Echigo Toji Honjozo This sake was recommended by bouken, Nemuchi, and Sakélan advisors at the Niigata Sake Festival held at Abeno Harukas. It was recommended by all three as the No. 1 sake that I would drink at the event, so I went back to Abeno Harukas on the last day 🍶💨. The color is almost crystal. The top aroma is milky with a hint of caramel. The mouthfeel is light and smooth. The taste is a nostalgic sweetness and umami like fine milk caramel that flows gently and smoothly. When heated, the milk caramel flavor increases and the taste is refreshing. It has a classic flavor, It is a delicious sake with a light, milky sweetness and umami that is easy to drink, with a smoothness that reminds one of the softness of Niigata's melted snow water. After all, this is the kind of sake that you want to drink at the end of the day! The selection ability of the three heavyweight members of the group is superb 😊. The Niigata Sake Fair is still going on.

Purchased at Niigata Sake no Jin OSAKA It looks like it's only sold 3㌥ all year round, but I couldn't find it on the website💦. This is a record of a sake tavern I stopped by when I was in Shibuya on a business trip. There was Wakakoma, which I had been interested in for a while, so we compared drinks by specifying the brand name. Wakakoma was a beautiful sake. It was comfortable to finish it easily without any sticking point. Kanemaru had a black and white label, which I preferred. The rice flavor was strong and distinct. Delicious! The red and white label had a strong smoky aroma, perhaps a wooden vat feeling, and it was hard to taste it as a sake. Next was Eiko Fuji no Hoshimatsuri. I saw it in the basement of Shibuya Tokyu, but did not buy it because of its high price. I drank one pot of it deliciously and appreciated it as I should have. The white malted rice of Sanzen Sakura was the best discovery of the day. The acidity comes first, but the umami comes soon after. It is really delicious. I think it is one of my favorite sake with acidity attack. I want to drink it again. The last sake is from Kuwana City, Mie Prefecture. This sake is refreshing, but a little bit rich, and quite delicious. The sake sommelier's recommendations offer new discoveries. It was a good way to spend a Friday night.

6/10 Domaine Akishika. It is said to be a sake made from Omachi produced in a rice field called Kamimura-Omachi. And they say it is aged, so the price is quite expensive. It had a robust flavor and mellow taste. The bitterness that comes in the latter half of the sake was also enjoyable. I had no idea that such a sake was available here.

Purchased at Yamasho in JR Ashiya station. I mentioned before that this liquor store is based in northern Kyoto and has a wide selection of sake from the Tango area, but they also have Kumi no Ura. It is rather sweet. Muscat and lychee-like flavor. It is fire-brewed but fresh. I'd like to try some of their fresh sake. I'm sure it would be delicious. According to the internet, it's unfiltered raw sake. It's true that it's on the lees for a fire-brewed sake. Sediment is noticeable.

I bought this simple labeled sake because I was curious. When warmed up, it has a robust lactic acid aroma, a gentle sweetness, and a full, rich umami. It has a nice lingering aftertaste that seems to soak in. At room temperature, it has a slightly sweet and sour rice aroma with a banana-like flavor. The juicy umami comes as a surprise as it rises from the mild sweetness. I thought it would be good warmed up, but it may be good in various ways.
