Aged sake from Reiwa 1st (=almost 6 years)
Rice: 玉栄 (Tamasakae)
First time trying this rice.
Yellow on eyes
Palate of brown sugar, woody chocolate, and umami.
This is from when it’s cold.
Now what about when we warm it.
Sweet and aromatic both nose and palate
Dry with melon, pear, and hint of banana
Slightly fizzy with clear cut finish
Umami of rice underlying silently aftertaste
Fermented with malic acid (apple acid?)
Led with fruity acidity like an apple note
Balanced with aftertaste of rice umami
Very great one
