We attended a year-end party for parents of my second son's high school club! Although there are some rank restrictions, we enjoyed drinking all the sake we could drink 😆. The 4th glass! Koshino-Hachiho Junmai Sake This is also a brand new to me! It is a light and dry sake with the main flavor of rice. It is a typical food sake that does not interfere with the taste of the meal.

Deciding to relax at home today, I decided to have a lunchtime drink and opened a bottle of this one that I had purchased at the event. This sake brewery seems to be based on a light and dry style that is typical of Niigata (I tasted it and it was very clear and dry), and this is the first time they have made a sweet spring sake. The aroma was a little like that of Japanese sake. The mouthfeel is gentle, with a slight sweetness and the delicious taste of rice slowly spreading through the mouth, making you smile and say, "Mmmm, this is delicious 🎶. ☺️ It has a refreshing taste and a slight lingering aftertaste. I bought it at a local supermarket! A reward for working the holidays. Hmm,, It's pretty flat. I don't think I like it. It is mellow, gentle, and easy to drink, but it goes as far as water. It has no acidity and is really clear like water. Dangerous. The desire to fill your mouth with stimulants,, I ended up with spicy tom yum kung. I'll be off again from the second half of GW on the second day. I'll have a drink too! LOL! it's okey!

Rice used is unknown Since this brewery does not have a sake brewing license, it is said that the brewery goes to Nagano Meisho to make sake. There is a pattern of having sake brewed on consignment, but this method is unusual. I imagined it would be a good old-fashioned sake from the label, but it was light and very easy to drink ❗️. It has just a hint of sweetness and is very refreshing with little alcohol. It was a seriously good sake❣️

Brewed by Wadaryu Shuzo in Ueda, Nagano Wada Ryu Junmai Freshly Pressed Unpasteurized Sake This sake is badass 😂. I heard it was freshly made, Fresh and juicy. Today we went for a drive to Shinshu 🚗Through the Juushi Pass where my husband used to ride his motorcycle in his youth, we went to a sake brewery in Shinshu with a sense of nostalgia ‼️ We bought a bottle of Miyamanishiki, the first in the Tomisui series 🥰, a sake with a moderate aroma, sweetness to rice flavor, and a nice sharpness, which was intended to be a food sake 🩷. The sweetness and umami were refreshing from the first sip! In a word, "clarity"✨It has a good balance of acidity and bitterness in a light flavor, and is just so refreshing and crisp. ‼️It is 16 degrees, but it is easy to drink because there is no spiciness or alcohol smell, which is bad💓. When I compared it with the Miyamanishiki Junmai Daiginjo, which is made from the same rice as the Miyamanishiki and has a little bit left over in my house, the Miyamanishiki has a slightly stronger and richer aroma than the Miyamanishiki, but both have a well-balanced and light flavor of rice without any spiciness or alcohol smell. Today, we paired it with chilled tofu with leek sauce, gyoza, and sukiyaki udon! The sukiyaki's soft and spicy broth with the egg, combined with the light and delicious Tonomizu, was the perfect combination 🎉. Sake impressions by itself are the responsibility of shinsaku3 💕.

At home. The third Nara sake without permission - ‼️. Kita Sake Brewery is located in Gobo-cho, Kashihara City and was founded in 1718. My son used to play baseball and we used to go to Sato Yakuhin Stadium near here. This is the first time for us to visit there. The aroma is not so strong, but there is a slight sweetness and alcohol. When you put it in your mouth, you can taste the sweetness, sourness, dryness, and the gradual feeling of alcohol. Oh, is this the ultimate in dryness? For now, I will only taste it tonight and wait for tomorrow to see how it changes. There was almost no change in taste after the second day. It is dry, but it has a sweet taste and is not unacceptable.

Miyogiku is a sake brewery located near Kashihara Shrine. I bought a Junmai sake and this Honjozo sake. It has a very high density of flavor and richness even in hiya, and the acidity is enough to go well with the drinks! It is also very well balanced in terms of both comfort and drinkability! It is even better when heated! This is wonderful! I bought a small bottle the day before because I had to buy a lot of things at Ise Jingu Shrine, but I want to buy another 4 bottles! Before going to the Kashihara Shrine, we went around the tombs around the shrine, and especially the Unebiyama Northeast Mausoleum was amazing! It was scary! Furthermore, although I must have been to Kashihara Shrine when I was a child, it looks bigger than the image I had when I was a child. Normally it should look smaller than it did when I was a child, but it was the opposite. I guess I felt the greatness of Kashihara Shrine.

Back in the day, Niigata's Sanbai was an extremely hard-to-find brand. I often visited Niigata Takata on business and was often presented with it. At the time, I had no interest in sake at all and almost never went through with it. Now, in 2021, Koshino-Kanbai is easily available at Aeon. Mine-no-Hakubai is also often seen as Hishiko at local liquor stores. However, Yukinubai is not so easy to find in my hometown. So, I got it on a business trip to Joetsu. I paired it with a taste of spring, firefly squid and broccoli with olive oil. It has a moderate aroma of cemedine or banana. It is sweet. It harmonizes with the sweetness and bitterness of firefly squid and broccoli. Lastly, there is a final bitter taste that is refreshing and delicious in the mouth!

I bought it at a sake shop in Kintetsu Department Store. I can't read "mother-of-pearl" 🤣I heard it is read as "Uzume", but if you type "den" for mother-of-pearl in your phone, it will come up 😁. If I lived a normal life, I would never use this kanji 😅. I got the impression it's a pineapple with a bit of bitterness 🍍. It was sweeter when I tasted it, so maybe it's sweeter after some time, but it's 500ml and I can't wait that long 🤣. Maybe the aroma is a bit peculiar.

Purchased at Kintetsu Department Store's Sake Tour. The label is a sheep kept at the brewery. It has a slight sweetness, and is full, rich, and powerful. It has a strong richness. Rice used is something from Mie Prefecture Aged for 4 years, pale amber in color. Smoky and graininess with the color as it is. The sweetness is elegant, and the spiciness in the aftertaste has an impact on the throat and nose. It is a little peculiar, but I personally like it! #Drinking at home The spiciness, sweet umami, and moderate acidity come quickly, and while enjoying the aftertaste, the bitterness comes unexpectedly. It is similar to the first sake released from the brewery, but I think this one has a clearer outline. I think Doukan is stable in its line of slightly sweet umakuchi at first and finishes with bitterness. Like Okura and Tamagawa, if the direction of the flavor is consistent, we can drink it with peace of mind. Anyway, Shiga sake is generally very tasty.
