This is the sixth brewery in the Saku Sake Brewery series. Located in a historic town along the old Nakasendo road, this is a place I would like to visit again. The taste is very strong as it is called "mellow" sake. It is 18% alcohol by volume. It has a bitter taste on the tip of the tongue, followed by a sweet sake-like flavor. I heard that there is a way to enjoy it by aging it after buying it. Next time I'll let it mature a bit and try it with mizutaki in winter 😋.

Shikoku x Sake Country 2025 Sake Brewery Wonderland On Osaka⑤. The booth of "Kaze no Sato" in Ehime. After suffering tremendous damage from the torrential rains in western Japan in 2018, the brewery decided to revive itself with the support of local people, fellow members of the sake brewers association, and volunteers. The brewery has recovered through crowdfunding and other means, and this one is also not to be found in the Kansai region. Junmai ◉ Junmai The aroma is a bit peculiar. It may be an off-flavor. The flavor is firm and a bit nutty. They say it is recommended to be heated. Junmai Ginjo Not too much sweetness and umami, but a mild acidity. Junmai Daiginjo Uzu The aroma is a little subdued, and the sweetness and umami are refreshing, the type of sake that goes well with river fish.
