I see that it has a high chemical and strong odor with cemedine as the main ingredient... I'll drink it. Well, there is no element of fresh fragrance at all, and it is different. The chemical taste is like a kind of bleach that sticks to the throat like a lamb's mandarin orange. 6th day Oh... the umami and sweetness have opened up! The flavor and sweetness are opening up! It is a robust sake that is unmistakably Japanese. At best, it is rich and full of rice flavor. At worst, it has a unique harshness or boldness to it. For better or worse, it is a sake for sake lovers, and does not have the flamboyance of a ginjo sake. Personally, I think it is perfectly fine, and goes well with sweet and spicy Japanese food. On the other hand, the bad points seem to stand out with light foods.

I bought this local sake when I visited Kashihara, Nara Prefecture. The brand name is "Izase Otoko," but I have no connection to it... It is a junmai sake with a rice polishing ratio of 65%. It has a simple, unadorned taste that only junmai sake can have. The mouthfeel is mellow. The more you drink, the more the flavor of the rice seeps in. It has nothing to do with success in life, but it is a taste that will make you feel at ease. Thank you very much.

We got this one at Kamazen near Kashihara Jingu-mae Station 🍶. I didn't go there this time, but this sake is from a brewery in Imai-cho, Kashihara City, where the old townscape remains. The aroma on the nose is somewhat like the sauce of Mitarashi dumplings. The first sip has a deep sweetness and a full-bodied umami flavor. The aroma is like that of Mitarashi dumplings. It is a bit peculiar, but it is a mellow umakuchi, a genre that I personally like. I only went around famous sake breweries that are available in Tokyo on this trip, but I would have liked to drink more locally consumed brands such as Izuseio. I didn't have enough time and liver to do that though😅. The third picture is the head mound of Soga Iruka, who was killed during the Taika Reformation, and behind him is Amagashi Hill. It is located very close to Asukadera Temple.
