarm changes the atmosphere of the acidity, it's sweet and sour like hot honey lemon 🍋. (- 迭- )🍶🍶🍶🍶 Today I got a sake called Chushingura that I got as a gift 😀 It says it's first shibori-nama-shu but it was aged at room temperature for more than 6 months 🤣Strong style 🔥💪🏾 but I chilled it before drinking 👀. The aroma is mild🤔. When you put it in your mouth, the rich flavor of rice 🌾 spreads in your mouth 😊👍and it has a nice sharpness so it's a very drinkable sake 😚👌. I don't know about the original raw, but this is a delicious sake 🥳.

There are only two sake rice study groups left. I've been posting them chippy-chippy, so my notes and my memory are no longer connected. But there is no doubt that they were delicious. The ninth bottle was Kami no Ho from Mie Prefecture. The first bottle was a Saku no Kami no Hoho, which got me hooked on sake rice, but it tasted completely different. The aroma is banana, I guess. It has a slightly sweet taste with a refreshing dryness from the microbubbles. It goes on and on... a never-ending type of sake. The next post should be the last in this study of sake rice.

Special Junmai Nigori Nama-zake🍶Kami-no-ho🌾 from Mie Prefecture. Seme smell, fresh✨, a little schwag. Sour and spicy. Mustardy 🙄 according to my wife. When paired with the koji-marinated squid (🦑), it takes the edge off and cozies up to you. The power of koji is amazing 😆. Looks like a new brand to be born in spring 2023. Memorandum. This is another favorite local drink. Summer, After having accomplished a lot of big challenges in June for me. I wanted to take a breather and reset. A crisp, dry, unpasteurized sake. It works well. I should be able to get eggplant. It was such a good sake for the evening. Sasanishiki from Ichihasama. Suki. I prefer the green hode nasu in winter, though.

It is a local sake, but I first heard about it through "Sake-no-wa" and bought it at a sake store in the northern part of the prefecture. My daughter bought it at Fujiwaraya in Sendai Station a couple of times before she got married. Strangely enough, I could not remember any other person's sake. 　It has a fruity aroma and taste like peaches, with a nice sharp aftertaste. (Mrs. Fujinami's impression) 　It was too rich for me and I did not understand it well. It became easier to drink when I tried it on the rocks.

Summer version of hode nasu 🍆. First time I've ever purchased summer ✨. It's completely different from the winter version, crispy 😳 almost no acidity! I prepared a steak with the winter flavor, but I ate it with yesterday's leftover mansaku and ate the hode nasu with edamame and cucumbers 😅. Hode nasu in summer is more like sushi or pickles than meat 🤔.

It has a samurai-like design and a blood splattering color, and it has a sake level of +15! I couldn't help but be curious about this one, so I bought it! When I opened the bottle and poured it, the aroma was dry. It also has a savory aroma like steamed rice. The dry, light flavor and the richness of Junmai are well balanced on the palate, giving it a slippery sensation. The acidity also makes it taste slightly citrus-like 🍊. It smells like ginjo, and in a good way, it is not like Junmai! The aftertaste is also refreshing and easy to drink from start to finish👍. I thought it would be a simple dry sake, but it was surprisingly fruity and refreshingly delicious!

Purchased at Yamasho in JR Ashiya station. I mentioned before that this liquor store is based in northern Kyoto and has a wide selection of sake from the Tango area, but they also have Kumi no Ura. It is rather sweet. Muscat and lychee-like flavor. It is fire-brewed but fresh. I'd like to try some of their fresh sake. I'm sure it would be delicious. According to the internet, it's unfiltered raw sake. It's true that it's on the lees for a fire-brewed sake. Sediment is noticeable.

The sake that Rafa ordered. I exchanged it for the sake I ordered and drank some. The rice is said to be modified Nobukou. Unlike the straight kumi-style sake, it is calm and has a mild sweetness. It is more like a classic sake. The official website says it is about -7, so I think it is more on the sweet side. If you think of it as the standard sake of the brewery, it is quite high. It seems that Rafa has a connection with Satte City, where Toyoake's brewery is located, and I thought such an episode was interesting.

When I tasted it last week at Koedo Kurasato in Kawagoe, I felt its obvious individuality and immediately bought a 4-goupe bottle because I wanted to drink it at home. It is a fire-aged junmai sake with a slightly sweet, dark flavor and a modern acidity. It has character. The subtitle and the message on the back label are also good.
