The mark looks much like some airline company. Pouring it into a cold sake glass and bringing it close to the nose, the aroma is sweet and soft, like a peach. When you drink it immediately, you cannot sense any strong characteristics at first, but the deliciousness of the rice oozes out from the middle part of the bottle, and in the latter half, the fruity overtone appears in small waves. There is little bitterness or astringency. Overall, it has an elegant flavor typical of Junmai Daiginjos. Thank you very much.

Saijo Sake Festival (6) The last sake brewery we visited was Sanyotsuru Sake Brewery, which was also new to us! We drank hiyaoroshi and bought some limited edition sake and left Saijo 🍶. It was a very fun sake festival, but there were just too many people 😂I would like to come back on a weekday when it's quieter. I heard it's also famous that people always fall down and ambulances come, but I guess it's safe? I'm happy to see it😅 Alcohol in moderation 🚑. It has a gentle flavor, but the most classical taste of all the sakes we drank this time. Slightly full-bodied but with a crisp aftertaste

☀️ I'm at the Saijo Sake Festival. It's a great crowd 😳 First of all, we had a barrel of Sanyo Sake 🙏. It's quite reasonable at 100 yen for 60ml 🙄. Well, I guess that's festival price 😆. It's sake 🍶. Sweetness is firm. There is a moderate cedar aroma from the barrel. The cedar aroma is soft and fluffy. This may be the softest barrel sake I've ever had. This kind of moderate flavor is very special for festivals 🤗.

I stopped by the brewery for the first time in a while. I used to have a special fire-brewed junmai and a sake called "Mariko no shu" which is named after the female toji (master brewer?). Both were quite dry, classical sake. Both were quite dry classical sake, and I had the impression, for better or worse, that this is what local sake is supposed to be like. This was probably my first nigori sake, but it looked delicious, so I bought some! I wondered if the beautiful woman at the sales counter was Mariko herself? It has a classical aroma with a banana feel. It is more of a hint than a standing aroma. It has a classical taste and is dry, but you can drink it by itself if you want! It is very easy to drink because it has a lot of turbidity, which gives it a strong umami flavor and makes it easy to taste the sweetness. I drank it with kimchi nabe (kimchi stew), and I think it goes well with strong flavors and nabe dishes! It also seems to go well with meat, and I am sure it would go well with ginger-grilled pork or chicken steak. I imagine it is like Kikuhime nigori or Tamagawa nigori! To be honest, I think it's one of the best in the Koshu Plum Grove, so I'd be happy to buy a bottle and drink it slowly. It can probably be stored at room temperature until early spring.

I had decided on Mariko's Sake for my first visit to Saitama. The Sato Sake Brewery is run by Mariko Sato, the toji of the brewery. There is almost no alcohol taste, and the spiciness comes later with more umami. It is sweet and umami, but the spiciness lingers a little.

Harima is a sake brewed in Akashi and Uozumi. It has a cool taste with a good umami flavor. It is classically well-balanced. It was a truly delicious sake that went down smoothly with the sake cup.

100% Yamadanishiki from Hyogo Prefecture, with wine yeast. It is said that the name "Sora no Tsuru" comes from a dream of riding a beautiful "crane" soaring in the sky. Wine yeast is great because it makes rice sweet and sour! The top aroma is of grappa and rum raisins. When swirled, it smells of plum. The flavor is very sweet and sour, like plum wine. The color is a pale yellowish hue like lemon pulp, the legs are short and weak.

It is a sake from Akashi City, Hyogo Prefecture. It is only available directly in the city, and there are only a limited number of stores where you can drink it. I found it at a store selling Hyogo products in Kobe Hankyu in Sannomiya and bought it. How does it taste? It does not have the harshness of the original sake. It has a chocolate-like aroma. It has a rich sweetness, with spiciness and astringency chasing after it. The chocolatey and caramel-like aroma that passes through the nose is delightful. If you let it air a little, it becomes more brightly sweet and fragrant. It is simple, but quite flamboyant. How about if you heat it up? It tastes like chestnuts and is easy to drink! The spiciness that comes out volatilely and the refreshing sweetness that comes in quickly. It has a rich and expressive taste. It is really good. The aftertaste is also refreshing and sharp with a nice sweetness. I think it is especially good when heated. I have now completed a round of the 70-odd breweries in Hyogo Prefecture (and have 300 reports to my name)! It took me two years to complete this feat. It was a long but enjoyable journey. I will continue to enjoy Hyogo sake (and Fukui sake as well) slowly and carefully, and hope to one day become an evangelist for good Hyogo sake...

Purchased at a liquor store in Nakazaki-cho after an event at Ogimachi Park with Nemuchi The design looks like something you'd find in a bottle at an izakaya 😅. Normally I wouldn't pass it up, but I thought it looked unusual and bought it. It's been a year since it was made, but I don't feel it's aged too long. It is light, refreshing and easy to drink.

After a moment of sweetness, spiciness and sourness come at once. The assertiveness is modest, so it may be suitable as a food sake. I noticed after drinking 4 kinds of sake that I may not like the unique flavor common to all the sake breweries here.

It is sweeter than the other Shugetsu wines I've had. It is refreshing and fruity, but a little peculiar. The rice is probably Yamadanishiki. It is fruity and on the sweet side, but not fruity. This costs over 1000 yen for 300ml....

There is no description on the 300ml bottle, but according to the official website, it seems to be called Shiboritate Nama-nihan-shu. It has a good balance of sweet and spicy and is easy to drink. It is truly exquisite. I think it is similar to the Shiroshika Classics Limited Nama-Nihan-shu. It's definitely better than the first unfiltered draft I opened.

Autumn Dyed with Niigata Sake (4) This autumn, we are holding a campaign on our own initiative to dye ourselves in Niigata sake. Echigo Toji Honjozo This sake was recommended by bouken, Nemuchi, and Sakélan advisors at the Niigata Sake Festival held at Abeno Harukas. It was recommended by all three as the No. 1 sake that I would drink at the event, so I went back to Abeno Harukas on the last day 🍶💨. The color is almost crystal. The top aroma is milky with a hint of caramel. The mouthfeel is light and smooth. The taste is a nostalgic sweetness and umami like fine milk caramel that flows gently and smoothly. When heated, the milk caramel flavor increases and the taste is refreshing. It has a classic flavor, It is a delicious sake with a light, milky sweetness and umami that is easy to drink, with a smoothness that reminds one of the softness of Niigata's melted snow water. After all, this is the kind of sake that you want to drink at the end of the day! The selection ability of the three heavyweight members of the group is superb 😊. The Niigata Sake Fair is still going on.

Purchased at Niigata Sake no Jin OSAKA It looks like it's only sold 3㌥ all year round, but I couldn't find it on the website💦. When I tasted it, I got the impression it was bitter, but it tasted quite sweet. Maybe because it's not on its own, but during a meal? I got the impression that it was a little strong on alcohol. But my overall impression is that it's easy to drink. I have a much better impression when drinking it at home than when tasting it 😍. I think it will show its full potential during a meal 😋. The mild syrupy sweetness is addictive!
