Jun Dai is in the 1500 yen range and very cosy👍 When it comes to Niigata, I love Kafuda-shu, it's very similar to the acidity of that Kafuda-shu 😋. I love Niigata, but I can't tell if it's sweet or spicy 😅I found myself drinking 3 gou of it, so it's good 😋. But I think it's the winner 😆. I'd like to try the other ones though👍

I happened to be at a tasting. I was allowed to try it. It was so good that I took it home. It smells like mellow strawberries. When I drank it, I found it to be sweet with a The spiciness lingers in the back of your throat but it doesn't linger forever. but it doesn't last forever and it finishes you off. When you taste it thoroughly, the aroma through the nose There is an indescribable sense of alcohol. If it's a spicy tsumami you can't feel the sweetness of sake. A sweeter snack would be better. We opened a bottle at the office. This is the first time we have had "Shirasagi no Shiro", another name for Himeji Castle. At first I drank it at room temperature, and from the second glass I drank it on the rocks, and I could feel the gentle sweetness of the sake. The taste reminded me of Tengu Mai's Yamahai brewing. The location changed and we went to Hyogo Sake EXPO 2022, a local sake event in Hyogo, at Kobe Hankyu. I tasted a regular product, a draft version. I had tasted the hi-ire version before, so I wondered what the draft version was like. It was easier to drink than the hi-ire version, but not to my taste. I prefer the Shirasagi no Shiro (castle of the egret), which is made with Nojoho.

We received a bottle of "Sato Ubei" from Shinmasa Sake Brewery! Another bottle bought at a supermarket in Kawagoe. I also bought a bottle that was not hiyaoroshi. After storing it in the fridge, I took a sip. The aroma is mild. I stopped by the brewery for the first time in a while. I used to have a special fire-brewed junmai and a sake called "Mariko no shu" which is named after the female toji (master brewer?). Both were quite dry, classical sake. Both were quite dry classical sake, and I had the impression, for better or worse, that this is what local sake is supposed to be like. This was probably my first nigori sake, but it looked delicious, so I bought some! I wondered if the beautiful woman at the sales counter was Mariko herself? It has a classical aroma with a banana feel. It is more of a hint than a standing aroma. It has a classical taste and is dry, but you can drink it by itself if you want! It is very easy to drink because it has a lot of turbidity, which gives it a strong umami flavor and makes it easy to taste the sweetness. I drank it with kimchi nabe (kimchi stew), and I think it goes well with strong flavors and nabe dishes! It also seems to go well with meat, and I am sure it would go well with ginger-grilled pork or chicken steak. I imagine it is like Kikuhime nigori or Tamagawa nigori! To be honest, I think it's one of the best in the Koshu Plum Grove, so I'd be happy to buy a bottle and drink it slowly. It can probably be stored at room temperature until early spring.

Tonight, I'm back at work after GW, but naturally I'm not very excited 🥴. This one is brewed with Dewa Sanzu and Kyokai No. 6 yeast. The aroma is mild without being showy. It is a versatile sake with a soft sweetness and acidity of cucumber and herbs and a clean aftertaste that is also very sake-like 😊. It is as delicious as the rumors say 😋😋😋😋😋.

Tonight, here is a very popular project sake from Yamagata 💁. La Jomon Shoumon Koji Triple Masamune Nama Sake 2023BY✨. I think it is safe to say that this is the second most popular sake after Jyushidai. I think it is. Well, it's hard to buy and sells out quickly 😫 Now, this is the first Koji Sanbai Masozo-shu Nama-shu in my house. As you know, the specs are as perverted as you can imagine 🤣 it is made with Dewanosato x 66% koji ratio x 66% milled rice ratio x Kyokai No.6 yeast 🤣. The taste is very pleasant with the strong acidity of triple the koji, and it is easy to drink. It is not white koji, but it reminds me of a certain cat sake 😺.

Tonight, I opened a bottle of this one to accompany my dinner of kochi and kampachi sashimi and squid cod roe 💁. La Jomon Six Nama Sake 2023BY✨ We happened to have a lot of Six Nama Sake on hand, so we'll have a quick bottle. When I poured a glass of chilled sake, it had the usual mild uri aroma, a beautiful acidity, a little sweetness and citrusy flavor like Pocari, and the second half was a mix of astringent, bitter, and spicy flavors. This is KIYOMIZU from the same hanpukai. The difference is that Maikaze from Gunma Prefecture is used instead of Gohyakumangoku. The aroma is the same as SAKAEMASU, but milder. The taste is surprisingly less cloying than SAKAEMASU. There are not many rice varieties that have a cleaner sake quality than Gohyakumangoku. The sweetness is also relatively strong and full-bodied.
