We opened a bottle at the office. This is the first time we have had "Shirasagi no Shiro", another name for Himeji Castle. At first I drank it at room temperature, and from the second glass I drank it on the rocks, and I could feel the gentle sweetness of the sake. The taste reminded me of Tengu Mai's Yamahai brewing. I'd like to try it warmed.

The location changed and we went to Hyogo Sake EXPO 2022, a local sake event in Hyogo, at Kobe Hankyu. I tasted a regular product, a draft version. I had tasted the hi-ire version before, so I wondered what the draft version was like. It was easier to drink than the hi-ire version, but not to my taste. I prefer the Shirasagi no Shiro (castle of the egret), which is made with Nojoho.

The only place I can think of that uses Nojoho is Okutanba. The overall impression is gentle and the taste comes slowly. It looks like wood, grass, or herb. It also has a classy atmosphere. The sake here is not my favorite, but when I find it, I buy it for some reason.

No sake in the fridge! 😱 My husband tasted and bought some at Isetan 🙏. 100% Yamadanishiki Polishing ratio 65 Alcohol 16%. It has a subtle sake-like aroma and a classic taste, but the soft sweetness and acidity make it sweet and sour and easy to drink. When the temperature rises to room temperature, the sweetness comes out and the acidity subsides a little, and there is a little bit of spiciness. The balance of sweetness and sourness has improved! On the second day, it seems to open up a little and become cohesive. On day 4-5, the classic wine has a white wine taste 😳. It's well-balanced and very tasty ❣️ and it still tastes better at room temperature! I liked it better on day 1-2 when it was a little hard but refreshing, and on day 4-5 when it was calm and round 😊. Did you drink enough alcohol during this year's New Year's holiday? I think it's because it was longer than usual 💦. I'll be sure to check the number of bottles next year 😂.

Tangy and dry Tastes great on its own I tried to drink it with sashimi and simmered dishes, but it was not so good... I was wondering why it was not good with sashimi and simmered sea eel.... It seems to go well with sweet and spicy food.

Welcome party hosted by the conference🥂. The second drink we chose was Shirasagi no Shiro Junmai Ginjo This one is refreshing and fruity 🥰. This one might be easier to pair with a meal! It has a very clean flavor and acidity with a good sharpness.

Spoils of War at the Takashimaya Sake Festival. Sake I regretted not buying at the same event last year. It says it needs to be refrigerated, so I asked about it and was told it was once-fired. The rice is Nojoho. The rice is Nojoho, and it is more rounded than the other sake I have had in the past, with a rich sweetness in the second half. I don't like hiyaoroshi, but I like this one. Nuts in the aftertaste as the temperature rises. The third one is smoked duck and Mimigarh from Smokeya, which I bought at the Takashimaya Sake Festival! The duck was good, but the Mimigarh was especially smoky and delicious 😋.

The 7th Takashimaya Sake Festival (2) Next is Tanaka Sake Brewery At first, we were served by the waitress, but in the second half, we had a short talk with the proprietress. I was told by Mr. Umaumai to go talk to the proprietress! I was also told to go and talk to the proprietress 😁. What we drank was Shirasagi-no Shiro Junmai Ginjo Kiyoshi Oroshi I regretted not buying this at the same event last year. I asked if it was a draft sake because it was marked as needing to be refrigerated, and they said it was once-hot. I asked if it was a fresh sake, and was told that it had been fire-aged once. It is delicious with a gentle sweetness. It is sweeter than the regular Kajiroku. I forgot to take a picture of it but I bought it 😅I will post the picture later 🤣. Kame-no-o Junmai Ginjo Gogo Polishing ratio of Kame-no-o is 55 Kame-no-o offers a variety of different rice polishing ratios, and they also had a 9% polished rice ratio. The price was 33,000 yen 😳. It is rare to find a brewery outside of Akita that uses Miso Nishiki, so I have been curious about this one for a while.
