Last night was a New Year's party with a couple I met last year. We had dinner at a nice restaurant and then went to Kokubuncho. After the fourth bar, I finally had a chance to drink sake. I have known the owner of this sake bar on the outskirts of the city for about 25 years now. The lighting doesn't look like it's the kind of place you'd enjoy sake, but don't worry about that. The selection is quite good, so go for something you've never tried before. First up is Hiryu, the one with Tatsumi Fujinami's red towel. A dry sake with a refreshing yet tasty flavor, just like Mr. Shinzawa! Thank you very much for your hospitality!

I bought it last year as a souvenir from Utsunomiya. It's been a while since I've had "out of the gate", but my taste buds have changed since the last time I had it, so I'm looking forward to it! When you open the bottle and pour it, it smells like citrus fruits and lychee. It is tasteless on the palate, but gradually the richness and mellowness of the rice comes out. The sweetness, spiciness, and astringency of the flavor are all present as soon as the lid is opened! Although it is a junmai ginjo, it has such a robust flavor that it may be served warm. The overtone is similar to that of "Shinkame" and gives the impression of a matured sake. The lingering aftertaste is well rounded as it quickly fades away. Overall, the shades of gray are exquisite, and the taste is quite interesting! In fact, the first sake I ever drank in my life was "Monkai Fude. I was actually the first person in my life to drink sake, and that drink at Kinugawa Onsen has led me to the present day.

Suehiro Shuzo's Genzai. They also won a gold medal at the New Sake Competition for their Genzai daiginjo, but this is not that award-winning sake, but an affordable special junmai. It starts off with a piquant and refreshing sweet and sour taste! The taste is powerful with a strong sense of presence, but the alcohol content of 15 degrees makes it easy to drink and enjoy 👌. We are looking forward to adding this sake to our lineup next year and beyond 😊.

Sake brewed at Suehiro Shuzo's Kaei warehouse. When I hear the name "Genzai," I think of the daiginjo that was entered in the sake competition. I hesitate to buy it because it is a bit expensive, but this special junmai sake (nama-shu, hi-iru) is reasonably priced and easy to pick up. I am looking forward to the next year, when there will be more varieties of sake. As for the sake, the aroma is like apples. When I drank it, I smelled cemedine😅. The sake is fresh and has a tangy, gaseous taste. The sweetness is moderate and the acidity is strong. I thought maybe I don't like cemedine, but I drank more than half of it in no time and regretted it. It is easy to drink. The second day, the cemedine is also good. If this is the case, it's a special pure Cemedine.

A gift from Sawanoizumi The Jun Dai I drank before was a Miyagi sake, beautifully light and dry, and I felt (selfishly) the earnestness of the toji (master brewer). I had an image of a modest, but firm, light, dry Kura. And then there is this special pure Sawanoizumi. It does not have much of a topping aroma, but the mouthfeel is surprisingly sweet and umami! It is sweet to the level of the Hitakami, and the robust umami is also very tasty! It has a light acidity and bitterness, followed by a refreshing sharpness. It's good! This is good! The price is relatively cheap, about 1300 yen for a four-pack, but it is convincing enough! Ishikoshi Brewery. I underestimated you. Sorry about that. Honjozo 🍶 fresh stored sake✨ A good, albeit alsodense, taste. Dry aftertaste. Slightly bitter. Mild when paired with salmon. ☺️ Sweetness when paired with sea bream. It's delicious.
