At the return home. Junmai sake from a local brewery, Takai Shuzo's "Koshinohatsubai". A rare and true gem among spring wild plants, Ki no Mame. It is served with the yolk of an egg. It is a sprout of akebi, and its bitterness and the breath of spring are irresistible. Local shiitake mushrooms are also available. I'm at my new place today! We had a glass of local sake at the busi-hotel to pray for a new start👍. The mouthfeel is surprisingly soft and the flavor in the mouth is like custard cream or banana au lait! The texture is also soft on the tongue. I think I may have never tasted such a soft sake! And there is a mushroom-like taste in the aftertaste. There was also a sake from my new job, but I didn't dare to drink it. I'll leave it for the future 😌.

Ikebukuro with friends on Wednesday. It was not an all-you-can-drink party. Sake was my friend's choice as we sunk into the sake swamp. It was my first Hakuba Nishiki. Nice choice. It tasted like it would be ranked high in the Nigorin picks. It was fresh, fruity, sweet and refreshing. The upper half of the label is European and the lower half is Japanese, which gives it a Showa-era feel.

Morimoto Morimoto Junmai Sake "Hatsu-no-Takimikiri 2022". This is my first time to drink this brewery. It was a delicious one 🍶🎶 and served chilled. It is a dark, umami, spicy sake, but as the temperature returns to normal, the sweetness and sourness come through. I think it is a good sake at room temperature or warmed. All of Shizuoka Prefecture's sake is delicious.

Immediately after opening the bottle, it was dry and dry, perhaps due to the 17% alcohol content. Then, after leaving it in the refrigerator for about 5 days due to a business trip, the taste changed drastically! There is almost no aroma, but it has turned into a crisp, sweet and delicious sake. There are not many sakes that have changed in taste like this.

I drank it last year and enjoyed it so much I bought it again. Personally, it is my favorite new sake along with "Akagisan"✨. When you open the bottle and pour it, the aroma is crisp and gorgeous, like pears. The mouthfeel is light and immediately afterwards there is a solid gassy feeling. It's as shwashy as a carbonated beverage! Dry and clean on the palate, with pear and green apple flavors that are gorgeous and fresh. There is a hint of sweetness, so it is not only dry, but also well balanced. The astringent taste comes in the last half of the bottle and finishes it all off, so it is a delicious wine with a perfect ending! The sun is setting later and later, and we can feel the approach of spring. It's still early, but I'm looking forward to this year's spring sakes!
