Junmai Ginjo 🍶 Henohenomoheji 😅 All of it is made from Yamada Nishiki 🌾 without agricultural chemicals in its own fields. Fairly yellow, strong acidity, matured. Daruma Masamune-like. It's a bit like Daruma Masamune. Surprisingly young freshness as you drink it ✨ matched with grilled wagyu beef ichibo 🐂👍 Umi and @Takadanobaba 20230516

This is also my first Akishika Henohenomoheji, 100% Yamadanishiki, 17% alcohol, slightly yellowish and not spectacular, but with a delicious rice flavor. I like fruity sake, but I have come to like this sake as well. How about drinking it lukewarm? I would like to try heating it up, but it would be a waste, so I'm not sure.

I've always wanted to try a henohenomoheji. I found it at an izakaya I usually go to, so I tried it 💪. Grain aroma. The taste is quite robust with a gentle sweetness. The back end is astringent? It's good with a sharp finish 😋. I would like to drink it at various temperatures, but since it is an izakaya, I can't go that far 😇. I had it with Ara sashimi and it's great ‼️ I've never had ara before, but the meat is quite firm and filling 🐟. I have a faint memory of ara being in a delicious book 🤣.

When I opened the bottle and poured it, the aroma was dry. It also has a savory aroma like steamed rice. The dry, light flavor and the richness of Junmai are well balanced on the palate, giving it a slippery sensation. The acidity also makes it taste slightly citrus-like 🍊. It smells like ginjo, and in a good way, it is not like Junmai! The aftertaste is also refreshing and easy to drink from start to finish👍. I thought it would be a simple dry sake, but it was surprisingly fruity and refreshingly delicious!

This sake was created by the young successor of the brewery, who wanted to make a light and easy-to-drink sake. He was trained at Akebono Shuzo in Tenmei. Expectations are high 😊. It has a beautiful sweetness and is very easy to drink ❗️ It seems to go well with any meal and is a versatile player. I hope more and more young sake makers are getting involved and the sake market is expanding 😆.

[I like it, ferry 😆 ] I've had a couple of sake from Watarifune so far, and they're usually good 😋, with a nice balance of umami and bitterness from the gentle sweetness. I think Naminoe is a rare brand that you don't see much in Tokyo. I bought it for the first time, and I got the impression that it is moderately sweet and refreshing. The aroma in the background is a fresh melon candy type. It is more suitable for simmered dishes than sashimi👍.

This is the fifth brewery in Saku's sake brewery series. This is a rare bottle as it has recently met with a fire and is closed. We happened to find it at a one-day spa and secured it. Purchased at Yamasho in JR Ashiya station. I mentioned before that this liquor store is based in northern Kyoto and has a wide selection of sake from the Tango area, but they also have Kumi no Ura. It is rather sweet. Muscat and lychee-like flavor. It is fire-brewed but fresh. I'd like to try some of their fresh sake. I'm sure it would be delicious. According to the internet, it's unfiltered raw sake. It's true that it's on the lees for a fire-brewed sake. Sediment is noticeable.

The one I bought at the Kisegawa venue of the Shiga brewery opening event. It has a strong alcohol taste with a lot of gusto. It has a strong sweetness and umami of rice. It is better at room temperature, but it is also good on the rocks or with soda. After a week, it still has a strong alcoholic taste, but I think the sweetness has increased.

Spring Tokaido Sake Brewery Tour (2) Dragon Boat Festival🎏 is Kabuto-chan. The second bottle is Suzukabuto. It is junmai ginjo new sake. It is safe to say that this one went out with a real mission. The rice is Ginbuki, a sake rice from Shiga Prefecture, just like the first bottle, Hatsuzakura. It is served cold. It has a slight yellow hue. The top aroma is very mild. It has a juicy aroma reminiscent of fresh bamboo grass, young dried grapes, and oranges. The mouthfeel is round. From the bluish alcoholiness, the juicy orange aroma and acidity are gently developed with a smooth and robust rice feel. The taste is sharp with a tangy, bitter and pungent flavor. The refreshing acidity typical of junmai ginjo-style sake, the familiar rice flavor, and the sharpness of the aftertaste are all nicely integrated. It is a moderate, not too hard-core food sake, and the more you drink, the more you will want another glass.
