Purchased at a local business supermarket
I was attracted by the 100% Hinohikari produced in Nara Prefecture.
As the label says, it is a refreshing sake that does not clash with food and is delicious as a food sake.
Moderate acidity
lingering smell of alcohol
Aroma of grains and pickles
Mellow aroma and strong taste, but the aftertaste is surprisingly refreshing

#Japanese Sake
The It's mine series is sold in single bottles by Izumiya, a sake wholesaler in Nara, Japan.
I was shopping at a department store when I saw it and chose four brands I had never had from a list of six: Harushika, Toyoshuku, Miyogiku, Izayo, Joyous Light, and Inaten.
We started with Izuseio, which is brewed in Imai-cho, Kashihara, a town that has remained unchanged since the Edo period (1603-1868).
It has a refreshing taste with just the right amount of rice flavor and acidity.
As a side note for baseball fans, Ukyo Maekawa of the Hanshin baseball team turned 20 years old last year, and his grandfather bought this sake to wish his grandson a big leap forward, which they shared together.
Solving a riddle in Nara
I couldn't go to Harushika because of that.
It is sweet with a strong aroma of koji. It is sweet with a strong aroma of malted rice, but it also has a bitter taste.

Junmai: music vibration aging vs. normal junmai sake
The only difference seems to be that the music was played and not played. This was interesting.
The first thing that comes to mind when you hear the word "aged" is
The one that was made to play music.
The overall taste is rounded and calm.
On the other hand, "Aged" has a fresh, large, Japanese citrus flavor.
The "not-so-aged" one is my favorite.
I've heard that light, temperature and vibration are the enemies of aging, but I didn't know it was this different! I was so impressed with this drink!
And now, the man of success!
I was about to go home after looking around the booths, when I saw ....... with a man from the brewery.
I couldn't help but want to gently throw a warm blanket over his lonely appearance and taste his wine.
Then I bought this one, because he said he would choose the best drinker!
I see that it has a high chemical and strong odor with cemedine as the main ingredient...
I'll drink it.
Well, there is no element of fresh fragrance at all, and it is different.
The chemical taste is like a kind of bleach that sticks to the throat like a lamb's mandarin orange.
6th day
Oh... the umami and sweetness have opened up! The flavor and sweetness are opening up!
But it surely takes a skilled tongue to master this wine, doesn't it?
Yasube-san, thank you very much 👋
Well, it was quite peculiar and I couldn't feel the freshness of the sake.
I was very satisfied with the selection of this one, which was the most pervert's favorite out of the three types of sake available at that time.
Good morning, sake orchid, your name was mentioned, hmm? What are you talking about? I was wondering what you were talking about, but it was an event that happened a long time ago 🤣Sakeelan looks like someone who quit on the CI calendar 🤣I'm looking forward to your posts 😆.

#Nihon-shu
It is a robust sake that is unmistakably Japanese.
At best, it is rich and full of rice flavor. At worst, it has a unique harshness or boldness to it.
For better or worse, it is a sake for sake lovers, and does not have the flamboyance of a ginjo sake.
Personally, I think it is perfectly fine, and goes well with sweet and spicy Japanese food.
On the other hand, the bad points seem to stand out with light foods.
I bought this local sake when I visited Kashihara, Nara Prefecture.
The brand name is "Izase Otoko," but I have no connection to it...
It is a junmai sake with a rice polishing ratio of 65%.
It has a simple, unadorned taste that only junmai sake can have. The mouthfeel is mellow.
The more you drink, the more the flavor of the rice seeps in.
It has nothing to do with success in life, but it is a taste that will make you feel at ease.
Thank you very much.
